    Chicken Tender "Flight"

    I hate boneless, skinless Chicken Breast with the heat of a thousand blazing red-hot Suns. Most of the time. Except here at FTC. We turned on to this place a while back, and it never fails to be anything than a top- class, delicious feed. Whycome these guys can fry up a hunk of Chix and keep it moist and tasty, while so many other joints put out something akin to shredded cigarette filter? Dunno, but I'm glad they do. I spied they started offering a "flight" of Tenders at every heat level, along with every sauce. But ONLY for dine-in. Gauntlet tossed, challenge accepted. It's a groovy plate, with labels, even. (see the photo below) They get mo' hotta as you move from left to right. All tasty, all moist. I'm a hot-foods aficionado, and this shit doesn't scare me. I took bites from each tender, in order. The first 3 barely register on the "Heat-ometer" for a hot food fan, but know there IS some octane in the mild and medium examples. The "Hot" certainly was, but not at the expense of flavor, and the next leap up, "Crazy", was definitely an enhanced and vigorous little sucker. It's right at the level where any more spice would prove to be a defining moment of courage. Then. I snarfed a coupla-three bites from the "Insanity" chix-finger so's I got a proper dose of whatever was there. Didja ever sneak into the kitchen, grab the can of "Reddi-Whip" from the Fridge, tilt back your head and squirt the creamy goodness directly into your pie-hole? Imagine doing that with a can of Mace. (and I ain't talkin' about the little tin from McCormick used in Punkin' pies and such) Please read on and learn the depth of my pain. The enigma of eating stuff like this is the beguiling taste you experience just before the searing pain begins to bloom on your palate. Or just as you realize you may have made a horrible mistake. Mais oui, I et this incendiary ort unencumbered and of my own free will. Searing, intense pain. I know water or sodapop wasn't going to do a damned thing to soothe; so I thought about looking for some oil. I briefly considered invading the FTC scullery and grabbing a cup of their vaunted beef tallow they fry their stuff in, directly from the fryolator. It HAD to be less hot than the "Insanity" I voluntarily introduced into my G.I. tract. Abandoning THAT stupid idea, I decided to sweat it out. It took about ten minutes, and I savaged all the creamy coleslaw on the table, which helped a bit. At least I can say I tried it. Glad I did! The sauces accompanying the flight are all tasty, and while the tenders themselves are tasty enough, a little dab here and there of the sauces are a nice addition. The flight has a price tag of about $25, and it's worth it. You'll have enough to take home for a second meal or snack. I've had "Hot Chicken" in Nashville (q.v. my Yelp for the original Prince's). FTC here would be a righteous contender in Music City. Sure enough!

    Was in the mood for hot chicken so tried this new place. Just went through drive thru so didn't see inside. It took a bit to get my order but figured they're making it fresh so I won't complain. Good seasoned fries and pretty good chicken. Probably not good enough for a return visit.

    This location is ok,the prices are kinda high for the amount of food that you get. I ordered 2 mild tenders and 1 seasoned fries and it was about $15. I loved the fresh seasoned fries today,but the seasoning wasn't mixed correctly. I tasted sections of sweetness(like sugar). I just wiped most of the seasoning off because its about 25% too much...yummy fries tho. My mild tenders disappointed me. The seasoning was heavy on the chili powder because that's all that I tasted,whatever oil that's used to go on the seasoning wasn't used on 12/31...or,not the amount that's usually used. I didn't receive napkins and the employees were just kinda blah and lackluster. After this visit,I'll just stick to Dave's hot chicken...or,I'll just go for the fries and ask for light seasoning.

    Firstly, it's super cold in here but I'm not really complaining. The staff is extremely friendly! We went at a more quieter time, just about 45 minutes before close. We immediately fell in love with the atmosphere, the cleanliness, and the music they're playing! This is a very cozy place. We also deciphered that this used to be a Steak 'n Shake! The food was amazing! Very flavorful, and hot. This restaurant gave us Dave's Hot Chicken vibes, verrrry tasty and juicy! Definitely coming back here when back in the area!

    I've gone here many times and I love bringing people with me to show them how good it is! Their food is such high quality and it's all fried in 100% beef tallow so it's especially delicious. The decor is also very aesthetic for a chicken place, and they place great music! It's definitely on the more expensive side, as my meal with the cherry coke was $19.66. However, the price is totally worth it and I keep coming back for more. They even have a drive-thru.

The place is busy, loud, vibrant with customers clearly enjoying the food and experience. The interior is decorated simply, with muted colors, is well lit, and clean. There are a lot of hard surfaces which makes the ambient noise level fairly high; however, it did not detract from the experience (but just be advised in case you feel this is bothersome). We were greeted warmly and though the place was packed, we were seated quickly. Despite the diner-like vibe, there is no counter, just tables and booths. Our server was prompt, very pleasant, and efficient. The coffee was hot and flavorful. The food: Large portions, well prepared, warm, savory, satisfying. The loaded Cheers omelette, with hash browns and pancakes, was more food than I could enjoy in one sitting so I have leftovers for tomorrow. Prices are in line with more reasonably priced independent eateries. A two-egg, hash browns, pancake combo is $14. This place will be an option in the future.

They also feature an extensive craft beer selection. I went with the seasonal Abita Bad Mother Shucker Stout, which was a fun nod to Mardi Gras and a solid stout choice for the occasion. For my entrée, I ordered the Mardi Gras Platter ($32.99). It included: * Choice of soup (I chose the seafood chowder) * Shrimp Creole * Jambalaya * Chicken Étouffée * Crawfish & Shrimp Monica * Broccoli The restaurant was busy, which is understandable for Fat Tuesday, but our food took quite a while to arrive. The soup was delivered at the same time as the platter. In my opinion, the soup should have come out first. Ironically, the seafood chowder ended up being the highlight of the meal--rich, flavorful, and well-balanced. Unfortunately, by the time I finished the soup and moved on to the platter, most of it was only room temperature. The items were layered and grouped together in a way that made it unclear what paired with what. The chicken was noticeably overcooked and lacked depth of flavor. It tasted as though Cajun seasoning had simply been sprinkled on top rather than developed into the dish. Overall, the platter lacked the bold, authentic Cajun flavor profile I was expecting. The Crawfish & Shrimp Monica was advertised as coming in a bowl but was served in what amounted to a cup-sized portion. The menu description listed Cajun Alfredo sauce, crawfish, crab, blackened shrimp, pasta, Parmesan cheese, and broccoli. After mixing in the Parmesan, I searched for the seafood components and found none--no visible crab, crawfish, or blackened shrimp in the pasta. I mentioned this to the bartender, who said they would bring some out to add in. A few minutes later, three Cajun shrimp were delivered. There was still no crab or crawfish. While the Alfredo sauce and pasta themselves were very good, the absence of the advertised proteins significantly hurt the dish. Had I ordered the Crawfish & Shrimp Monica on its own for $24.99 and received the same portion and lack of seafood, I would have been extremely disappointed. Overall, while the concept and menu sounded promising for Mardi Gras, the execution--especially at that price point--left a lot to be desired.
