Sauce was optional with a choice between a vinegar/red pepper based sauce and a thicker/sweeter version with a similar taste profile. Both were tasty but truly not needed as the pork in the sandwich stood just fine by itself. The fresh cut french fries were fried exactly like my mother fried them... crispy on the ends and soft and fluffy in the interior... a delicious fry indeed.
