A great example of a restaurant that is unique within a world of many standard offerings. I observed many more than a few custom touches from their sweet tea concoction called "moonshine" (yes, take the Mason jar home with you) to items on the menu that reach beyond just bbq. A very friendly, hole in the wall place with some of the best bbq i've ever had. The brisket was thick cut, tasty and melted in your mouth - possibly the best brisket I've ever had. The ribs were very tender and also tasty. The unique baked beans w/ brisket chunks and soft, mustard potato salad were also delicious. The lemonade, with free refills, was awesome. On my way to an appointment today in Kilgore. Coworker and I planned to eat at country tavern, foregoing breakfast so we would be good and hungry. Passed a little bbq that had a sign up for steaks and made a comment we'd have to try it the next time we were down that way. Thank Gawd Country Tavern was closed on Sunday's because we were treated to the best taste sensation ever!!! The owner and his wife are so very personal. Son was there working the counter too. Very small place with 4 tables inside and more tables outside. They are expanding in the near future to handle the demand created by their culinary masterpieces. I love this place. I loved the food and I especially love the couple that owns and runs it. I had dinner here tonight with my wife. We both had a mixed plate with ribs, brisket and sausage. They serve just two sides, potato salad and beans. The meats have the perfect amount of smoke and I thought the sauce was excellent. The sausage was delicious, tender and juicy. The ribs are huge, meaty with a good amount of fat. They're chewy but I prefer this freshness to the over cooked mushy BBQ everyone thinks is good cooking. The brisket was tough and I would like to see it come out tender. The sides were excellent. Everything was really tasty. It's a bit of a dive. I think they should change out the condiments on the tables. Some of them look really old. Just keep a couple around and give them out by request if they don't empty quickly. We can't wait to return. Their food is awesome! Hands down my favorite BBQ spot in East Texas. It's a small family owned local spot. There isn't much room to sit on the inside so it's usually best to get it to go. I am not a bean person but I love their baked beans. They also have Moonshine Lemonade and Tea (it doesn't have alcohol in it). The lemonade is my favorite. Being from Nashville, TN it is home to the best BBQ in the world until I found this place! Just to start the owner hand picks every single slice of beef, chicken and pork that goes through his door. It takes 18 hours to slow cook his meat and to say it is tender just doesn't really capture how delicate and tranquil this meat really is. Business's that call themselves BBQ that use liquid smoke need to re-evaluate everything that they do in life and not use the word BBQ until they see the standard that Hickory Hill BBQ sets for real barbecue. Great Bbq for sure. Very tender and not over smoked, just right amount. Sides are excellent and obviously handmade. Very small place and seating is limited. Sunday (11/22) they ran out of brisket rather early (1 pm), but Sunday folks were calling in big orders to go, so that put a strain on the supply. Cash only, so don't expect to use a card. Make sure to use the menu at the register before ordering rather than just looking at the display board. They have items such as tacos and burgers along with a monster called The Godfather. As previously tipped by me, don't use the YELP map because if you do you'll drive about 35 miles out of your way. Go with Google maps and type in the physical address that is posted correctly on YELP and it will take you right to it. Note that they put the sauce on the meat, so if you don't go for that just tell them when you place your order. Also it would be wise to call ahead so that you are not disappointed that they've sold out of a particular item. read more

We have always passed in front of the place and we have never had the time to stop. Today we made time and I and glad we did. We ordered the chopped brisket, sausage and potato salad. The brisket was tender, moist and just delicious. The potato salad and sausage was a good compliment to the brisket. Now, today we got introduced to an awesome concoction called moonshine tea. This drink is amazing and it is served in a mason jar. I don't know what all goes in it but I would make a drive just for it. We you walk in it's not very big but there is a bigger room in the back. Price wise it is not expensive and they are cash only. I have to say that I don't believe we have ever eaten anywhere else that the service was this great. The service was friendly and the cook is dynamite! When you go in make sure you ask the server who most likely will be the wife to tell you the story about how the husband acquired the space. We were so lucky to find this spot. Small unassuming... as soon as we pulled up we knew it would be good. The food did not disappoint! After some careful consideration about the imperfections of this place; a brisket that could be more tender and the lack of unsweetened iced tea, which is my go to barbecue beverage of choice, I decided to go with 5 stars for this wonderful little hole in the wall because 1. The meats here are perfectly smoked with incredible meaty flavors and 2. I am now back in Louisiana craving the baked beans and potato salad that are a day's drive away. We arrived for dinner on a Sunday night and were greeted in the most friendly and hospitable way. There were some to-go orders ahead of us, and the owner apologized for the wait, but we were chillin and enjoying not being behind the wheel. My husband and I both got the 2 meat combo, beef brisket and pork ribs, with the aforementioned potato salad and beans. The ribs are large and meaty, with a rub that doesn't overpower the flavor of the pork and smoke, and a sauce that hits the perfect note of tangy and spicy. These ribs won't fall apart when you bite into them, and for that I say "thank you" to the pit master. He knows what to do with ribs. The brisket was equally meaty and perfectly spiced, but, alas, was a little too chewy, even for me. Here's where a bit more tenderness would be appreciated. The flavor of this brisket won me over, and I will not remove even one half of a star from this review. There is care, thoughtfulness, skill and expertise that goes into this food. The beans and potato salad were both very well crafted, and went really well with the ribs and brisket, and yes, I'm wishing I had some right now. He puts some brisket in these baked beans, and they are divine. The potato salad had some diced up pickles or relish in it, and whatever this ingredient was, it made the salad a little sweet, a little tangy...just perfect. The owner gave each of us a helping of sausage to go with our dinner, as they had a bit to offer, and that was delicious too. Texas is full of hospitality, and this place represents.
