Learned of these guys from an Eater video and was interested to try them out as they are somewhat close to where I live in the Bay Area (though it was delivered). Amazing meats!!! Truly! Artisanal and worth the $$$$. I've had the dry-aged prime ribeyes and they were absolutely fantastic. Also well-trimmed. The marbling was beautiful and of course very tasty. Next order I got hanger steaks and also incredible! They were also dry-aged and prime grade. Likely the best hanger steaks I've ever had and a better deal than the ribeyes. Now, I have ordered the Kali ground beef blend both times and it was good, but not great. I noticed another yelper said the same thing. I probably won't order that again, but the steaks are phenomenal and I also bought some extra to freeze as it will hold up well in the freezer and helps defray some of the shipping costs by buying more. This is a local, family owned business and they are doing great things with their meat. Love supporting them. Also, sign-up at their website because they do deals, both times I bought was with a sale price that really made it worthwhile. read more

I have been searching for years for quality in everything, even as a home chef. I Had an opportunity to attend the Culinary Institute of America in St Helena for several weeks of professional level education and was fortunate to meet and talk with Thomas Keller of the French Laundry , who stressed that a chef's job was to "find the best possible product and not screw it up" More than recipes ,what I learned was HOW to select the best stuff ,as that is the key to the whole cooking alchemy challenge. and to add only" finesse" as Keller put it.and let the product stand for its self. Don't try to make it something else it is not. So I went through a lot of places like Snake River and Double R ranch etc...... Then I discovered Flannery. WoW. The best I could do prior was Snake River Black ( their grade above Prime) but it was super pricy and wet age.. ! And forget Waygu A5 too fatty for my liking. Discovering "Prime dry age" and the Holstein beef was beyond expectation..... a pipe dream where everything just sort of came together like U234+ U235.!! The marble and texture were impressive ,just looking, let alone tasting (. I cook my steak on gas with cast Iron sear and baste. I dont want to ruin a piece of meat this good on a back yard BBQ. which is a crap shoot, too many variables . Flannery .I observed , has searched out and perfected the art of nurturing meats to a level , for me un imaginable The pressure is on to not screw it up as I learned that well. . To prepare and serve. I use 6-8 oz cuts and sear 2 min on a side then butter and fresh thyme baste to 110F and let rest 15 min , for me perfect med-rare at 118-120. Tarragon Butter to finish/serve To drink I select a wine of high quality Merlot blends such as French Pomerols and St Ermilon with at least 10 years of age, (Aged meat needs a partner aged wine) with soft tannins and lots of fruit. No Cab, ZIN Sarah stuff . But that's me. The next biggest surprise was the price and value I got. I can honestly say that after many years of trial and error, that I could not find a better butcher or beef than from Brian at Flannery...anywhere in north America.... I tried. It don't exist...Go Ahead and try. too... and you will end up back here. If Thomas Keller was a butcher He would be working at Flannery. with Brian....OK.... read more

Flannery Beef is one of those few businesses I absolutely love. They are a small, multi-generation family-owned butcher shop so it's nice to support a business like that. But the primary appeal is the quality of their meat. I don't know if it's because they use Holstein cattle instead of Angus, or it's their dry-aging process, or some combination of factors, but their meat is remarkably delicious. I've done taste tests with other steaks and burgers, and Flannery consistently comes out on top, regardless of the price point (the only comparison is the local bourgeois butcher shop in my neighborhood, which is as expensive, but whose steaks have the advantage of not having to travel 700 miles to get to me). A word on delivery logistics and customer service: The reality is that Flannery is shipping a perishable product long distances and once the product leaves their facility, it is out of their hands. Over the years, there were one or two deliveries that arrived late and potentially spoiled. Given the nature of the product and the logistical challenges of shipping fresh food, this does not terribly surprise me. It seemed to me that the each issue was with the delivery service, NOT Flannery. Nonetheless, Flannery stood behind their product and made it right without hesitation every time. Their customer service is great and a joy to deal with and I've been a happy customer for approximately a decade. If you want a treat, give Flannery Beef a try. Follow them on IG and look for sales. And when in doubt, you can't go wrong with the California Reserve ribeye or the Kali blend ground beef. read more

When you want the very best, bar none, there's only one place to go for beef and that's FLANNERY. The attention to detail is flawless. Everything from packaging, shipping , preparation of the cuts and of course quality of the meat is 1st class. As a family run business Bryan and Katie are meticulous in ensuring everything that goes out the door is something that makes them proud. On a personal level when I am going to put something on the table for my in-laws, I take no chances. . BTW, one myth people hold onto is that all "prime" grade meat is equal. Prime grade is the first step to meeting the minimum threshold for Flannery Prime grade. Did I mention they take it a step further by offering the holy grail of beef dry "aged prime". Avoid at all costs, they don't stand behind their product and encourage potentially dangerous habits. Certainly do NOT recommend ever gifting someone something from them as gives should not be a headache. Received a few beef products from Flannery Beef as a gift, the gifter had paid them for the upgraded second day shipping as they recommended. The fact they say normally shipping may have issues is silly, your job is shipping beef so if it may have problems you shouldn't offer that shipping service. Still even paying for the upgraded shipping the package arrived a day late and defrosted. They don't ship with dry ice like snake river farms or other mail order beef companies I have received. I had to go out of town unexpectedly so took some photos with the temperature readings. The meat at its coldest was 42.5 degrees, in addition the temperature outside was around this temperature at the time so it is hard to know how many hours it was actually at the elevated temperature (IE it should have sat in a fedex warehouse at 70 degrees and gone higher than that, then cooled down again once in the truck out for delivery or when sitting outside). Given was going out of town I disposed of the meat and I figured wouldn't be an issue getting it handled, I was wrong. I finally got a chance to follow up and I heard back from Bryan Flannery directly. He stated while 40 degrees may be the traditional danger zone, the USDA FSIS (food safety & inspection service) states anything under 44.7 degrees is OK for storage. I had not heard this before and while 42.5 was the lowest temp I didn't recall what the warmest meat temp was (as I assumed anything over 40 was bad enough) to state if it was above the 44.7 degree mark. What is odd is I can't find this anywhere, and the only documentation flannery sent about this was a link to a PDF of a random paper discussing it. This seems at odds with the FSIS public mail order policy: https://www.fsis.usda.gov/food-safety/safe-food-handling-and-preparation/food-safety-basics/mail-order-food-safety which states "If perishable food arrives warm--above 40 °F as measured with a food thermometer--notify the company. Do not consume the food. Do not even taste suspect food.". I clarified I had unfortunately disposed of it already having always been taught the 40 degree rule. Their reply was sorry we couldn't have told you about the elevated safe temperature range before you disposed of it. Granted we received it on a Saturday so they would not have been open then anyway. Finally, these places flash freeze the beef to prevent ice crystals from building up and destroying the quality of the meat. Throwing the defrosted meat back into a home freezer would seem to do exactly this and ruin the "high end" beef further degrading it on that second thaw. So best case it would have been edible but sub-par, worst case could have caused sickness. I don't know the exact cost of what was sent to me but looking at their pricing I can't believe this is the quality of customer service on a product that arrived with questionable safety at best and a down right hazard at worst. I have gotten packages from many other places, and noticed on the last one right in the box it even called out if the meat arrives at a higher temp to contact them right away and they would take care of it. I would recommend buying from somewhere that has a shipping guarantee or at a minimum ships with dry ice. That way you are not out hundreds of dollars if there are any delays. read more

I won't buy beef from Safeway any more. Yes, it's a few bucks more, but the quality is well worth it. I get it shipped to my work, freeze most of it and enjoy when I'm ready. As a self taught home chef, it's worth it. The customer service is on point too. read more

I called to inquire regarding the Kali Burger Blend, was told it was such a special blend made by a top chef... well I received my burgers excited to try BBQed them & they don't taste anything like a high end prime burger, it taste like meatloaf. Ordered a dry aged 4 bone prime rib roast on November 13 for Thanksgiving.....asked them to remove and tie back bones....also said I need roast delivered to my home on November 24...repeated these requests...no problems....roast arrived late on November 25, screwing up family travel plans....when I open roast, bones still on...very poor customer service....such a simple request, and they dropped the ball big time....never again read more
