I really like the tofu steak, the shredded tofu over rice noodles (with many vegetables), the crispy roasted chicken, the shaking beef, and the crispy vegetarian rolls. I like their pho as well, but the tofu steak is so delicious, I hardly ever deviate. I appreciate their tea options which are served in a pot. I usually get a pot of ban shan tea which is very calming. The space is neat and clean. The ambiance is created by the people more so than the decor. When you look around, people are just enjoying their food and each other. Those, like me, sitting solo, are eating our meals like it is satisfying more than physical hunger. I am truly grateful Saigon Spring and those who make it so special are here.

This one also has an assortment of ramen, noodle bowls and bubble teas. "Hawaii" is a chain with a remarkably large menu. I came in for poke but wound up with a rice noodle bowl, instead. Orders are placed at the counter just like a fast food joint but this isn't really fast food. Most of the food is actually made to order. The staff is really patient. They'll help you navigate the massive menu with many options. If you're dining in they'll bring your orders to your table. I picked thin rice noodles with spicy miso broth and pork belly. I also asked for most of the free toppings and the free hard boiled egg. The pork belly turned out to be a fatty cut. That was on me. Next time, I'll order BBQ pork l,instead. As for that "spicy" broth, they mean it. Next time, I'll also ask for a little less heat in my broth. Still, was a delicious meal which was prepared just for me. I added a large Lycee slushie to my order. It was pretty good but too large. I have to go medium next time. I couldn't finish the meal. I took it home and ate it again for breakfast the next day (I have a cast iron stomach and can eat spicy breakfasts). If this business is part of a chain where are the other restaurants? The manager said most are on Long Island. The Castleton restaurant is the only one in the Capital Region and the restaurant is largely a family-run operation. It's clean, bright, very modern and cute. There's cute wall art. Some illuminated. Others are wallpaper depicting food, pandas and the Chinese god of wealth. Others who came in after us got their orders before us too! The tofu stew was good but a bit disappointing in the lack of seafood in the dish. Seems like it was just dried seafood bits that were added to give the stew flavor. The Mandoo dumplings were fried and they came with a dumpling sauce. They were pretty good and we enjoyed those.
