The bison tartare was leaner than traditional beef tartare, and the crispy chips added the perfect savory crunch. The ceviche was incredibly fresh and bright. For our entrées, I had the ribeye while my wife ordered the Dory. The ribeye was cooked perfectly--juicy, tender, and packed with flavor. My wife couldn't stop talking about how buttery and delicious the fish was. To finish the evening, we ordered the 100-Year Port Flight featuring 10-, 20-, 30-, and 40-year ports. Vertical tastings are such a fun way to experience how a wine evolves over time. The 40-year was absolutely outstanding, and the 20-year was another favorite. The 10-year was enjoyable but still showed its youthful character compared to the older vintages. The atmosphere strikes a nice balance between upscale and relaxed. The main dining room can feel a little tight when the restaurant is full, while the bar area has a few TVs for anyone wanting to catch a game. One thoughtful touch that stood out was the women's restroom being stocked with amenities like hair ties and hair clips.
