The havarti cheese was melted throughout & it was seasoned perfectly. The fruit was fresh, and the gluten free toast with whipped butter was excellent. And their decor was on point. I had Shakshuka for the first time ever - and, not only was it delicious - I learned that it is a breakfast found in Israel and other parts of the Middle East and North Africa. So cool!! Let's start with the service! The best service I've had at a restaurant I think ever! The owner goes around checking to make sure everyone's OK and the hostess had a smile on her face the entire time I was there. I can understand why the wait is so long. We came in from Indianapolis for a wedding and found this restaurant and I would drive the 2 and ahalf hours again just to go back. Not only was our waiter Amazing but all the other waiters and food runners came around to make sure our drinks were full and we enjoyed our food. As for the food lets start with the chicken fried bacon!!! The only way I want my bacon from now on. It was so crispy and good and the gravy put it over the top! 10 out of 10 highly recommend! The waffles and pancakes were also fluffy and delicious. The mimosas are also must have ! I got the pineapple, strawberry and cotton candy. Cotton candy was absolutely my favorite. We had no wait.it was super chill and a robot delivered are food.and this guy sprayed edible bubbles in are mouth. The French toast was amazing.it had an edible flower on top. And it was super good. With so much stuff on it, it was like a super French toast. And the hot cocoa was super fancy with amazing toppings. Best hot cocoa I ever had. I went to Egg Republic for a late breakfast today. Ordered eggs over medium, bacon fried crisp, and a half a waffle. The egg came out extremely runny and the bacon was floppy, not at all crispy and there was no butter or syrup for the waffle. I flagged down the waiter and asked him if the egg and bacon could be cooked more and if I could get butter and syrup. He argued with me that the egg was over medium, but it wasn't even close. Anyway, he took the plate with the eggs and bacon away and left me with the waffles. I asked again if I could have syrup. He finally brought some. I cut into the waffle only to find the middle was full of raw batter. I didn't have the heart to say anything about that since I'd already asked to have the eggs and bacon redone. If a breakfast place can't make decent eggs, bacon, or waffles that is not a good sign. And their food isn't cheap either. read more

Don't get ice tea, unless you want to spend $4. If you want something fancy and different, then this is the place. For regular breakfast item while not paying a lot, other places in town are better in my opinion. Even fast food breakfast, would be better. The look of the place is better, but extremely loud. I always look for a unique place to eat when I visit a town. This restaurant didn't disappoint. I sat at the counter as I was alone. The bartender provided a menu and silverware right away. How good is Egg Republic? Let's put it this way, we sat next to a couple that enjoys this restaurant so much that they have been systematically going through the menu 3 dishes and drinks at a time for months. On a busy parents' weekend, my party of 4 was looking for brunch around noon on Sunday. Egg Republic doesn't take reservations, but the line moved quickly. We sped it up by eating at the bar. Very attentive and friendly wait staff. After ordering a flight of mimosas and an apple cider mimosa, we ordered our food. The menu is expansive, with lots of great breakfast and brunch items. Which is where my conversation with the couple next to me came in. I ordered the shakshuka, and the adventurous gentleman next to me confirmed I made a good choice. The rest of my party ordered the chilaquiles, classic French toast with berries and pumpkin pancakes with sausage and eggs. We ate well. The food was great, and only one of us had leftovers to take home. We left fat and happy. We are not from the area, so this can't be our new breakfast place, but it would be if we lived closer. I don't believe in perfection, but 4 stars is not enough. Egg Republoc is a fantastic dining location. Great people, great food, and a great atmosphere. All that, and awesome house made hot sauce. However, its overpriced for very average food. My husband and I were underwhelmed. We walked out paying $50 for 2 meals and 2 cups of coffee. The chicken and waffles were both delicious. The waffles were fluffy and moist, and the chicken was nice and crispy. I loved the stuffed avocado because it was so creamy and fresh. The southern country skillet was delicious from beginning to end. A beautiful setting, excellent customer service, and wonderful ambiance made us feel welcome. Came here for breakfast a few weeks after the grand opening. The inside is really nicely decorated and bright. The food was very gourmet tasting and came out quickly. The service was also friendly, though more than once the servers forgot to bring requested side items out and therefore we had to ask several times for the same things.
