The fried crispy chicken was surprisingly not oily nor heavy, but light in batter, and the sauce was also perfectly light in taste and texture (unlike traditionally overly heavy thick & coloured sweet & sour sauce you see in westernized asian restos). The noodle soup broth was also light, as promised. The owner stopped by our table, and we had a great conversation about her homemade house sauce, which was the perfect complement to the bibimbap. She told me it's made with more than 14 different fruits and no added sugar. It was fantastic. She actually reminded me of my friend's mom back in Seattle, which made the whole experience feel even more welcoming and authentic.
