They use crispy pork belly instead of sliced Chasu, which was different but very good, rich in flavor with a bit of a crunch that added a nice contrast in texture from a standard ramen. My egg yolk was still soft, maybe slightly over done by 20 or so seconds but still very good. I didn't try any of the sushi rolls, my wife prefers rolls where I prefer nigiri, and couldn't finish my ramen I was soo full since this was technically our second meal of the night - and I really liked the tonkotsu broth. Service was quick, and was checked on multiple times, fast on drink refills. It's very trendy feeling, with Japanese Anime being projected on the wall. I will be back to try more offerings - they show bluefin otoro on the menu and I'm a sucker for some fatty tuna - haven't seen that one anyone's menu around Knoxville so I'm excited to come back and give it a try.
