For those who wrote that the steaks here are harder to chew and/or has a lot of gristle, the description is accurate, but judged from a different perspective. Most who wrote those descriptions in their reviews are comparing these steaks with the steaks back in the USA, that are usually corn or grain fed and has higher marbled fat content. The steaks served here, are grass fed, which tend to be leaner and somewhat tougher to chew, but has a deeper flavor once you get past the texture. I gotta say, they make a pretty good steak here. They keep the flavors simple with butter and salt. I got the sirloin and thoroughly enjoyed my steak. The peeled scallions that accompanied the steak was absolutely delicious and the side dish I got (forgot what it was called) looks like mashed potatoes, but had a unique chewy texture was absolutely tasty. Paid a total of 45 € for the meal including beer. Take into account this place is open 24 hours, it a win in my book. Definitely plan to visit this place again! read more

Mediocre at best. Bone marrow is roasted slowed, but still maintains firmness to avoid being an open gooey mess. While the cook is great, the flavoring could've been more in your face -- almost too subtle. Pull marrow indulgence - I enjoyed it a lot, but the lack of main entree that dazzles drops this place to a 2 star. Steak... STOP! Don't order it! To start off with, we have been in France, Paris, and Bordeaux for a few weeks and enjoying the wonderful food and people - tonight's restaurant experience was our only bad night. The place is "ok" nice, not the nicest looking .... But that's ok. We have been eating mostly seafood and we really wanted a great steak. The punchline - for over $100 euros we shared a rib steak, and it was the toughest - leather hard steak had ever had. Happy to pay the most for delicious, but we could not even chew or swallow the meat. Unfortunately they were out of their dry aged meat, odd - it was only 9:30? The worst part is the waitress/server was about the meanest most argumentative person who has ever served us. We are a very well travelled happy grateful couple and know food and wine from all over the world. Instead of apologizing - she yelled at me for ordering the wrong meat. Quality rib steak should be well marbled, tender and flavorful. The flavor was good, but it was so inedibly tough and chewy. We also sat for about 45 minutes with empty glasses, wanting wine - no one saw our empty glasses and asked to refill our wine - the wine by the glass was actually delicious, we just wished they offered us a second glass (they did after we told them about the steak much much later). No manager came to talk to us, we waited a and waited and waited and just sat there with an tough leather steak and no wine. Also, the server talked us into this huge "for 2" rib steak after we really tried to order "one" regular steak to share, but she pretty much shamed us, like we were wimpy eaters. She shamed us to go big, so we listened to her - bad mistake, it was huge for maybe 4, either way it was inedibly tough. If she had been kind it would have been better, but she was mean, and again, no manager cared to ask or apologize. She did offer a replacement steak - but after waiting about an hour, empty wine, and being berated and shamed, we just wanted our check to go elsewhere and get out. I'm sure it's a great place - the server made the night horrible .... At the end of the day, we LOVE Paris and France and all its wonderful people, food, and sights ... one bad night didn't ruin our trip. I hope they train this person to care and just "be nice" with attentive caring "service". If we had been offered a quick offer of something else with care and attention vs a horrible mean attitude ... and not making us wait forever - she could have saved the night. I wish them the best, I'm sure it's a great place - but that steak and horribly argumentative server ruined our night. *I almost always give rave great reviews, this is a rare honest bad one. It was bad. **At the end of the day, it's really all about "people". If this young lady had checked on us earlier, cared, been attentive, and/or sent a manager over to care about the customer all could have/probably would have been avoided. We order their most expensive steak available, their most expensive red wine by the glass (it was great), but If she just had said, "I'm so sorry the steak is not to your liking, may I offer you a replacement with our most tender and flavorful steak ... I am happy to do that, we want you to have a great steak" ... I probably would be giving a raving 5 Star review about how caring the people were and how great our steak ended up being, ultimately ... she did offer a replacement, but after making us feel terrible, being disrespectful and co descending .... Dinner here was tasty but slightly below the expectations we walked in with. My filet was very good but my date's aged steak was not so great and rather stringy. Pommes Sautee were delicious! I wanted a REAL American tasting hamburger, thick and juicy, cooked medium to medium rare. Not Frenchified. Not bland. (I love Joe Allen's, but their hamburger is okay-not super great.) Like one I might get in a great local dive, where the cook knows his you-know-what and could do it falling off a log backwards. La Maison de l'Aubrac delivered. Great burger! Great fries! Came here with my dad, and we both enjoyed our meals. He got a big, juicy steak and devoured it. I tried to be all French and got some red wine, foie gras and a french onion soup. All three items were amazing. I love pretty much any red wine, but the french onion soup was probably the best I have ever had, and the foie gras was great. I loved the jam/confit pile it came with. I felt really classy eating it. The atmosphere was inviting and cute, though there were a lot of tourists and it was a little loud. Still no complaints. Service was attentive though snippy. This place is known for the steak but if I was judging it on the steak alone it would alone have 1 star. I was NOT impressed. It was chewy and dry, but I had a cheap cut so maybe that's why. Had lunch here yesterday on the recommendation of a friend who now lives in Paris. It's situated in the smarter part of the city, nestled among designer shops and other restaurants filled with pretty people. It feels very authentic with a Swiss influence judging by all the wooden dividers. The diners were a mix of business people and local families. The service was efficient but a little serious - a problem you often find with Parisienne waiting staff - they don't smile very much! The food was good though. A starter of Risotto with scallops in a shell fish sauce was rich, creamy and first class. Duck with herb mash, veal with Dauphinoise, Beef stew, and a great quality burger - all went down well too, accompanied by a Bourgogne Aligote. A selection of desserts were a bit hit and miss - some great, some gloopey and overpoweringly sweet - but all in all a nice lunch. Bill came to 170.00 euros for 4 which included 1 bottle of wine. Busy sunday night, by 9pm it's the place to be. Very loud place but good steaks! Comprehensive wine list but most of them are overpriced (over 100 euros). I had the piece du boucher with pommes sautées and salad and it was very good. The garlic roasted potatoes were the highlight. My friend got the parmentier with macaroni gratin and it was good as well. Portions are good, prices are affordable (except for the wine) and service is quick and polite. Love this restaurant. I just recently moved to Paris and this is a place I come to often when I'm in the mood for a good steak. They just renovated it so it's a lot more up to date then it was last year. The staff is very helpful. The food is delicious. Did I mention it's open until 1am? Which is not common in France. English menus are always on hand and most the staff speaks English so if you are a tourist this place is probably going to be good for you. read more

Great experience at l'aubrac. Started with goat cheese salad (wonderful) and foie gras (good, would have been amazing if slightly warm). Shared burger with cheese and aligot (cheese with potato), burger was amazing. Wow. The Organic beef from Aubrac is special and makes eating a burger while in Paris worthwhile. Burger was 24 euros, but worth every penny. They appear to have a cafe next to the restaurant and burger might be less there. Worth investigation. Interesting that burger better in Paris than Los Angeles, would've lost that bet. read more

Gorgeously cooked, tender, quality beef with nothing but a bit of rock salt. And those garlicky sauteed potatoes... But assuming you do, The Prime rib steaks were cooked wonderfully and well seasoned, aged 21 days...tender. I like my meat slightly rarer than medium rare so was perfect. Its a little rarer than one gets in the US, so bear in mind. The potato side dish was much more refined than any Mac and cheese I've had before, even lobster MNC. Might be good for locals but I felt very unwelcome with my broken French. I'm pretty sure I was being mocked by another waiter and his table when I ordered a glass of wine from the wine menu. Overall service was terrible. No water was brought at all during my 90 minute stay. Bread was brought at same time as food. No check-in while I was eating and the check took forever to arrive. For the appearance of a steak house and the aged meat at the entrance one would think they would know how to cook some meat. Ordered my cut medium rare. It came out medium rare but I think it was cooked on a 600 degree grill. Outer ring was so tough and chewy and center was straight raw. It was an average sirloin so there was no reason for this. The blunt piece of steel they provided as the 'steak knife' had trouble cutting through the fried potatoes let alone the leather steak. This place is a joke. Awful service. Terrible food. We walked in at 9:30 pm without a reservation to a packed place much to our surprise but they were able to seat us. People were still being seated after 10 pm for dinner!! We didn't have a full blown meal, only entrees but WOW!! Filet and rump steak both extremely tender and delicious- rump steak!! Bearnaise sauce was top notch. And ALICOT potatoes were to die for. So much cheese that they were stringy!!! Couldn't even finish between the two of us! A lesson learned: don't always go by the number of stars a restaurant receives! read more

First eat upstairs such a nice ambiance. We had the hotel make reservations and walked from our hotel. They offered a most impressive wine list from what I would pay to some wines that went for $3000 a bottle if that is your thing. I got a half bottle for myself and husband had a large Heineken. We started with escargots and how delicious it was. The snails were cooked perfectly and they served it with the toast sticks that made it easy to get the rest of the savory juice out. My husband got the rib eye that was aged to perfection. The spread that came with the steak was an added compliment. My husband loves coriander and the baked shallots were a good addition. He got the aligot side which I have to say was a must mashed potatoes with cheese wow!!! It came in it's own mini tin that we both each got and could not finish. I got a smaller portion steak and still could not finish it. My steak I got medium and how delicious. Together our bill came 120 euros . Worth every penny. We came across this meat-centered bistro in mid afternoon on a Saturday. This is a tourist area, and we had no high expectations about our lunch, and just wanted a quick bite and glass of wine. It turned out to be a two hour feast with three courses and a bottle of excellent red from the Luberon. AOC. The staff could not have been more friendly, and the young som was very friendly and helpful. The onglet (hanger steak called the "undercut" on the menu) was delicious. Our tomato salad and the roasted bones with marrow were delicious appetizers. We also tried the ribs, which were perfectly made and well seasoned. The restaurant prides itself on beef in all its glorious forms, but the real show-stopper is the tartare de boeuf served with pommes sautées. Although 20€ may seem steep for a raw dish, the portion is generous and the juiciness of the meat is positively mouth-watering. I recommend exchanging the pommes sautées for pommes frites to mix some crispiness into the softness of the tartare. If ordering steak tartare seems like too much of a commitment, order the trilogie de boeuf for 24€ which features a grilled filet, a salade de boeuf, and a smaller portion of the tartare all with a side of béarnaise sauce to be drizzled at your discretion, or indiscretion as the case may be. They didn't apologize for the slow food when they finally served. The food itself was also very disappointing, we ordered salmon tartar as started and the salmon tasted really old.
