In this particular shop you walked all the way to the back of the store to order, then moved forward as your sandwich-making progressed. That makes sense to me in that, the line is not blocking or impeding impeding potential customers as they enter. I've found some shops have it reversed (including at least one in my hometown) where you order as soon as you enter the store. Makes for a confusing time if the place is full and people who have been served have to wend their way back through the waiting customers. Is this layout a local manager's or franchisee's prerogative?
