Undercooked burgers are really tough on my digestion, but I don't like the flavor of well-done. My burger was very undercooked from what I expected and the staff was very understanding about taking it back to the kitchen. Then I heard profane yelling from the kitchen area. The person next to me at the bar is apparently a regular and said, "Don't worry, they will cook you a new burger. That's just the kitchen manager having a bad day". I quietly ate my new burger that was cooked to a much better color, but it was difficult to actually enjoy it. I do not feel welcome at this establishment and will not be returning.

The dining in experience was a Monday lunch and very quiet while the takeout was a Sunday evening and much busier. Despite the takeout situation, I opted for southern fried chicken most recently and was really delighted with the meal. The collards were well seasoned, the cornbread was huge, the slaw was slaw (though nothing to write home about, it's hard to make slaw that's worth writing about), and the chicken was well breaded, not overcooked, and still kinda crunchy despite its steam bath. I might have had the southern fried chicken plate the first time too, come to think of it... it's just impossible to find well done Southern food in the west, so I can't pass it up! The patio has nice seating options including a couple coveted tables in the shade. They are all pretty huge picnic tables so you may end up sharing if it's busy, but that's kinda the vibe here. There are dog water bowls and ice water for the pups in the summertime. Regarding vibes, it's right up my alley with servers rocking hairy armpits and tattoos all over the place. If you're a little more physically conservative you may be a bit put off, but I'd encourage you to try it out anyway.

Okay, so, this is not a knock or me saying the food wasn't good. It was average. To me, everything was pretty bland. First bite of hash browns I took, I tasted butter but by the end, just greasy. Again, that isn't a knock. I love breakfast diners like this for that reason. But, there really was very little flavor in any of my food. Pancakes were fluffy but nothing outstanding. Biscuit was good but again, nothing special. Sausage had the most flavor of anything I ate. My wife loved her omelette and commented on how packed it was with the ingredients. The service was very good and overall I enjoyed the food. Would I go back if I was going through Asheville again? Probably not. It was fine but nothing more than that.

The waiter brough us menus, which were about half the size of what we saw online, and when asked he said they were "revamping" their menu, so this is all they could offer now... I ended up ordering the "southern hospitality" breakfast biscuit with a side of home fries. After placing our orders the waiter left without saying anything, and we never saw him again (???). Eventually, after a bit of a wait, someone else came out from the kitchen with our food, but he wasn't sure who had what. I will say the southern hospitality was piled high and a very large for the price, but it was a bit too large and messy with the pimento cheese to try and eat with my hands, unfortunately it's served in a piece of wax paper in plastic basket...trying to cut your food in basket full of holes, just means the wax paper tears. In the end it was good, a great price, but a much bigger mess than it needed to be. They staff needs to work on communication/people skills, and serve the food on a plates.....baskets are fine for finger foods, like fries, but not in a nicer place where you may need to use utensils.

I absolutely love when the team can advise on the menu or items to try which this barkeep did in spades. They had an anejo on the menu that I had never heard of. He brought it out during the meal as a quick search the maker said it should be able to breathe and swirl and left out for a bit to truly enjoy it. I was able to do so and had a wonderful transition of notes the longer it sat out and I sipped on it. Enjoyed watching how the whole team at the restaurant worked. You could really see the care and effort the team put into the restaurant. Spouse enjoyed their enchiladas. Potato side was alright. Spouse ordered, I'm a little neutral to it because of the peppers (bell not spicy). The frijoles refritos are not to be missed. Lovely flavor and was a great palate cleanser for me whilst drinking the anejo. Guacamole is stellar as to be expected in a place like this. Perfect balance of chunky piece of avocado, onion and tomato in it. Spouse is not a fan of plantains so sadly I could not get him to try the platanos maduros. I asked if they were made in house, and was told yes. But it's a little hard to believe. They tasted like out of the bag options, or a slight step above. Tuna tostada was up next, and I was very disappointed. Given the upscale nature and pricing of the restaurant I was expecting deliciousness. What I received was quite stringy tuna, not very tasty and hard to eat. Again, the chip (tostada in this case), almost tasted stale. I would not recommend this dish. Maybe I've been spoiled by Contramar in CDMX, Oxomoco in Brooklyn and Ensenada in Miami / Brooklyn ... but really it was just disappointing. The spicy marg was tasty, and service was "fine." But given I was maybe one of 20 diners in the restaurant in total, I just would have expected more.
