The Kala bhuna with kichori on a drizzly cloudy day, was perfect! Well balanced and perfectly spicy, it was my favorite dish. The morog polau was really good too! We took the pupusas home (the place is takeout only) and the split them between us three. It was a nice surprise to find little bags of slaw and sauce on top of the containers of pupusas. We got the cheese, bean (black), cheese and loroco (a flowering herb) with cheese, and squash (zucchini) with cheese. They all had their good points, but my family's favorite was the bean, while mine was the cheese, as it seemed extra buttery. We also really liked the one with loroco, as the little flower buds were a combination of earthy, floral, herby and a little tangy, and unlike anything we've eaten before. The pupusas were larger than we expected, and I felt like it was a great value, too. We had two with the rice dough and two with the corn dough - and they were both good, with the rice dough a bit chewier. The cabbage slaw had bits of carrot and zucchini with a slightly sweet tomato-y dressing. My son liked the crunch of it, but I like my cabbage sliced more thinly and a little more "marinated". Tasted good, either way! The tomato based sauce they gave was very mild. Again, it is carry-out only, there are a couple of chairs inside where you can wait for your order - we sat out front on the planter walls eating our pastry while we waited. The dumplings are made in a commercial kitchen in Vienna, but you pick up the prepared and frozen raw dumplings from their customer pick-up location in Bristow. They offer a variety of dumplings: shrimp (includes a little bit of spinach), pork & cabbage, pork & leek, chicken & celery, and a vegetarian one. They also offer their special Organic Sweet & Sour Garlic Chili Sauce, which is a MUST HAVE with the dumplings! Don't be scared to have to cook the dumplings yourself! There are a multitude of cooking options available and can yield perfectly delicious dumplings! One can either boil (easiest), steam (healthy), or pan fry (requires the most effort) the dumplings. Just google how to cook Chinese dumplings for each technique. I met the owner's granddaughter, Peggy, who is the face of the company and THE NICEST person you could ever meet. She manages the day-to-day operations, while her grandfather, Mr. Han, handles all of the dumpling making. Three Leaf Dumpling's website touts that Mr. Han has been covered by the Washington Post for his mastery in hand-pulled noodles.
