This visit, we were seated in the back at a regular table, and I really enjoyed the extra space and more relaxed atmosphere. The ramen was excellent; rich, flavorful, and exactly what I was craving. Everything came out fresh and beautifully presented. Our waiter, Kenny, was attentive, friendly, and checked in on us throughout the meal without being overbearing. One thing you absolutely have to order is the kimchi mushrooms. They were so good that I'm still thinking about them the next day. Seriously, if Tonchin sold jars of them, I'd keep one stocked in my fridge at all times. Great food, great service, and a beautiful space. I highly recommend checking it out if you're a ramen lover.

That usually also makes it less tender as the middle is still a little coagulated from being chilled prior. I would also assume that chicken broth is less calorie dense than pork so I also felt less guilty drinking it all.
