Finally found this truck again. Last year we came to the location after sunset and didn't come down from the car and inspected the entire area, so we missed the truck. This year, we came during the day right after landing. I called in my orders so I knew they are open. Upon arriving at the address, we didn't spot the truck immediately. Luckily my son and husband had the sense to checkout the area and they found it nestled in the back corner of a building, fully shaded. Anyways, the crispy pork is as good as we remembered. It's real hard to find Filipino food where I live so we had to get some food here. I had the grilled pompano, which took a while because they grilled it to order, but MAN it was SO GOOD. Flakey and crispy with that addicting smokey grill flavor. Paired with the fresh tomato and onion, it was a cycle of delicious-ness. Bite of grilled fish, bite of fresh tomato/onion, rinse & repeat. Add in a bite of rice to reset. My aunt got the crispy pork belly loco moco. The gravy goes real well with the lechon kawali, but it IS a really heavy meal. We had a late breakfast, so ordered an entre to share. The Crispy Pork Belly with Mushrooms, Onions and Gravy was a unanimous choice. With no other customers, it took quite a while to prepare, but okay, we had some time to kill. The Pork Belly looked terrific, with plenty of onions and shrooms covered in brown gravy. Two scoops or rice were included. We asked for and were given a small cup of shoyu for the rice. Glad to see that there was a waxed paper sheet between the food and the container to help keep it from soaking through. We left with the food to enjoy at a beach park with a better view. The pork belly, shrooms, onions and gravy were really delicious. It was disappointing that some of the pork had a rubbery outer layer that I would think is skin. Later, this pork belly dish went through my belly very quickly. I'm glad that I got a good scoop of rice, but it didn't slow down the process. I know, TMI. Whatta joy! My spouse and I was on a mission to find some delicious lechon and yes, it's here! Tucked away in a not-so-easy to find parking lot but we followed the directions from google and only needed to back track a bit. Crispy greatness on the outside...crunch factor with every bite! Here's my greatest hack.. I dipped my lechon in the Thai sweet chili sauce (got it with the lumpia) and man, delicious.! The lumpia was also good but I am still mesmerized by the lechon. If you don't snag a spot at one of the few picnic tables, I recommend enjoying your Jayboy plates at the beach nom nom nom. *One thing to note was that we had visited this food truck pod a number of times during our stays in Maui in hopes to try Jayboy's, and despite going during "open" hours, we would find that it was closed (this is often common with other food trucks in Maui as well). This trial and error did not stop us though! We persisted. We happened to get lucky when we showed up on a late Saturday afternoon, and it was open!
