The server recommended me the AKA Tonkotsu since I requested something spicy. She also recommended the lemonade which was pretty refreshing. The pork rinds on ramen was a first for me and was a unique combination. The pork chashu was decent as well as the broth. The fried chili pepper was very good and I enjoyed it the most. The actual noodles were a little chewy but not bad The ramen came with a whole egg cut in half. One of the half's was a bit cold but the other one warmed up with the broth overtime When I asked for the check the server informed me that they give a post card with the order which is a very nice touch. The staff let me know my order would be ready in about 20 minutes, and it was ready on time. I ordered the California roll, Golden California roll (comes with spicy mayo and eel sauce), vegetable tempura (comes with a good amount of tempura sauce), and seafood udon. The order came with chopsticks, a spoon, a fork, three low sodium soy sauce packets, two ginger packets, and two wasabi packets, which was enough for the amount of food I ordered. Everything tasted good overall, but nothing really stood out or felt memorable. The seafood udon, in particular, was lacking flavor, which was disappointing considering it's about $18 on DoorDash. Despite changing to new management, the service is still exceptional. I wasn't a fan of the Spider roll since roe was not listed as one of the ingredients, but the menu also requests "no substitutions" so be aware. I really enjoyed the super hot and fresh takoyaki; that was the first time I tried it! TheTheir matcha is alright, but it may taste even better as an oat milk latter rather than iced with honey. A deep-fried roll relies entirely on the crunch of the batter, but this version missed the mark. It tasted undercooked, resulting in a "doughy" texture that felt heavy on the palate rather than light and crisp. ​This issue of undercooking plagued the Ramen as well. While the broth itself had good depth and flavor, the noodles mimicked the failure of the Golden California roll. They arrived with a texture that went beyond "al dente" to simply unfinished, tasting raw and floury in the center. ​The Verdict ​The flavors are there, particularly in the appetizers and raw dishes, but the kitchen needs to tighten its timing on the cooked elements. The rolls was mid but the spicy salmon crispy rice was really good I enjoyed that. I did like the mackerel on top of the roll I ordered but other then that even the drinks did not taste fresh or good the coffee one was very watery. I had to order a can soda. I ordered a traditional Spider Roll and explained that I was looking for crispy soft shell crab with a California roll base, topped with orange ikura (salmon roe) on the outside. I also requested ginger and wasabi. The gentleman mentioned they had three spider roll options, and I again clarified that I wanted the traditional version. When I arrived home and opened the box, I was honestly disheartened. Instead of what I had described, the roll was filled mostly with lettuce and contained a small, limp piece from the body of the soft shell crab. It was not the spider roll I ordered or anticipated, and it did not reflect the quality I expected based on the restaurant's atmosphere and presentation. I was also disappointed to find packaged ginger and wasabi with preservatives rather than fresh accompaniments. The wasabi in particular did not resemble traditional wasabi, and the overall presentation of these sides felt inconsistent with the upscale impression EDO presents. Because EDO gives the appearance and menu of a four- or five-star establishment, I had high hopes. Unfortunately, based on this experience with the Spider Roll, I left feeling let down.
