    This is my new favorite Mexican restaurant. I had been searching and searching for over a year since I moved here and never had much luck. This place nails it on all aspects for me. We were immediately greeted and our server was to our table with waters and chips & salsa within 2 minutes of sitting down. He gave us time to look over the menu and checked in with us periodically to see how we were doing. He was very friendly and attentive. The food was delicious. My bf got a friend poblano with shrimp and crab on top- he loved it and would get it next time. I got the quesadilla with shredded chicken. The chips & salsa was good. The vibes were good and we will definitely come back. I would recommend if you're looking for Mexican in the area.

    Certainly doesn't seem like the most authentic Mexican I've had, but definitely and enjoyable place to have some fun burritos and chips and salsa.

    Their tacos always deliver! Queso dip is divine. I drive 20+ minutes out of my way for Fiesta... so good!

    Their hours have changed, they open at noon everyday and close around 9 during weekday and 8 on weekends or something like that

    This was the best Mexican restaurant that I have been to. The flavor just explodes in your mouth!! Everything was very fresh and hot.

On this particular outing, there was a host at the entrance and we had a party of 8. Sometimes there isn't one and it says to seat yourself. I told him we had 5 adults and 3 kiddos. When he sat us he only gave us the regular menus - so I had to grab my own kid menus myself at the host stand. Then he also said - you'll have to ask another table to borrow a chair - this combined table only has 7 chairs. I politely asked him if he would ask the other table as a courtesy which he did. I am gfree and they have a lot of options with a gluten free bun you can do. I usually order the BLT burger or Cali Burger. Sometimes with the gfree bun sometimes not. I always upgrade to the side salad as my side which is delish with French dressing (no croutons). The quality of the food is really really good. One of my fav burger places in the twin cities. Another cool thing about the Muddy Cow - 2 for 1 drinks so on this particular visit I ordered a Suncruiser (pink lemonade) and totally forgot I would get 2. Beef short rib was the highlight of the meal for me, melt-in-your-mouth tender and served with a super tasty sauce and some greens to lighten the dish. Puerto adobado was an enormous pork shank served with rice, beans, and pickled vegetables, also very tasty. Portions were generous. My friend and I both had to get to-go boxes for our leftovers. We tried the two desserts offered: churros and a cheesecake with berry sauce. I'm generally not a cheesecake fan, but warmed up to this one because of its light texture, almost soufflé-like, and the super-flavorful berry sauce. Churros were hot and crispy, accompanied by hot drinking chocolate for dipping, and more thick, creamy dulce leche than we could possibly eat. Besides the delicious food--at reasonable prices, especially considering the size of the portions, we were impressed by the friendly, helpful staff. He gave us the rundown on the food and drinks and made several recommendations. We started off the evening with the Don Corlone. It was very tasty and also an Andorran Martini. Both drinks were delightful and were semi-sweet but not too sweet. The mixture of the Don Corlione had a perfect blend of citrus and sweetness. We then ordered the pastry puff poppers and they were amazing. The sauce complemented the pastry puffs and the filling left you wanting more.
