Something has gone wrong at Hirsch's. I have been going here every week or two for years. Over the past 4 months, I purchased rotten chicken breasts on multiple occasions and rotten brined vacuum-sealed pork chops multiple times. Sure, they are nice and will replace them, but it is no longer worth the 45-minute trip. Yesterday was my last time! I purchased 4 chicken breasts, and when I came home and opened them, they were rancid, just like before. I also purchased a Prime rib eye, cooked perfectly, but it was tough, like a select cut from Tom Thumb. It is too bad that Dallas does not have a better selection of high-quality meat markets. I guess I will just have to go back to HEB for their overpriced meat and chicken from now on. read more

Went here about a month ago to buy some prime tenderloin steaks. I want to say they were around $46 a pound and looked like the bottom of the marbling scale. Like something I can get from Sams club or Central Market for a much lower price. The bag that the meat was in even looked like the bag for Sam's club. One nice thing is that you can get it cut to the thickness you want. The steaks did turn out well which was probably had more do with the seer and seasoning than the quality of the meat. In the end I don't think it's worth the steep price. Also, the workers behind the meat counter didn't really look like they were that interested in earning a paycheck. read more

Great local butcher shop for all of your meat and deli needs! My first time coming by here today and I'm very happy that I did. Hirsch's reminds me of the Pennsylvania farmers markets where there is tons of great cuts of meat of all types and staff with personality and knowledge. It's a bit far for me to come to but it is well worth the trip. They have a plethora of meat including Beef, pork, chicken, smoked meats, brisket, sausages, hot dogs, wagyu, veal, turkey, seafood, lunch meat, cheeses and more! We picked up some pork chops, rib eyes, sausages, wings, honey hame and some great cheese. The pricing here is a very reasonable and what I would expect at a local butch shop. I'm my opinion this is way better service and cuts of meat than what you would get at Costco, Kroger, Walmart and the rest. In addition to this they also process deer, which is great for hunters. Overall we had a great experience, and I can't wait to grill what I bought from here for the Super Bowl game on Sunday. Highly recommend! read more

Well, what can I say about a place whose clientele have already provided echoed laudatory remarks?!? I suppose one may consider my review to be an update, amid the COVID-19 "scamdemic." Don't hate. Anyhoo, I've visited Hirsch's a couple of times in the same number of months past. It did not disappoint! In fact, it is an incredible meat market, with a great flair for making the customer "King!" Upon entering Hirsch's, one must take a number to put oneself in the queue to be waited on. And, don't be discouraged if prior to taking your number you see they're serving number 45 and your number is 65. Trust me, you'll be amazed at how quickly that 20 customer void between you and "meat" will dwindle quickly! And on that note, I suggest you get busy browsing for what you plan to purchase, as the staff are about getting people waited on efficiently and courteously, but quickly! I liken a visit to Hirsch's to a day trip to Disney; there's so much to take in and so much to tempt one's appetite that it's easy to miss something and it's even easier to leave with much more than that for which one stopped in. I have to remind myself to stay on task as I take in all of the eye candy! My personal favorite at Hirsch's are the Prime cuts of steak, which should be tried at least once, even if you're on a budget. You will not regret eating the best steak you have ever eaten, if you do!! I also very much enjoy the various flavors of sausage, the jumbo pickles, and the dried beef!! I've yet to try the poultry, pork chops and seafood, although I have purchased the frozen sea bass, but haven't prepared it. I love Hirsch's and can unhesitatingly say, if you've never tried freshly butchered meat, you're missing out on a real treat! If you've been inside a German Metzgerei, Hirsch's will remind you of that old world experience! And, I am 110% certain, if you give Hirsch's a try, you WILL NOT be disappointed!!! They have every type of meat, homemade sausage, deli meat, seafood, etc. Many experts on hand can answer your questions and offer advice on the best cut of meat for your needs. We have purchased Ground Beef, Italian Sausage, Pork Chops, Prime Ribeye and Choice Ribeye. Their prices are more than grocery stores but worth every penny. If you love to grill, they have a nice selection of wood chips. They sell local farm milk, chocolate and strawberry. A $2.00 deposit is required but if you're like me and continue to buy the milk, the deposit will be applied towards your next purchase or once you return the glass jar, you will receive the $2.00 refund. Their customer service is awesome and excellent quality of meat. I'm looking forward to trying their boudin on my next visit. read more

Absolutely incredible all around. We brought an Elk from our latest hunt to be butchered and they knocked it out of the park! Customer service was first class, Gary walked us through the entire process and helped us pick out everything from the cuts to the types of sausages we wanted. They processed and butchered our Elk extremely fast. The sausage (Italian, Spicy Italian and Jalapeño) are so good, my wife and I are fighting over who gets the last piece. Obviously, she does. And they cut and butchered the other cuts perfectly as well. Very reasonably priced for first class quality and service, can't get better than that.
