Built by Neapolitan immigrants Giuseppe and Annunziata Colella back when Lyndon Johnson was in the White House, still run by their son Lorenzo today -- no gimmicks, no small plates, no design concept. Just a family that's been at this long enough to become a civic institution, the kind of place that hands out beef stew to first responders during a blizzard and puts its name on every Little League jersey in town. The pie itself surprised me. I expected the standard New York fold -- thin, floppy, two hands required. Joe's doesn't play that game. The crust runs thicker, with real structure, and it holds -- no flop, no surrender. The crisp on it comes off like coal-fired, even without a coal oven doing the work, which tells you a kitchen that's figured out how to earn that char through technique alone.
