    This restaurant wasn't my first choice...but perhaps it should have been. Initially I was turned off by the"drive thru"...thinking that I really wanted a sit down dinner and not something"fast-food"... Well, I was wrong. Yes there is a drive thru, and yes they sell donuts...but after entering, the most favorable smells of Vietnamese food engulfed me...ahh, wonderful. There are about 10 tables and tonight better than half were filled with patrons...young and older...enjoying those wonderful food creations that I smelled earlier. Quite the menu, but with some help from the young lady at the counter, I settled upon the pepper shrimp, Vietnamese egg roll, and a smaller bowl of beef pho. They do have many complete meals, but I went "a la carte"...maybe a little more expensive but this way I can have what I want and nothing extra mixed in. First to arrive was the pepper shrimp...steaming hot and very tasty. Up next came the Vietnamese egg roll...equally as tasty. Last up came the beef pho...not bad, but different...the beef had an odd look and was grizzly, and I do believe that it's the broth that decides success or failure, and while good it wasn't fantastic...I left most of the pho uneaten. All said and done...not bad, I would come back for sure...maybe try a few different entrees.

    I couldn't be more thankful for this place. Living in San Diego, we are spoiled with all different cultures of food. My sister moved to Colorado and is very pregnant right now. She had a huge craving for Vietnamese spring rolls but couldn't find one that would deliver as it was already 7pm. Mind you, I'm in San Diego so I can't just drive and bring her spring rolls so I called Kuan's Kitchen and they were able to whip up a couple orders of spring rolls along with chicken fried rice, veggie pad Thai and a cheeseburger (picky toddler) and deliver it to Mrs. Preggo and her family. They raved about how delicious it was and how full they were. Thank you Kuan's Kitchen for helping to fill my sister's belly with her craving and now being her go to place for Vietnamese food.

    Love Kuan's Kitchen!! Great tasty Food. Large variety! They also have Boba Smoothies, several flavors! Great all year around. I like to go through the drive thru, same great service! Plus, they have donutsfor your sweet tooth!

    Love the Pad Thai! Best in Pueblo. Their donuts are so fluffy, by far the best in Pueblo as well! Must stop if traveling thru the City!

It is by far not the best mongolian grill I've been to -- but I mean, there aren't that many of these things around, are there? Let's take this chronologically. I was excited to discover that this place existed as we were driving north on 25 to Denver and happened to be passing Pueblo around lunchtime. The fact that it's super accessible from the highway made it ideal. When we walked in, I almost walked out. The entire restaurant smelled like bathroom. Literally like I had walked into a bathroom. I have to assume that this is unusual. I was surprised people were actively eating. We wandered over to the food/ingredients line to see if our noses would adapt and to check out the situation. The food looked good. All the vegetables looked fresh, didn't see any wilting. The freeze-dried rolls of meat were still appropriately freeze dried and not melting into a pile of meat goo like at some places. Ok. Food - check. We got a table and came back to the food line. This place charges by size-of-bowl (I've seen some charge by weight or be AYCE) and you can tell the regulars because they KNOW how to fill a bowl. If your bowl is not overflowing to the point of nearly toppling over, you will not get back a full bowl of cooked food. I was only middling hungry so my mid-sized bowl merely heaped. I especially liked the sauce bar. Quite an extensive selection of sauces, with all the usual things plus some extras. I can imagine as a regular you could have a really good time exploring different combinations. Alas, not for me as it's unlikely we'll find our way out here again anytime soon. The food was good. The service was good. If the eating-in-a-bathroom thing weren't so distracting, I'd be saying four stars.

However, I kind of felt like the food was not fresh. For the most part, everything was frozen. In fact, a lot of the vegetables were sitting in ice water. I also got the taro boba smoothie and I absolutely loved it! The restaurant itself is kind of worn down. It kind of felt unclean. But I don't think it's a deal breaker. Ultimately, the flavor of the food is what is bringing me back. Other than that I'm not too impressed.

I'm sure this place becomes lively when there is a party and people take to their singing skills. But on this regular Saturday afternoon, it was not even half filled. Customers have a choice of ordering regular Vietnamese fares or be seated at a hot pot table to enjoy cooking your own food. One nice thing about The Hot Spot is that we weren't limited to 90 min or 2 hours. Could be because it was during a slow time. Food wise it was far from an elaborate hot pot experience. The broths don't have distinctive flavors from one another and there lacks a sauce station! Which is a signature hot pot spot! The meats, when brought out, especially the beef slices, tend to be on the darker hue, to me that signals less fresh. And the booth seats aren't the most comfortable. I think they make shift to turn the booth tables into hot pot compatible where the outlets are in the way of your knees (if you're tall and have long legs) or if short like me, the seats feel sunken. All in all, it was still a fun experience for AYCE hot pot, especially when not under time pressure and the staff is friendly albeit not the fastest.

I stumbled upon Viet's on a whim during a rough patch at work in the Springs and let me tell you, it became my go-to self-care spot. The #58 (pho tai gau sach) is life-changing, and actually the only pho restaurant I've been to that offers this meat combo. The broth is so rich and flavorful it tastes like it's been simmering since the dawn of time. It's hearty, healing, and everything you need on any day, good or bad.
