We spent six nights in PVR and ended up at Republic every night. The staff are very friendly and accommodating, and the margarita selection is lengthy and will not disappoint. I kept ordering the spicy jalapeño margaritas and Cadillac margaritas in the connoisseur Bucket size. For food...We loved the tropical ceviche. Very fresh with large chunks of shrimp. Paired well with the guacamole appetizer. Also, the birria tacos were delicious and overflowing with shredded beef. The queso fundido was just a big platter of melted cheese with tortillas so skip that one. But definitely try one of the fajita entrees. The best was probably the steak nachos. Nice bite sized steak with cheese placed individually on chips served with sour cream, guacamole and salsa. Ask for the spicy salsa! Portions are big enough to share and so tasty! read more

The street tables are perfect for people watching in the Romantic zone. It was busy on a Tuesday night 9pm; we had to wait 10 mins for a party of 3 and saw other parties waiting as well. Free chips and salsa. The salsa was watery and could use some flavor. Free cucumber and jicama with tajin were refreshing. We ordered the secretary steak fajitas, supposedly marinated in secret sauce. My iron chef wife immediately figured out the secret sauce after the first bite. (Confirmed by server) the steak was juicy and in opinion delicious but wifey thought the secret sauce was bit heavy and overpowering. The chicken taco salad was huge. Taco was deep fried. Chicken was marinated well but not that juicy or tender. If you want to order guacamole, re-consider if you plan to order fajitas or the chicken taco salad. It came with both our meals and we now have tons of guac leftover. The guac itself wasn't also that great. It wasn't salty enough. I got the Palomaa margarita which the palomaa taste was too settle. My son got a strawberry lemonade and it was too sweet but appreciated the fact that it came in the same glass as my margarita. It's always nice when kids feel inclusive. Between the 3 of us, we didn't even finish our meal. Despite the check taking forever, our server was great, friendly and spoke very well English. 3.5 stars. read more

We had high hopes for the restaurant that many friends told us we should visit. But....the service was rushed. They kept pushing us to finish. I had to ask the server three times to give us time to decide what we want. The enchiladas that they claim are the best dish was bland. I would not suggest the enchiladas. Really friendly staff that are really helpful and honest about food selections. Husband wasn't a fan of the fajitas but we returned another night and he really enjoyed the cooked to order burger and raved about it for days. I had the birria tacos both nights... accompanied by some of the best consume I have had. It was perfectly balanced. Fajita Republic was one of our favorite restaurants in PV! We had to return for another fix before we left town. The food was delicious and reasonably priced. The drinks were good with special happy hour prices. The large staff were all very friendly and attentive, I don't know how they did it. The ambience was also great with different options of seating areas from the active attractive bar area, to the brightly lit and noisy inside dining area to the street cafe which was charming. After a lazy day of laying by the pool eating, drinking, and playing pool volleyball, we ventured out to the Romantic Zone for dinner and fun times. There were 7 of us in the group, so we found a place that all would like...Fajita Republic. It's a fun, energetic place with a groovy vibe and bears that end up in "interesting" positions. As for the good, many things to choose from and able to please many pallets. Shelly and I decided to split the Chicken Fajita entrée with flour tortillas. The whole experience was so pushy. From the moment the head server corralled us in to telling us what we should order. The moment they got us in the restaurant and took our orders, they were done with providing us good service. Only reason that we went is because it looked nice from the outside. As for the food, I had mediocre vegetarian enchiladas with a very tart verde sauce. The complimentary salsa was one of the worst I have tasted to date. It was crushed raw tomatoes with a sprinkling of other ingredients. There are def other better options around in Zona Romantica. But my traveling companion was into it and you know what... the drinks were quite good. The food, if not quite as grittily authentic as some places, was tasty. Service couldn't have been any better. Easy to find and spot while walking around in downtown, great steak fajitas (why go with anything else?), big portions and nice margaritas to sip on! Nice customer service, no issues. Discovered this awesome place by accident and so glad I did. I was walking by and Carlos gave me a fist bump which made me stop and review the menu. I asked if they had anything breakfasty(it was well past 1p) and he recommended the quesa Birria which he said most Mexicans have for breakfast. Santiago, the amazing bartender, made me a delicious carajillo(if you don't know then stop reading this immediately and go get one). We were staying at an All Inclusive north of the Romantic Zone and it was great to venture out to the Romantic Zone and dine at Republic (formerly Fajita Republic). The restaurant has a great modern vibe with many seats by the street to people watch. We ordered the 3 protein variety fajita which included shrimp, chicken, and beef. We also ordered the Birria. The food came out timely and the the food was on a tray 6 feet away as the staff lit the fajita proteins with tequila and danced. The food was delicious and served hot. The Birria was moist and flavourful. Jorge was our main server. He has been with Republic for 18 years. This is high praise for Fernando and Patty in an industry were staff can come and go like a revolving door. Their care for their staff definitely shows through to the customer. This is not your authentic Mexican food restaurant HOWEVER, the flavor is good. Service was a bit slow IMO and I say this because there were maybe 5 tables with guest. We had a party of 6 and because we wanted to get the special they had ( buy one plate get one half off) we couldn't do separate checks. We had to do one check then THEY decided what plates were the ones that would get the special. Instead of saying from each couple, the least expensive plate that would be the half off. Fajita Republic is a really trendy and lively place with good music and ambiance. They have indoor and outdoor seating, plus some tables with open walls, facing the outdoor seating with a sidewalk in between. It's festive and fun and I liked the decorations they have. We were seated right away and got some drinks rolling in, they said they had the best margaritas in town but I didn't really think mine had a lot of flavor. It was huge though. The waiter came by and took our orders and we didn't really see anyone for 25-30 minutes more. I think they were short staffed and the kitchen wasn't cranking things out , kind of a bummer for 8pm on a Saturday but we had those massive drinks. The waiter was very nice but kind of short, I asked which dish between two and he said Chimichanga before I could say the other item (maybe he was repeat what he thought I had asked for?) we also asked for hot salsa and it took two more alas to get some to our table. The house salsa is really watery and didn't have a lot of flavor. When we got our food it was dropped off with no flair. That's fine, but ten minutes later when the waiter checked on us he said I should put a certain sauce on my chimichanga and it "wasn't any good without it" which would have been nice at the start, the sauce was delicious. It came with the fajita sauce tray. The steak my companion ordered was pretty raw, he ordered it medium rare. The seafood fajitas were good but the chorizo was too salty. Overall it wasn't a good experience, but the people were nice and the flavorless drinks are huge. read more

Not good and don't recommend. Came for dinner. It's a big restaurant, but they were insistent on sitting everyone outside or in the front part of the restaurant. The menu I received was old and dirty (see photos). I tried the Cesar salad and their famous ribs which are advertised all over the restaurant. The ribs were supposed to be baby back ribs. But they were the farthest from baby back I've ever seen. They were dry, chewy, and had no flavor. Their "famous" bbq sauce was tart. I opted for the twice baked potato. The potato was extremely dry and flavorless. I walked by daily on the way to the beach to see others eating the same ribs and their body language said it all (painful, agony, and guilt for ordering). The service was lacking and I had to ask for everything. My food took forever to come out only to find out the server forgot my order. If you want bbq check out El Rio BBQ. If you want fajitas go to Margarita Grill. Point is, there shouldn't be any reason to endure Fajita Republic. read more

Tonight we stopped in for ice cream after dinner. We had just eaten dinner here two nights ago. They brought the typical complimentary appetizers to the table and when they realized we were only having ice cream, they came and literally took the appetizers out of our mouths and said they were only for those having dinner. I hope they didn't re-serve them since the jicama was half eaten and the tortilla chips had bites out of them. Side note. We didn't ASK for the appetizers. They brought them as a courtesy. This was one of my least favorite meals in Puerto Vallarta. We got the garlic shrimp and the appetizer with a bunch of different things on one plate (sorry I forgot the name). The garlic shrimp was pretty good! It had a lot of butter and who doesn't like butter? I was gobbling it down because butter makes everything, especially shrimp, taste good. I wish the shrimp had more flavor to it though. More garlic, a tad more salt, and maybe some red pepper would really enhance the seasoning! Also, the free salsa that they brought out tasted so gringo, I thought I was in America. It tasted like straight up tomatoes and there was no seasoning to it at all. I know they cater to american tourists, but DIOS MÍOS! Please make better salsa! (I was in Mexico City before this, so I was eating some amazing salsa up there). The chips were very well fried though! Perfect! Finally, the appetizer plate was bad! Ribs were not well marinaded. The quesadilla was SO pathetic. It was only cheese. Also it was soggy which made me think they microwaved cheese in tortillas and then served it to us. And the things covered in cheese were okay. But I would never recommend them to anyone in Mexico for a limited amount of time. There's so much better food to try! Overall, the best thing about this place is that they take credit card! OUTSTANDING! I had a pork shank on Thursday Night. It was delicious. I have dined there a couple other times and everything is excellent. The wait staff is friendly, but delightfully quirky.
