No idea if they changed owners or who does the smoking? Burnt ends bbq sauce was full of mustard and horseradish- not everyone likes that combo. Brisket was way overdone they did replace it on a positive note with brisket less cooked. Honestly this isn't the old version of this place just not working for me. Bacon was just smoked not candied so pretty much a fail. Hope others like their approach just not for me. They should describe their sauce before they slather it on burnt ends and no one cooks brisket like a well done pot roast... packed it up and pitched it. My boyfriend and I had a taste for bbq and decided to try somewhere new. I suggested this place because of the ratings, however the ratings were very misleading. I'm not sure if it's because we were coming in the last hour and a half before they were scheduled to close or what, but all of our food was very dry, like it had been sitting there all day. The flavor was not there. The customer service was very dry. However, we should have known not to go through with our order after the dry customer service and being the only two people in the whole restaurant on a Saturday night. I ordered the rib tips and the pulled pork, BOTH were extremely dry. The tips almost had the texture of jerky. My boyfriend ordered brisket and grilled chicken, BOTH were VERY dry as well. The only good thing that came from that meal was the beans. We were very disappointed and upset because the food is not cheap (we never mind paying for a GOOD meal), however, this was not one of them. Paid over $60 for dried out food. If they knew the food was not at a good quality to be served at the time, they should have just told us they were about to close or let us know they were out of food for the day. Another thing we found suspicious was that as soon as we grabbed out to go order, they shut off all of the lights in the restaurant and locked the door. As if they knew we'd have something to say about how dry the food was, because we wanted our money back. Very disappointed in this place. Very frustrating to see how the quality has changed. This place used to be top 3 in the area for me. Ribs have become small and not-meaty at all. Onion rings had barely any rings. Ribs were so tough I couldn't even cut them with the plastic knife or pull them apart. Ribs should be zero stars, we threw them away. Brisket was good and pulled pork but not much flavor as served so make sure to dip in bbq sauce. Mac and cheese tasted like a fake watery cheese sauce sprinkled with real melted cheese on top to give the illusion of cheese, and potato salad was edible but again not great but not bad. Corn bread was delicious. Overall, I wouldn't go back. Burning anything like ribs should not be served ever. Firewater has very solid bbq. Things I like here are the brisket and burnt ends. Nice bark on them. The smoked thick cut bacon has great seasonings and is really tasty. The brisket in the bbq baked beans is a nice touch. Good variety of sauces to choose from too. read more

So there I was, bbq sauce on my... well you know the rest. I've been to this location plenty of times, I'm surprised I haven't reviewed it. To be real, the only thing I ever had was the pulled pork fries. I tried them once and it was a hit! I usually pour an ungodly amount of spicy bbq all over them for an extra kick. I need to be sniffling. The portion is huge (to me) and usually end up with lunch for the following day, and they taste just as good reheated!! Everyone has always been very kind to my family, and you're able to see them prep the food. The vibes are very rustic, southern in the Midwest type of feel. been going here for always buying the same pork cheese fries always asking for no ranch however, this time I box for no sour cream. It came with sour cream. Hardly any barbecue came on the top and the pieces of so-called pulled pork or nothing more than a smoked ham cut in chunks. To be honest, we came to Firewater because our other usual bbq place is closed Mondays. We were extremely impressed from start to finish. The service was amazing, she even gave us one of each sauce to try because we told her this was our first visit. Every single sauce was SO good! I got the 2 meat combo with beef brisket, smoked wings, and onion rings. Hubby got the brisket lunch special with hand cut fries. The portions are very generous and well worth the money. Technically you don't need the sauce because the flavors are amazing on their own. They offer 3 flavors of fries. And, the smell inside immediately brings memories of Nashville. Although I was wrong the food was still steaming and delicious when I got home. We came here for a family outing, just me, my grumpy mom, and my grandma, trying to grab some good food. We've been here a couple times in the past and had generally positive, if unremarkable experiences. So how did this visit stack up? It happens to be winter when I was typing this and there has been persistent snow storms, so the outside was actually pretty icy. My mom slipped and nearly fell when she was stepping on the sidewalk from the parking lot. I would understand if it was the parking lot pavement itself, but this was the sidewalk. That's a potential safety hazard that I feel like they should be taking care of. It's a slip and slide out there. They make the food to order so you kind of sit at your table and get yourself immersed in the experience before you're called up to get your food. The food, overall, is really good, lots of flavor and good seasoning. The prices are a little high though. Some, like my mom, would even exclaim "These prices are unethical!" It's on the higher side of eateries in the area. So just keep that in mind. When the food was finally ready, I was called up to the counter to get it. While my grandma was saying she needed to use the bathroom, that talk quickly ceased when the food arrived. When I asked her "Hey, didn't you need to use the bathroom a minute ago?", in response, SHE said that the food was more important. So I guess you could say it's piss your pants good. Though don't get any misconceptions. There wasn't an accident. On the subject of the bathroom, the handle for the women's restroom from the outside is non-functional, so you can't actually lock yourself in for safety. That's a serious and egregious safety hazard. How are women supposed to feel safe? Anyone at any time could walk in on them. I was severely concerned for both my mother and my grandma. And this has been a problem across repeat visits. They NEED to FIX the women's restroom door handle. Though at least there was a paper on the door explaining the predicament. That's not going to keep anyone in the bathroom safe, but at least people are aware. And from what I could tell, most of the workers are young high school and college aged women. Probably on seasonal employment while they also go to school. So I'm especially worried for them. Do they feel like they can't voice their concerns about the restroom problem? So back on topic with the food that we got. I got their cheeseburger with some standard fries. My mom and my grandma both got pulled pork, which is what the place is known for. Personally, I have an aversion to eating pig, so I got the burger instead. My mother got standard potato fries as well, but my grandma got sweet potato fries. And she said they're "pretty darn good." Personally, I also like the fries. They're very good, especially when hot and fresh. The burger, however, was very bland, which was a shocking surprise given how flavorful the rest of their food is. There just wasn't a lot of flavor at all. I have to say I felt pretty let down. When my mom got her pulled pork, she complained that it was a lot more fatty than usual. She said usually they do a better job than that. So I think we were just here on a bad day. You definitely don't want to come on a Monday. The workers talk really loud from the kitchen and you can even hear them at your table. There's clearly a good sense of work and team camaraderie. I wish they'd put some of that energy towards the food. The music is also really loud, as you'd expect from a place that serves the flavors, traditions, and hospitality of a BBQ joint, they play almost exclusively country music. But it's very loud and kind of pounds and reverberates in your skull, so you can hardly hear yourself think. It's even worse in the women's restroom, from what I heard. A lot of these places will have a speaker embedded in the ceiling in the bathrooms too. You don't want to miss out on the beats. When I went to the men's restroom, there were concerning markings on the toilet. It must have been parts where the coating when it was painted white had rubbed off. I wasn't sure if they were left behind by a previous visitor and so I was concerned, but I had already committed to using the pot so I had to just hope for the best. What all of this makes me think is that this establishment isn't very concerned about their customers or their safety. We've cited multiple things now (the handle for the women's restroom, the toilet seat in the men's room) that have been in complete and total disrepair. When they have wet floor signs out, they're tucked kind of out of the way. So I'm just really worried about this place going out of business for safety hazards. They're really opening themselves up to lawsuits from several angles if something were to happen. I'm just trying to think about the customer. read more

This place just continues to go down hill. Went there yesterday for the limited time Pastrami and it was dry. So so dry. It tasted like from the day before. Not just that. I ordered burnt ends and smoked wings. The burnt ends were chunks of pot roast with sauce. No chat or burnt part anywhere. Wings were soggy and rubbery. Everything was just gross. Threw away the wings cuz I didn't wanna get sick. And on top of it they forgot the beans and mild bbq sauce. All this for $55. Way too expensive for trash. Avoid this place at all costs. read more

Maybe it's because I'm usually ordering these ribs when I'm hungover - they say to eat greasy foods when you've drunk too many drinks- but, oh golly, does this stuff make heaven on earth. I really wanted to like this place, but left disappointed after our visit. We had the pulled pork, brisket and burnt ends. All 3 were quite dry and needed a good dose of sauce to moisten up the meat...which I'd prefer not to do. Although,.the sauces were good. Fries were also very good.
