Stopped at this butchery to get a few things and asked if they could make an old family recipe of sausage. This was a special tradition my family had every Christmas and the owner said he could make it. He had a recipe for the Swedish sausage and will have it ready in a few days. We are pretty excited about it. This store carries beautiful cuts of meats and seafood along with many other goodies to go. They are very helpful and nice and the quality of the meat is outstandingly delicious. They also sell wine and beautiful cutting boards if you are looking for some gift ideas. read more

Some faves of late: bone-in pork chops are so perfect; Italian sausage made in-house is better than any grocer around by far; Scottish salmon was sushi quality; taleggio & salumi for charcuterie was amazing on NYE for our guests; and last but not least - they hooked me up with some Bistecca alla Fiorentina (t-bones for people who love Firenze!) for our family Christmas and let's just say it was a big hit. Bonus: if you're a fan of Pasta & Provisions in CLT, you can snag some of their fresh made gnocchi, ravioli, linguini, and other pastas and sauces right here at the LKN butchery. I had never heard of this place despite them being in business for a couple years. All the sudden though they were featured in a local news report about the higher prices of beef and such and the weekend following, I made my first visit. We'll just say, "good call". The folks running and working at the place are knowledgeable, skilled butchers and there is a case full of various cuts of beef, pork, poultry, lamb, sausages. Want to drop $450 on some A-5 Japanese Wagyu? They got you covered. Just a pound of freshly ground beef? Yup. They've hooked me up with a 3lb tied chuck that I smoked for 8 hours for pulled beef sandwiches, called ahead on another day and they had 6 lbs of chicken backs held for me so I could make a batch of stock. Today just ordered a whole tenderloin to pick up next week for Christmas Eve dinner. I wanted it trimmed and tied with the chain and other trimmings saved so I can use for a red wine sauce to go with the beef. No problem. There's also a decent selection of fresh seafood, lots of specialty premade items and meats, both fresh and frozen. Nice wine's, various spices and sauces, a few staples like potatoes and onions. This place is amazing!! My first time in, the guy was so very friendly, patient and kind. He had excellent recommendations and was very helpful with all my questions. Now to the quality of the products...... can I just say this place is phenomenal! I come from a place that even the grocery stores have high quality meat. Since moving to NC, I don't find that to be the case at all at any of the stores and I've been to them all! I bought some filets (and many other cuts and chicken) from here and you could cut them with a fork they were so tender. I went here looking for lamb. They did not disappoint. I found a rack of lamb and they actually cut and wrapped it for me. This is a high quality Butchery. The bone-in cowboy ribeye was a top grade Choice at $18/lb. it was a 2" cut at 2.02lbs. Cooked in a cast iron skillet to med-rare it literally could be cut with a fork. The marbling was intense and the flavor incredible. You always get what you pay for and I will return many times. Bryce sold me some Prime NY strips cut 1.25 inches thick; which I'm told, is the perfect thickness for NY Strip steaks. He also told me to sear them in my iron skillet and oven finish to the appropriate doneness. They turned out great, so I'm not going back to my Big Green Egg for cooking steaks. I have had their Crab Cakes which were worth every penny (several repeat purchases of Crab Cakes). One of the advantages of the Butchery is that they cut the steaks to your specifications as you watch. Whereas, the grocery stores have everything pre-packed.
