    One of the best taco trucks in Santa Ana. Their tacos are amazing! The tacos are a good size and the meat is very flavorful. They also have the best horchata here. I feel like it's hard to find horchata that's not too sweet but also not too watered-down and this horchata has the perfect balance. The salsas they have are also really good. The one con is that there is usually a long wait.

    We stopped by for a quick bite after a long day of unpacking and this food truck really gave us a taste of Cali Mexican food. We ordered 2 Al pastor tacos, 2 asada tacos, and 2 carnitas tacos. We also packed up some of the pickled onions, radish, and the red and green salsa to dress our tacos. This is a gem of a spot. Everything was so flavorful and well cooked. The tortillas were soft and did not fall apart while we were eating them. My favorite sauce was the red salsa and it is definitely on the spicy side. We will definitely be back!

    I was hesitant about trying this taco truck but my coworkers convinced me and I'm glad they did. First time I came here, I had their Birria taco and al pastor taco. Both were good. Lots of flavors. I liked the Birria taco better. Doesn't come with consume. Today, I decided to try the Suadero taco. So good. 5/5 in my books. Tastes like pork and I thought it was pork but my coworker said it's a special cut of beef. Packed with flavors, the edges of the diced beef had a good crust from the flat grill, the center was tender and juicy. 2 options for tortillas. Store bought or hand made. Hand made tortillas all the way! Salsa roja has a kick of flavor and spice. Make sure to get all their sides. Slice radishes, lemons and jalapeños mixed with slice yellow onions. Sandwich bags are provided next to their sides. Self serve. Amazing tacos. $2.75 each Cheap and delicious!!! 5/5

    Whether 1:30 am or 8:30 pm - this is the place to be. As a vegetarian, these vegetarian tacos (beans, rice, onions, cilantro) are absolutely delicious & the salsas are probably some of the best I've ever had. Found in a little parking lot, it's definitely a community favorite that needs more hype and love. Two thumbs up to this place!!

The modest facade completely hides the gem buried within; the moment you step through the doors, you are transported into a beautiful, vibrant atmosphere. Despite arriving just before 7:00 PM on a busy Saturday night, we were seated incredibly fast. We had the absolute pleasure of being served by Karla (with a 'K'). Her enthusiasm, attentiveness, and deep knowledge of the menu were top-notch--truly a model for how the entire service industry should operate. As for the food? Out of this world. From the presentation to the flavor, the attention to detail is flawless. It is completely clear that Rosa Madera was created by someone with immense vision and heart, and they've managed to find a staff that shares that exact same passion.
