50 minutes to get our order from the counter. Totally unacceptable. We were only the second couple in line and seats were still wide open when we arrived. We ordered for two, and proceeded to wait with the approximately five other couples. There was plenty of staff behind the counter and I'm not sure what the holdup was for all of us. The average wait for all of the dine in couples once your order was placed is 55 minutes. When our orders finally came, the pulled pork and brisket was cold. Cute place with a great atmosphere. Big menu. Feels like there's a lot going on, the music was a bit loud for my taste and we were the only ones there. It was a thursday afternoon. Went with my typical 3 meat combo. I was kinda confused that the 3 meat combo only included 1 side instead of the 2 sides I see everywhere else doing. But whatever, I grabbed a few other sides separately just to try. On with the meats. Brisket came out cold but it didn't mess with the flavor too much, I'm sure it would be better warm but there was a good amount of flavor in it. Thin sliced though. Very typical taste of brisket, not much to say about it. Bisket wasn't slathered in sauce but the ribs hovered over it and it was dosed in their signature sweet chicago sauce. I don't like it when places put the sauce all over my meats, I need to experience the art of the smoke process and this sauce just gets in the way. Well the Ribs were very nice, good flavor, and the sauce mixed well. Not a hell of a lot of meat on the bone so the ribs tasted even better. Meat didn't slide off the bone but it peeled off real nice when I took a bite, which is much better in my opinion. Only other thing was that they seemed to cook for a little longer than I would have liked because there was a lot of burnt skin, charred. Didn't ruin the flavor too much though. They had Pulled Chicken when I visited. This was by far the worst part of the meal, and I can say without a doubt it was the worst thing I've ever had from a BBQ joint. It was tough, damn near actual rubber. It was cold. It wasn't even "Pulled" it was sorta chopped up dark meat. The worst part is that the flavor is sorta supposed to be cajun like, but honestly if I were blindfolded I would have thought someone gave me picked crab meat or something. What makes the whole thing even worse is that there really isn't an official standard on what "good" pulled meat is "supposed" to be. So anyone can royally screw it all up and say it's just how they like it. But this was straight up out of Lake Michigan. Ok, onto the sides Mac and Cheese: Regular boiled macaroni with not very flavorful cheese sauce. Brisket Beans: Fruity, almost like apple pie filling with beans. Not what I would call traditional or even following the unspoken rules of what baked beans is supposed to be. Good taste though. Bacon & Chive Potato Salad: Not bad, Lots of Egg, Nothing much to say though. Honey Cornbread: Comes in a little cupcake tin, had actual corn kernels in it (which I love), Couldn't taste anything though, nothing sweet, maybe the flavors of everything else screwed up the tongue. Idk Sauces: All the sauces they offered were in bottles on each table. They had: Sweet Home Chicago Sauce: A little gritty, tiny kick, enjoyable Texas Heat: Same thing but a little more of a kick Carolina Vinegar: More liquidy as it should be, very sweet vinegar though, powerful taste Georgia Mustard: Traditional gold sauce but really orange in color for some reason Alabama White: liquidy just like the vinegar, almost like a milder version of their Carolina vinegar. All around, I would say this place is okay. Didn't look like there was a good selection of BBQ joints in the area so it's good to have at least one local place that does at least somethings right. From an avid BBQ fan's perspective, this place can do a lot better but I'm happy that it is here for the community to enjoy. read more

Ordering was easy there's so much on the menu to pick from. My husband and I split the 3 meat dinner. We had pulled pork which was very good, ribs that were ok. And brisket that was very dry without a ton of bbq sauce. The fries and onion rings weren't anything to rave about either. So here I am with my absolute favorite meat and it's cold and I have zero sauce. So I choked down the brisket no links because it was cold and the Mac and cheese was horrible. Noodles with cheese pored over it not even mixed in. Honestly it was a horrible experience. I've been coming here for several years. Always thought it had great food and the price was on par with other really good BBQ places. Got carry out last weekend and was shocked to see an additional 10% packaging fee added for carry out. That added $5.90 to my bill for two rib dinners. Seriously? And there was no sign warning you about it. When I was told the total amount due before they scanned my card I asked if they raised their prices because it was more than usual. The employee just said "yes" with no mention of the carry out fee. If you are going to gouge your carry out customers at least be upfront about it. And the ribs were burnt. Went in for lunch and was disappointed . The first red flag should have been the lack of smoke . If it's bbq I need to smell the smoke. That being said I still choose to give this place a try. Sometimes you just NEED barbeque. Well, my favorite meat enthusiast and I sated that desire this week-end by going to the Red White & BBQ Festival in Westmont. Lots of choices of all kinds of meats, yet we both picked Firewater, for their selection and the wicked smells that lured us from their booth... He got rib tips, and I ordered a couple of ribs and a pulled pork sandwich to take home. Damn, dat smoky goodness. Ribs had that almost leathery exterior that gives way to tender flesh. I combined their spicy and "Sweet Home Chicago" sauces for a smooth note with a kick. The pulled pork revived perfectly the next day, the flavor rich and complex: pork, smoke, spice and sauce. (Watch out for some bone bits as you inhale it, though.) The dude got the rib tips, which he said were tasty, but it looked like there was more meat than there was because of the fat and bone (rib tips are mostly cartilage). Quote: "I'm just not used to that weirdness of gristle. I'm not an experienced rib tipper." Still, he said he'd eat there again. With a location in Crest Hill and one in Lombard, you've got your pick on either side of town. So then next time you're fired up for BBQ, head over to Firewater and quench the flame. read more

Selected for all the food we ordered to be tossed in sauce as well as paid extra for extra sauce on the side. None of the food was tossed in any sauce nor did we receive the extra sauce on the side that we paid for. The portions are small and the food had no presentation.
