As former certified Kansas City Barbeque Society (KCBS) certified judges, my husband and I completed the training and paid the fees to be certified. The "KCBS way" is different from a lot of people's preferences in that, for example, a BBQ rib should actually have some "pull" to it, meaning, when you bite into it, your mouth should leave a mark in the rib. This means "fall off the bones" ribs are not KDBS quality, despite how many love that rib consistency. The KCBS judges slots fill up so quickly and required us to travel at our own cost and we did not judge any KCBS events. Back to Southern food. Deep fried double Oreos are one of the many fried foods here in Huntsville, and Melt restaurant features them on their menu. Meat-and-Three restaurants feature a meat (usually fried pork chop, meatloaf, BBQ, fried catfish, country fried steak/chicken) and three sides (fried okra, creamed corn, mashed potatoes and gravy, baked potato, potato salad, cole slaw, French fries) and bread options such as cornbread, rolls, hush puppies. While Southern Cooking is absolutely delicious, I have to limit it because lets face it, it is high in calories and cholesterol. When I do indulge, it's shrimp and grits, pimento cheese, fried green tomatoes, and fried whole okra.

We arrived around 10:30 on a Wednesday morning and we were wrong to think that the place would be empty after an early breakfast rush. We were seating upon entering by Brooke who also was our server. The menu is varied and we found out that you can order anything at anytime. We had ordered the Spicy Pulled Pork omelette and Shrimp and Grits. Next time, we're thinking a Grouper sandwich as they were being enjoyed at two tables next to us and looked delicious. Our breakfast entrees arrived quickly. The omelette came with a choice of side and I chose the potatoes. They were seasoned but a bit cold and hard. Brooke offered to swap them out when checking on us, but by that time, I was filling up from the large packed omelette. It was filled with pork, peppers, onions and cheese with more spicy, sweet pork on top. I wish the entrees came with toast. The shrimp and grits were served over gouda grits as requested and the dish was spicy and filling. Definitely one of the best we tried in a while. I will say a $7 charge for a large chocolate milk that wasn't even that good of milk. Maybe we ordered poorly today. Our server was a 10/10.

It is everything you want from a classic Florida seafood dive. The restaurant sits in a spot you could probably drive past a hundred times and never give a second thought. It is tucked away enough that if you did not know it was there you might miss it completely. But once you stop in, you will be glad you did. The atmosphere is modest, casual, and clean. It feels like one of those small family owned meat and three restaurants you find all over the South. The only difference is this one specializes in seafood. The service is as sweet as the iced tea and the conversations with the staff flow just as easily. Everyone was friendly and welcoming in that genuine small town way. The food was outstanding. Simple, fresh, and absolutely delicious. The seafood was fried perfectly and seasoned just right. The fish was flaky and hot straight out of the fryer, and the fried shrimp were crisp and flavorful. Even the sides were great and tasted homemade. You can tell right away that the owners and staff genuinely care about what they do. Their pride in the food and the restaurant really shows in the quality of everything they serve. If you ever find yourself craving a big piece of fried fish or a basket of shrimp, Shannon and her crew will absolutely deliver. Tip: Do not let the outside fool you.
