Cooking with soy sauce and ginger and serving things over jasmine rice does not make food "Asian," especially if there isn't a single Asian person in the kitchen. 2) The food is not nearly good enough to justify $20 a plate (ditto to the $10+ glasses of wine). 3) The farm-to-table ethos doesn't seem to carry over to the beverages. I read all the reviews below before coming here for dinner. The communal seating and cocktails were pleasant and strong. We came here on a Monday night to celebrate my boyfriends birthday, but left hungry and unsatisfied. What we ordered: Pork bao: which ended up very soggy and salty. There was an overflow of sauce on it, which ruined the taste. Spicy calamari: was not edible, it was drenched in sauce that made the flavors overwhelming. I usually eat very spicy foods but this was on some next level. Brussel sprouts: probably the only thing we somewhat enjoyed on the menu, we left the white sauce on the side untouched since it had no flavor and didn't complement the crispy sprouts. Spicy Chicken & rice noodles: Lime and carrots. These should be the only ingredients that they mention on the menu because the dish has an influx of them. At this point we sent this back and left starving. Besides the food, another thing that was alarming was that none of the staff questioned why we didn't touch our food. I like the vibe and food at Hudson Food Studio. I've lived in SE Asia and northern Asia, so the food feels good and familiar in a hybrid kind of way. The atmosphere is lovely with a long shared table by the open kitchen. There are other tables along the rectangular shaped restaurant that allow you to have a good conversation and still feel like you in in the middle of things. I've eaten here several times. Last week we shared crab cakes, pork buns, and the Vietnamese chicken salad. The crab cakes had a nice crust and good crab filling. I felt like I was eating crab, and not a heavy cake. The pork belly baos were tasty and the sauce was a good balance to the fattiness of pork belly. The VN chicken salad was a bit watery and could have used more dressing. I've had here before where the salad was quite good, so will try to settle once and for all next time. The restaurant was full and the crowd was mixed with locals, business people, and city folks too. As with many restaurants in Hudson, check to see if they are open M-W, as some places close on Mondays, others on Tuesdays. I would hope the credit card machine arrives before the next trip here. The food here is pretty good! I had the steamed buns for my appetizer. They were uniquely presented and assembled, but they tasted fantastic. For my main course, I had the roasted half chicken, which was seasoned perfectly. Despite the good food, I did feel that it was a bit overpriced. For example, if you wanted to order just rice, it was a $4 charge. Another detractor of this restaurant was the slow service. My friend and I waited approximately 30 minutes for our entrees, and the restaurant was only a quarter full at the time. read more

What a gem in Hudson! The inn we were staying at recommended that we try Friday night dinner here and it did not disappoint. To start we had the pork bao and the crab cakes, both delicious. For dinner I had the spicy chicken and my date had the pork ramen. While the chicken was good, I have to say that the pork ramen was really tasty. The only criticism I have is that they do not offer dessert (boo!) but this probably prevented a case of major overeating. Definitely check this place out if you're in Hudson! After eating here at least a dozen times over the last two years, I can attest to the consistency of HFS. I've enjoyed just about the entire menu and wouldn't hesitate to order anything again. This is real fusion not confusion. Because the short amount of time during our trip, we decided to have two dinner that night and this was our first dinner destination of the night. We were very conscious not to overeat and the food was so good I was so down to just stay there for dinner but we had reservation elsewhere. :( We sample two dishes from HFS, Brussels Sprouts and Duck Buns. We also shared a cocktail, the Old Wagon (gin-based). All were amazing. The Brussels Sprouts are nicely roasted and artfully displayed with a generous smear of aioli with a hint of saltyness from some sort of fermentation. The Thai chili gave the dish the right amount of heat and the fried shallot gave it that crunch. I would say a must order when you are in the shop! I only got a couple bite of the Duck Buns and the duck was juicy and crispy at the same time with a smooth hoisin peanut sauce. It was very pleasant but came with a small amount of duck confit. The drink was strong and sweet. Just like it should be! We will definitely pay Hudson Food Studio another visit when we are in the area. Hopefully by that time they will be open for lunch! read more

Did not get expect to find good Asian food in Hudson, but was pleasantly surprised at the Hudson food studio. My cocktail involved some lapsang souchong tea and some whiskey, and was amazing. Dear Food Studio I have been to your restaurant at least 10 times over the past 5 years and it's safe to say - the food is just not good :( I have come back each time hoping that the cooking would be improved but it never happens - Please use herbs- please don't call that food Vietnamese ( I have been to Vietnam and food studio is cooking nothing that Vietnam produces ) Stop using big mushrooms that taste like rubber ( yuck) it's lazy not to cut up the mushrooms in a noodle dish- yuck- please learn how to cook an eggplant down so that it caramelizes and the flavor comes out when cooking and serving it with rice - oh and the rice --- please please for dear god learn how to make rice--- your rice is a disaster--- dry and uninspired --- there are so many delicious Vietnamese and other Asian restaurants in the world that are working hard to expand the basic American flavor profile - you all at food studio are doing a real disservice to Asian cooking- it's borderline offensive - yuck yuck yuck --- for all those reading this review please visit Di An Di in Greenpoint Brooklyn for truly exceptional Vietnamese food . Really nice service, really nice high quality food, but took one star down because the waitress told me options (Mushroom noodles) were "definitely" gluten free and they were very much not. For a person with celiac and wheat allergy this is not ok, which I communicated to the waitress. Maybe they cooked the noodles in the same water as the non gluten free stuff? Maybe things weren't really cleaned properly. I spent the rest of the night with bad symptoms of glutening. Additional star taken off because they were pumping out take out orders while the sit in diners waited for their stuff and we had communicated we were in a rush. What a shame! What was once one of my favorite Hudson restaurants is now one of my least. If only the owner spent as much time on the menu and flavors as he did on the design of the new space. While the space is chic and modern, the flavors are uninspired, boring, and done without attention and or care for seasoning. The new staff is checked out at best, obnoxious per usual. I used to love to recommend this neighborhood spot- now I regretfully tell people to avoid a visit to Food Studio and spend their time and money elsewhere. Manager offered to have me drive back 40 minutes each way to pick up the sides of aoli but REFUSED to offer refund . tl;dr Nice atmosphere, but not worth the cost My boyfriend and I recently spent the weekend in Hudson and dined at Hudson Food Studio. We sat at the bar since we didn't make a reservation. He had a bottle of beer ($8), we shared an order of bao buns. They were the highlight of the meal and at $12 for 2, we were content with it. He ordered the warm sesame noodles ($18) and I had the shrimp curry ($25) The sesame noodles were the better of the 2 dishes but $18 was steep for what the dish was. My shrimp curry was not a curry. In fact I would have never known it was even supposed to be a "curry". I'm not one to leave food behind but I only ate about half of it. When we were done eating the bartender cleared our bowls, scrapping the leftovers into a trashcan which was sitting out in the open. Seeing her do this, at a higher end restaurant, was not appealing. There wasn't a place to hang our coats. This sounds like I'm really complaining, and that's not my intent. But we were disappointed. We wouldn't dine at Hudson Food Studio again. read more

Bok Choy- steamed: the best of the meal again with a sauce that was completely bland. Noodles with Sirloin- truly like Applebee's. Shall I say more? Very satisfying food. The ramen was excellent and the portion size generous. The fish cakes we had were far better than expected. This restaurant would easily have been a 5 had we not arrived at the door 10 minutes before our reservation, and been denied access to use the restrooms (2 of our party of 5). The excuse was they were still sanitizing the restaurant prior to opening, a weak excuse given we would just be in and out quickly to use the restrooms. The fact is, the woman who denied us entry - the bartender - was also rude and terse and didn't care about us in the least, not enough to consider how unfriendly and unwelcoming she was being to customers. While COVID is still a threat, it has clearly abated and many restrictions are being lifted; but in this case it was just a matter of good old common sense and humanity. FYI we went across the street to the Rivertown Tavern which - although also not open yet - let us right in to use the restrooms, even though we were NOT customers. Please note, I am not a tourist - I live in the Hudson Valley in proximity of several popular towns that are generally measured and up to date with respect to covid restrictions. Hudson, overall, seems relatively excessive given NY's vaccination progress. So please don't reply with "They are just doing their best given Covid...." I am able to assess what's overkill. PS. Although we considered not showing up for the res given the bartender's attitude, and instead dining at the friendly Rivertown Tavern, we went back and honored our res, and found the service (our waitress especially) to be excellent and the food very good. For $20, you get a starter, bbq pork bun, a can of beer and main course, ramen noodles. The bbq pork bun hits all the right spots and the ramen broth was so tasty with noodles cooked to perfection. Ive been a semi regular over late last summer and fall to Food Studio. I love their new expanded space - it was difficult to get in to their old smaller space! Lighting for dinners is subtle and muted with several different cozy rooms. Generous portions of delicious vegetarian fare always allow me to take some home which I appreciate. Outstanding dinner this evening. We started with the Jumping Squid appetizer and the Blue Star Farm roasted carrots with pesto. Both dishes were beyond delicious. Interesting, flavorful and fresh. We then had a fabulous halibut marinated with turmeric and rice noodles, and also a sautéed mushroom and crispy tofu noodle dish. Both were fabulous. We drank a crisp and perfect Sauvignon Blanc that was reasonably priced. We sat outside amongst the beautiful courtyard garden outside of the large, modern kitchen watching the food being prepared.
