After a long travel day we finally made it to our hotel in Silverthorn, which conveniently had Kúcu Tequila Bistro in the lobby. We were able to get a table quickly, only waiting about 10 minutes on a Friday night. The elote dip was really good- it was lighter than others I've had and the lime really came through, and was not full of cheese like others. The chips were sprinkled with tajin which was a delicious touch! My partner and I each got a taco platter- me the blackened shrimp and him the mahi mahi. We also ordered a snow lodge margarita and one of their local drafts. Everything was really really good. Would absolutely recommend Kúcu if you are in the area, and they have a great happy hour if you're around early evening ($5 marg or $19 pitcher!!). Best tacos we have EVER had! We got their bison tacos and holy cow! They were generous with the amount of meat, had several flavors within the taco, and it was cooked perfectly. We went for happy hour which was a much more reasonable price point ($6 for each bison tacos, $19 margarita pitcher, $10 eloté corn dip). It lasts until 5pm! It gets pricey if you go after that. The service was friendly and attentive. The restaurant atmosphere was clean and sleek with a southwestern flare. Can't wait to be back when we visit Silverthorne! read more

Hubby and I stopped in here for happy hour and an early dinner and were pleasantly surprised. Happy hour every day from 3-5pm, WOW! We shared a pitcher of margaritas and that's all we needed for alcohol! Those bad boys were strong and tasty! We then ordered some happy hour appetizers (elito dip and the short rib birrira tacos)- HOLY COW!! They knocked it out of the park with flavor, especially in the tacos. We then each ordered an entree- bison burger and the cheesesteak with chili lime fries. The cheesesteak was made with the same meat as the tacos- YUM! We headed in here for our final dinner of our stay after drooling over the menu for a bit. We sat at the bar where we were immediately greeted and handed drink menus. The margaritas were delicious, albeit pricey, but we ended up getting two each since it was our last evening in town. I visited Kucu twice. The first time we went in for happy hour based on a recommendation from someone at one of our normal hangouts. The second time was to try their breakfast. The bartender the first time was not very attentive, nor was he very friendly. Just kind of a little below middle of the road service. The service at breakfast was some of the worst that I can remember. Very unfriendly. very inattentive. never a smile, a please, a thank you. I handed her the check to pay, when she brought it back, she put it on the table away from me. I don't know her name as she never gave it to us. She was so clearly unhappy I can not understand why she works in a customer facing role. At happy hour there were 2 other people at the bar, and maybe 2 tables sat. At breakfast there was one other 2 top and us. So basically, dead both times. No excuse of it being busy to "justify" bad service. Happy Hour: The food is expensive for what you get. It was however pretty tasty. We tried the wings, elote dip, the taco of the week, and the birria bison taco. Both tacos were pretty delicious and relatively loaded with meat, but they are incredibly small (think small street taco). On happy hour they are $6 each. At dinner it is like $18 for 2 of them but they give you some rice and beans. The wings were good but again, for the money this is not the place to go. there are far better options around Summit County. The elote dip was good. The margaritas were very good. Breakfast was horrible. Obviously, it started off great with the outstanding server.... That said, the food was garbage. The coffee was bland and cold. I had the biscuits and gravy. Asked for basted eggs, which the server returned to let me know they don't know what that is. Not a big deal, sunny it is. Problem is the biscuits taste store bought and the gravy seemed like it came from a jar. They were kind enough to cook the crap out of the chorizo that goes on top for me. Others ordered the Kucu benedict. Eggs were overcooked on both orders. Asked them to re make the eggs. They came out even more over cooked. The bison is tasty as it's the same stuff from the tacos. The potatoes were not seasoned well, nor were they cooked well. slightly raw tasting. The single pancake I ordered was fine, but it was $5. As a local I was really hoping Kucu would be good, but it's not. I gave 2 stars because the items we had at happy hour tasted pretty good. Everything else was terrible. Just go literally anywhere else. DO NOT JUST GO HERE BECAUSE IT IS IN THE HOTEL! Walk over to bluebird, or literally anywhere else. read more

It is attached to the indigo hotel so be mindful of that when looking for parking there was a garage across the street with plenty of space. We had been looking forward to trying Kucu for a good while. I'll start my review with a few disclaimers. 1) I would never place unfair scrutiny on service when its a new restaurant, but this place is a year old and way past the point of novelty. 2) If it so happens to be the case that kucu was understaffed they should have known better than to pack the restaurant to max capacity. We came for dinner on a fri night. Beginning of the meal was pretty textbook. We ordered chips/salsa and ceviche and got drinks. The waitress said she would space the apps/entrees out. So we also ordered our respective tacos. Then we waited. And waited. And waited. Finally 30 or so min later a waiter brought ceviche but to the wrong table. Then he picked the misplaced app up and brought it to our table. The ceviche was just cooked shrimp in lime juice with veges. Not very good. Still no chips and salsa at this point. Then the chips and salsa came 15 min later, and a set of tacos came almost immediately. So much for spacing the food out. Strangely enough only one plate of tacos came at first. Then we waited some more. It was very awkward with one order of tacos and everyone else had no food. Eventually the tacos got cold. No other entrees came. We realized someone elses food had been brought to our table. Finally when other food started to come it was cold. Like cold steak and severely cold hard undercooked rice. We had to flag the waitress down, who appeared to be the only person really hustling in the restaurant, to get us all fresh food. She literally went back jnto the kitchen herself to get the food. Bless her soul. At one point someone clearing spent dishes took my fork. We couldn't find anyone to get us a new one. So my wife and I had to share a knife, taking turns eating rice and beans. The tortillas were so cold they fell apart and the meal dropped out the bottom. One of my tacos had a quarter lime in the bottom of it which I didn't know and so i ended up eating a quarter of a lime rind and all. The beans were incredibly salty and the rice like hard cold al dente nuggets of pasta. Honestly the meal was a disaster. I get it. Things can be crazy. But it was a normal fri night. And they packed the establishment to the gills. Finally after we paid they dropped the check and credit card off at the wrong table. They also didn't comp any of the meal or drinks or make any effort to reconcile the issue. No manager talked to us or anything. Needless to say we will definitely not be returning. I can go down to carniceria la perla for a far tastier meal at one tenth the price. read more

The highlight of the time was the service. Cody was one of three bartenders that we loved just hanging out and watching the game with. He was training Martin who was pretty much then most attentive server I've ever met - he is going to be awesome. And Kelly was super helpful and friendly. Informed him I wanted a spicy margarita and he made the most delicious mexicalita! I enjoyed it so much I went back w the girls Saturday evening and was served by Jacob. Again, nice guy! Described the margarita from the day before (because I didn't get the name of it) and he made it perfectly. Both bartenders were very attentive and good humored. I honestly figured for a hotel bar it was going to be meh but that is not the case with Kucu! The restaurant itself is very nice, lighting is great. Bar seats are always open. Our server with the leg cast, rarely checked in on us and looked super high when we interacted with him. Prior to him our server was the guy with the pony tail, he was attentive so good on him. *************** Same exact menu as Quandary Tequila Bistro, go there instead. If you want authentic tequila drinks check out Nuevo Vallarta restaurant just 5 minutes away, better food better drinks hands down.
