The rice was also the best rice I've ever eaten (spice room is my favorite restaurant, and this beat them). Jibaritos is a new term for me, but I've had this type of dish before called tostones or as my Colombian friend calls them, patacones. They are all basically the same thing and that it is green plantains, smash down, and fried to make a round shape. Then, usually pulled chicken, tomato are served as the filling, and usually I've had them open-faced, but Mama's Empanadas is serving them as a little sandwiches that they call sliders. Let me tell you, tostones are much better than a basic bread bun! The sauce served in Puerto Rican food is a mix of mayo and ketchup, they have different names for this sauce, but it's something that is standard for this type of food. And it's really good, too! I already love each condiment alone, so mixing mayonnaise & ketchup together works for me and is really a nice condiment sauce for sandwiches.
