    Dry brined w/ Kosher Salt for 8 hrs & simply char-grilled. I like to remove it from the bone, slice it thinly & set it on some Apple Sauce.

    As a professional chef who has worked on 3 continents, and now works as a private chef in NYC, I shop at Florence Market for the best quality meats, especially pork products and Newport Steaks. Although the shop has changed hands, the level of knowledge, dedication to service, and top quality remains the same because the new owner has worked there for decades. The shop itself has been there for 85+ years, and I for one enjoy the nostalgia that comes with shopping in a small family owned establishment in the Village. The personal touch is always appreciated when it comes to service. Best of luck to the new owners, thanks for keeping this iconic NYC landmark up and running and true to its history, and I'll see you the next time I need perfect pork chops or steaks to serve my family and friends.

    Great service and great meat. The only butcher we go to for holiday meats (prime rib, suckling pig) and steaks.

    Newport steak is great and fairly priced. The chicken parts are good but pricing is a little steep.

God damn did they arise to the occasion. Both times I needed a large party reservation, they just asked for a time, a name, and a phone number. No card required, they sat as down as soon as the table was cleared. Two different tiers for AYCE - the shrimp is fantastic but honestly base is amazing on its own. All the meat just tasted super fresh, even the marinated ones. Plus they cook it for you on that really nice heavy iron lid so the grill stays hot, and they had a nice incline to drain the drippings too. I'm a fan of brisket and jowl, but a lot of my table mates loved the bulgolgi and the chicken. Lots of great options for drinkers too. Funny tower that pre-mixes three beers with a soju, with plenty of flavored ones too. It's not the biggest menu out there, but with solid options and open an hour or two later than a lot of the competition - that's a win.

Our waiter was going between 2-3 tables. It seems he was at our table the most lol. Overall: 6.5/10 Nothing special really. It's a decent AYCE kbbq. If you are in the area, I would give it a try but I wouldn't travel far to come here.
