Hominy, hush puppies, cornbread, grits, Alabama white sauce on any meat, especially smoked chicken, are all popular in Alabama. BBQ is practically a religion in the South! As former certified Kansas City Barbeque Society (KCBS) certified judges, my husband and I completed the training and paid the fees to be certified. The "KCBS way" is different from a lot of people's preferences in that, for example, a BBQ rib should actually have some "pull" to it, meaning, when you bite into it, your mouth should leave a mark in the rib. This means "fall off the bones" ribs are not KDBS quality, despite how many love that rib consistency. The KCBS judges slots fill up so quickly and required us to travel at our own cost and we did not judge any KCBS events. Back to Southern food. Deep fried double Oreos are one of the many fried foods here in Huntsville, and Melt restaurant features them on their menu. Meat-and-Three restaurants feature a meat (usually fried pork chop, meatloaf, BBQ, fried catfish, country fried steak/chicken) and three sides (fried okra, creamed corn, mashed potatoes and gravy, baked potato, potato salad, cole slaw, French fries) and bread options such as cornbread, rolls, hush puppies. While Southern Cooking is absolutely delicious, I have to limit it because lets face it, it is high in calories and cholesterol. When I do indulge, it's shrimp and grits, pimento cheese, fried green tomatoes, and fried whole okra.

We were relocated to a rickety table beside the bathrooms. Once seated for the second time, we waited 10 minutes with no server, no menus, and no silverware. Various employees walked by offering pass-arounds of okra and rolls, but no one seemed responsible for our table. After another 10 minutes, one member of our party finally got up and retrieved menus for us. When our server eventually arrived to take drink orders, we mentioned that we still didn't have silverware. Someone later brought six sets of silverware--for a party of seven. We then waited another 10 minutes. Still no drinks. Still no silverware for the seventh guest. Still no butter, condiments, or anything to accompany the rolls that had been handed out. At that point, after 90 minutes from the time we arrived and without receiving a single drink or placing a food order, we made the decision to leave. I've eaten at plenty of busy restaurants and understand that mistakes happen. What was frustrating was the complete lack of organization, communication, and urgency from start to finish. Being seated at the wrong table was unfortunate. Waiting an hour after being seated without drinks or basic table service was unacceptable. We left hungry, frustrated, and genuinely shocked that a restaurant could be operating this chaotically. It was one of the worst dining experiences our family has ever had.

It was refreshing to see that it wasn't the usual cake like kind, plus not the ultra sweet kind either. More bread like with a hint of sweetness. Delicious. The fish and potatoes had a nice flavor but unfortunately the cold food spoiled the experience. Since I was a guest of my sister I didn't say anything about the cold food. What a disappointment. Maybe when I return things will be better.
