As a professional chef who has worked on 3 continents, and now works as a private chef in NYC, I shop at Florence Market for the best quality meats, especially pork products and Newport Steaks. Although the shop has changed hands, the level of knowledge, dedication to service, and top quality remains the same because the new owner has worked there for decades. The shop itself has been there for 85+ years, and I for one enjoy the nostalgia that comes with shopping in a small family owned establishment in the Village. This place sells tri-tip ( bottom sirloin ) untrimmed for $15 a pound. They call it Newport steak. I was there recently picking up a couple of steaks and when it came time to pay I asked the lady behind the counter if it was a mistake ( $76 for two steaks ) and she went completely berserk...I politely try to make a point that bottom sirloin was at the low end of the spectrum and I could buy that meat from any butcher for 7 or 8 dollars a pound. This is my go-to butcher. A throwback (sawdust included) in what is still the most authentically Italian neighborhood in Manhattan, Florence is a veteran butcher that knows it's business as well as anyone. Want to call in your order? Done. Want the meat portioned and packed so you can freeze it? Easy. Customer service does go a long way and they do a good job, but for God's sake they're a butcher. It's all about the meat, and that's where they shine. I've only gotten steak here thus far but I will be expanding soon. I most often get the Newport steak, just like everyone else. Around $11/lb for a steak that's aged for 30 days is too good to pass up. If you come here, you should be ordering some if just to try it once. My go-to order is 2 lbs of this cut into 3 pieces, ready to go in the freezer. Their stuff has no preservative so I'd recommend cooking the same day or freezing. I cook 1 for that night, sometimes cook 1 for the next day, and freeze the rest. I am reserving 1 star because 1 time I got a piece steak that came a little brown, but I'm chalking that up to a fluke for now. I will be exploring the rest of the menu, and I look forward to doing so! read more

an old world butcher shop with great customer service! i stopped in after work on a weekday to get some of their famous newport steaks. the shop had a small display case with different meats and the price list is on the wall. they offer dry-aged steaks, house-made italian sausage, and other cuts too. there were a few butchers working but one told me to look around and just let him know if i have any questions. an older gentleman was in the shop too and seemed like a regular, told me that they have good quality stuff. i asked for 1" thick newport steaks and my butcher went to the back and came out with a big hunk of steak. he then use a ruler to measure and made a small score, before cutting and trimming the excess fat off of the steak. i also got some of their bacon, cut to my desired thickness. my butcher labelled both items and i was on my way. when i cooked the steak, it smelled good and tasted oh-so-tender. good ppl, good quality, i will be back for sure. read more

Florence was my go-to butcher for quite a few years. They sell only prime, dry aged beef, and the quality is excellent. They age up to about three weeks. This is a good amount of time, but not at the super premium end of the range. It gets you great tenderness and beefy flavor, and hints of the layered, mineral notes that dry aging can bring out. But it doesn't produce the mind-blowing depths of flavor that can come from five or six weeks of hang time. It also doesn't produce the mind-blowing prices. In fact, Florence is so cheap, I wonder how they can stay in business. They're cheaper than Jefferson Market, in the same neighborhood--and Jefferson's meat isn't quite as good. They're way cheaper than Whole Foods, and Whole Foods' meat doesn't even come close. Forget about Dean and Delucca and Citarella. I have no idea where the money goes at those places. Florence is a block from Otomanelli's, which is another great butcher. My general sense, from nothing more than informal comparisons, is that the beef is a bit better at Florence. But Otomanelli carries a wider range off stuff ... they're the place to go if you need to order some Berkshire pork belly or bluefoot chicken or red-freckled Himalayan goat snout. There's no beef in the display case: it's all cut for you from sub primals that they bring out of the aging cabinet. This is how it should be done. Here in NYC, there's just no reason to settle for a butcher that pre-cuts meat. I love the old school feel of the place. There's opera on the radio, sawdust on the floor, a stern looking woman in charge who can answer any question about beef you can imagine, and an even sterner looking (but much cuter) cat, who is probably the owner of the place. The owner has now bitten me all three times I've tried to make his acquintance, but I keep coming back. read more

As the home of the Newport Steak, that is the only cut I've purchased here. I come here every week or two to buy a pound of the Newport. The taste is great for the price ($8.99/lb), and the ring of fat around the outside is heavenly (not too chewy unlike the marbling of more expensive cuts). I'm not the most knowledgeable about different steak cuts - so I really wish that they displayed more cuts so I can look at them before I make a purchase. Tip: Find the adorable cat! read more

I was introduced to Florence and their famed Newport steak last year and it is now a regular stop for me. The absolute best bang for your buck steak out there. Great for a big BBQ as you can serve a large group individual steaks and it really won't break the bank. It is definitely one of the best steaks you can grill at home. Lots of fat so it's hard to screw it up. The standard cut is about 1.5 inch which is pretty thick. If you prefer it a little thinner, just ask. I often get them 1-1.25 inch. If you are cooking a bunch at once, I find that a little thinner is easier to manage without over cooking. Their thick cut bacon is also a nice treat. You can always call ahead and they will have your steaks ready to go when you get there. read more
