Came in for happy hour and it honestly exceeded expectations. The drink deals are legit, not watered down or skimpy, just solid cocktails at a really good price. It's one of those places where you don't feel like you're sacrificing quality just because it's discounted. The happy hour menu itself is a win too. Great variety, everything came out quick, and the portions were better than most places offering "deals." You can actually make a full meal out of it without spending much. We came in yesterday for Father's Day and were immediately seated, party of two adults and two kids. Place was not busy at all, so we were very surprised and disappointed that food took almost 40 minutes to come out. Ordered margaritas from the happy hour menu since we got there about 10 minutes before the end of happy hour. Margaritas felt off, tasted more like watered down lemonade and a hint of tequila. When the food finally came out, we were disappointed. The beans were simply a watery black bean sauce than actual beans. Kids tacos were simply a flour tortilla with chunks of cold steak meat. For a $90+ dinner, the experience didn't match the price, particularly given the delayed food service and average food. I have made my last attempt to try to go to Las Calaveras in Meridian. So very, very disappointed. We have tried three times recently and even tried one other time via phone (for a reservation) to go there. I understand when certain UPSCALE restaurants have reservation policies and also certain smaller restaurants. Tonight was our fourth attempt. As you can see from the attached picture we tried to make a reservation and the screenshot says, "0 minutes. There is currently no wait, come on by!" We also tried to call to make sure while on the way and got a message that the voicemail box was full. We "came on by". The patio was at half capacity. The restaurant was at half capacity. No one was waiting in line. It was 7:30 pm. We were again turned away because we didn't have a reservation. I showed the gal at the front this attached screenshot. She didn't seem to care. I'm sorry to say...we really liked this place when it first opened. We have been quite a few times. I can tell you that my husband will never step foot in there again. Tonight was incredibly silly. Fix the website. Fix your phone. Restaurants are a dime a dozen. You're only in that spot because another restaurant went out of business! I will never, ever recommend you again. Yes! Finally a Mexican place in the Boise area that I can rate 5-stars. This is no "Sysco Mexican" place where sitting down means you get a basket of chips and saucers of jar salsa and pinto-lard puree. You can taste the Oaxacan and Tex-Mex origins of the food. I prefer Oaxacan over Tex-Mex. Flavorful, with depth, and leaves you wanting to come back. Service was decent as it was busy. The ambiance is more of a modern restaurant than a tacky Tijuana vomit vest. The dia de los meurtos vibe is pretty cool. Ceviche was fresh and flavorful. While I like a little white fish in it as well, their ceviche was the best I've had since spending time down in the Yucatan. The freshly prepared tortilla chips are crisp and built to scoop. Their regular salsa is very good as well. Personal taste, but I would like a little more roast on the peppers for a deeper flavor. You know, like you get when peppers are directly placed on hot coals to roast. The birria flautas were crispy and the meat was spot on in terms of flavor and perfectly cooked pork. I had a couple bites of the surf and turf tacos - bam! So good. Their home cooked churros with the churro fried ice cream were absolutely perfect. For my Galentines with my friends, we decided to hit up Las Calaveras. We have been to quite a few spots in Boise for our monthly outings so we wanted to check out something in Meridian. I have heard nothing but great things about this joint so I was hyped to come here. I arrived at 4:30 and it was pretty chill. There were a few tables already enjoying happy hour and some patrons at the bar. I knew I was going to have a great experience at this joint cause it was already semi busy this early in the evening. Kayla greeted me while I was looking over the menu. I ordered a Coke zero and chilled till my friends showed up. What I appreciate about the menu here is that it's reasonably priced. For a joint in downtown Meridian, they totally could have set a high price point. Tacos at 4 bucks. Tapas ranging around 5 or so. Happy hour prices were legit too. We wanted start off with some flautas and crispy jalapenos as an appetizer. I ordered a cup of their chicken tortilla soup with sour cream and avocado. I also got 2 orders of shrimp and chorizo Tapas to share with my friends. The flautas are so good! The tortilla was crispy and airy. The chicken in the inside was flavorful and tender. It was topped with all sorts of goodies and creama. The jalapeno appetizer was creamy and spicy. You can taste the salty bits of bacon. The cream cheese did help tame the heat of the jalapenos. They didn't hold back of the jalapenos, they were prominent. Those 2 appetizers are a must have! Our second round of food came and everyone's food looked fabulous! My soup had a generous amount of sour cream and avocado in top. There were hearty pieces of chicken, tomatoes and tortilla strips in every bite. The broth was savory and rich with a slight kick. The skewers I got had good sized shrimp and chorizo. It was topped with creama and cojita. I shared a couple with my friend and had a couple myself. They weren't shy with the portion of the shrimp and chorizo. I was so full from the soup, a couple skewers and our appetizers. I took the rest home to my daughter and she really enjoyed them as well. Las Calaveras has one of the dopest vibes to it. The music, the decor, the atmosphere, it's perfection. The venue is stunning, the food is hella good and the staff is super nice. I took my daughter to a similar themed restaurant for her birthday in Eagle and left so disappointed. I should have brought her here! We would have had a better experience at half the cost. By the time we left, the restaurant was packed. Packed on a Tuesday night. I can see why it was so busy! Las Calaveras hits the mark. They are fantastic and the crowd proves it. I knew the second it came out that it was going to be water with a hint of tea. Queso is split. Oil on the top. When stirred, the texture is that of cheese soup and it's doesn't have a strong cheese flavor. If Cream of Cheese was a thing this would be it. We ordered it as a dip and unfortunately we ordered the burritos smothered in it before trying it. Entrees were nothing to write home about. My husband and I were anxious to try this New Mexican Restaurant called "Las Calaveras" in downtown Meridian. We arrived around 1pm and got a nice booth near the front. I had the Huckleberry Margarita and it was really good. We ordered the chips & guacamole and the guacamole definitely had a little heat to it. Again, delicious and the chips were the crispy thick ones. We shared the Combo Fajitas and I wish the corn/flour tortillas were the next size up. They were the really small ones therefore it was hard to put all the toppings on the shell. Hopefully they read this and take the steps to buy the next size. We arrived during happy hour so each of us had a half price margarita (which were very tart, a bit too much lime dominant), chips & salsa and chips & guacamole for starters. The homemade chips were very good. My wife had the tortilla soup which was good but too spicy for her. I had the pollo lindo taco which was one of the best tacos I've ever eaten. Wonderful flavors with a pineapple pico that blended perfectly. Such a depth of flavor, delicious. Found this place through yelp. Ive been to the Meridian/Nampa/Boise area about 9 times during the past five years. The challenge is finding good or at this point just something other than fries and deep fried food or burgers. Went to Las Calaveras and struck GOLD!!!! Very clean, nice decorations and modern.. not like a mom/pop taqueria( nothing wrong with this ) im just trying to set the mood. Great drinks and we loved the happy hour deals! Our favorite were the steak/shrimp tacos. Delicious!! Great salsa! Nice warm home made chips i believe. Super friendly staff! Quick service, clean restrooms and plenty of parking... its so good we went back the next day lol... they will know now who we are.. delicious and will now make it a destination to go eat when in town. This was my second time here. Very different experience from the first. They have very obnoxious live music on Fridays. Maybe some people like this but this guy has an electric keyboard that he carries and goes and stands at each table whether it's welcomed or not. It was extremely loud. Our server was nice but her follow through wasn't there. She ask if we wanted more chips and then never brought them. She ask if I wanted another glass of wine and the brought me a red when I was drinking white. She never refilled my husband soda or water. The surf and turf tacos were really good! The caso was barely warm and bland. The shrimp and chorizo appetizer was nicely done. The prawn taquitos sounded like a good idea but they were definitely over cooked. This place wasn't bad at all. We did come for lunch so it was a quick seat and we got our food pretty quickly. We got there at about 1 or so and it was still brunch. I do have to say, the brunch menu looks great, but there needs to be some sides with them. Potatoes or something. For lunch we both got three tacos for $3 each and added on a side. The corn ribs. Super yummy. The poblano taco has a nice kick to it. Steak needs some more seasoning. The chips and salsa flight were really great. The chips are a tad too thick. We ordered salsa verde, queso, and the cilantro sauce. I ordered a Mexican hot chocolate. I do not recommend getting that. You can tell it was made with straight water. There is a new Mexican restaurant in town. I consider myself a connoisseur of Mexican food. Or maybe you would call it a Mexican restaurant snob, depending on your point of view. I'm from Texas, so I've been looking for good Mexican food here in the Treasure Valley for 25 years. Up until recently, there was no such thing. The one my wife and I discovered today is called Las Calaveras. I had the fajitas. In all my Mexican food travels, this is the first place to serve me more meat than veggies. For me, this is a dream come true. The chicken and the beef are smoky, flavorful, and not overcooked--one of the best fajitas I have had in Idaho thus far. One note here is the tortillas. They looked and tasted homemade, but for me, they need work. They are too hard, so I couldn't get a good roll going to eat them. They also didnt have a very good flavor. I also prefer them softer. The other odd thing is that they only serve you 3. There small, so I had to ask for more. When the server brought them out, guess how many came? Again, just 3. Who came up with this magic number for tortillas to serve with fajitas? I wanted more tortillas, but I got tired of asking the server to keep bringing them. It would have been nice if they asked me how many I wanted. The other odd thing to note is that the chips and salsa here aren't free like they are at other Mexican Restaurants. No idea why. Chips and Salsa are very cheap, so they should be free like every other Mexican restaurant. For me, this is a huge problem I loved everything else, so, as much as it pains me to do so, I had no choice but to deduct 2 stars because of these issues. My wife had Nachos. The chips looked and tasted homemade. They are crispy enough to stand up to the toppings, which is so often not the case. The serving size wasnt large, but it was enough for my wife. They look busy, but nothing gets done. This is a problem with direction from either management or training. We had an assortment of happy hour items. Loved the carne asada & shrimp (Surf & turf) tacos. Loved the pollo lindo taco - huge and very tasty. Had the grilled halloumi cheese and proscuitto tapas - salty, but really good. The shrimp Chorizo skewers were tasty. The Carne Molino was hamburger meat, blah. The tajin corn ribs were outstanding. Lots of flavors and sauces here. Not boring or commonplace. This place deserves another visit and it will get one Beautiful interior, lots of skulls (calaveras) all done up with a day of the dead theme. Nice, very nice. Lots of free street parking and a free lot behind the building. This is friendly downtown Meridian not the s-hole downtown Boise. Try this place. Your taste buds will thank you. We stopped in for the first time tonight for dinner. The service was great and the food was amazing. The guac and chips were beyond good. Fresh and crispy home made chips and guacamole that was bursting with flavor without being Spicy hot. I had the "Surf and Turf" Tacos which had delicious and tender Carne Asada and flavorful and not overcooked shrimp. My wife had the smash burger which she enjoyed a lot. Staff was friendly and efficient. Our order was taken promptly and our food was delivered within a time frame you would expect. Waited 45 min to be seated which is normal, but then had to wait another hour to just get our flat of dips and drinks. 2 hours into it we still didn't get out entrees and our server, which was lovely, informed us that there were issues in the kitchen and recommended us taking our food to go! We heard good things about this place. We had dinner reservations someplace else, so we decided to stop at Calaberas for a quick drink since they advertised a full bar. This was on 04/03/2026 at about 5 PM. When we got to Calaveras the place was fairly empty and the hostess was busy seating somebody else, so we went straight to the bar and sat at one of the two high bar stools with tall table in the back right next to the empty bar. Normally these high bar stools are assumed to be part of the bar, so we simply sat down there assuming that we would be ok here just for drinks only. The hostess ran over to us and without saying welcome to Calaveras and scolded us for sitting down without waiting for her. Her name was Abby. She said in a stern voice that next time you need to wait for the hostess to be seated. I told her (also in a stern voice) that we only wanted drinks and assumed these chairs and table were part of the bar, which do not require a reservation. Again, keep in mind that the place was fairly empty. She then told us it was "ok to stay there this time" and that she would call the waitress for us . Thankfully the waitress was very nice, and the drinks we ordered were delicious. We had already finished our drinks and paid our bill with the waitress and when we were getting ready to leave the hostess came over to us again and said that she "had a reservation for our table in 15 mins". This was completely unnecessary, the audacity to rush us out of there... I told her that if she had checked with our waitress first she would have known that we were already on our way out. Went for dinner on a Friday evening. Got there in time to enjoy the last 30 mins of Happy Hour. We ordered the chips and dip trio. Loved the freshly made chips and all of the dips were very good. We really loved the smokey salsa! Service was pretty good, but after our first round of drinks our server kind of disappeared for a while and our glasses remained empty for a while. The same margarita I got for $7 during happy hour jumped to $14 after. I have no problem paying more, but it was not worth double the cost. Our dinners were just ok. Very expensive for what we got. My husband got the steak fajitas and the amount of steak, peppers and onions looked like a very small appetizer. For $22! It did come with rice and beans. The beans were actually mashed black beans and we both agreed that was a nice change from regular refried beans. But it seems like that was the only option. Something to be aware of. I got what the menu called "chicken poblano enchiladas". It was one enchilada, but it was a good-sized portion. It wasn't bad by any means, but nothing about it was memorable. The decor is really cool and it's in a great location. We were lucky enough to have a nice enough evening to sit on their patio. A great spot for a little people watching. I might go back for Happy Hour, but with all of the up and coming spots in downtown Meridian, this place wouldn't be my first pick. read more
