I also really enjoyed the rice, although I wasn't a big fan of the beans. The chips and salsa were really good as well. The one thing I found a little odd was that they didn't have a red salsa or something like pico de gallo to have with the chips. That was a little disappointing. It's a simple dish served with sautéed veggies like zucchini, onion, carrot, red bell pepper in a bit of watery broth. Mango relish. 2) Costillitas: Meaty Pork ribs marinated in cayenne pepper and coconut milk marinade that is not at all chile piquant. Perhaps adding some Bouillon would add more of a meaty Umami for more rounded flavours. Sprinkling of chopped green parsley for color. Oven roasted with roasted, cumin mango relish, BBQ sauce.
