First time trying this location inside Spectrum in OC. No surprise here because Le Shrimp has been my #1 noodle place when I am craving for a bowl. Their soup is full of flavor and noodles are soft and the right chewy consistency. I always order the same old, trio -shrimp noodles soup. Their appetizers are also worth trying, like the chicken katsu crispy and juicy ~ yummy! Service is ok, gotta flag a few times. The inside has AC and cool, even the doors were opened. I love their Signature Trio Shrimp Noodle, but I wanted to try the limited time only garlic butter shrimp with squid ink noodle today. It was garlicky and slightly spicy so definitely more adult flavored. The shrimp paste chicken wings were yummy but I couldn't really tell that they were marinated in shrimp paste much... tasted like regular chicken wings. I would definitely return to this location. Dined here a few days ago for dinner at Irvine Spectrum. They have a sign out front that says "please wait to be seated" by an exterior podium, but the staff inside aren't always watching the podium outside. Order thru the staff or QR code they provide for your table. I recommend getting the wide/thick noodles as the broth clings to the noodles better. We ordered the A1 "Signature Trio Shrimp Noodle" combo with Braised Beancurd/Tofu; and the A2 "Spicy Prawn and Braised Scallion Soy Chicken Noodle" -- the A2's broth was slightly better and comes with a chili oil that I put into my A1. Our group ordered the big prawn noodle and the crispy cod dry noodle, along with 3 different side options (spinach, bok choy, and fries). The noodles include an option for wide or thin noodle, based on your preference, and the dry noodles have a spicy or non-spicy option. Be warned, I would only come here if you really like shrimp. The 48hr noodle broth that they're known for is quite shrimpy, seemly giving a taste made from the shrimp head guts. If not a huge fan of the shrimp head parts, I would opt for the dry noodles. I got the spicy, which is more of a chili oil noodle. It was seasoned well though could be a bit salty if eating with the fried cod. The cod itself was nice and flaky, though I wish there was less breading and larger fish pieces. I would have loved a side of some soup with the dry noodle. Came on a busy Saturday and all the servers were busy cleaning tables, serving food, etc. It took some time to get sat down for a table. Appreciate that the shop has a plenty of seats. I am a big fan of paradise dynasty. So I had to try their sister restaurant Le shrimp noodle bar. Located at the spectrum. It was a very nice layout. I like the open space feeling. Ian was super nice. Went above and beyond for our experience Off their taste of Singapore menu. I really enjoyed their hainam chicken. Rice was flavored so well. Chicken cooked perfectly. Our first time to Le Shrimp Noodle Bar and we are fans! We've passed by the location at South Coast but have never stopped to try. We came by tonight with grandparents, parents and kids all approve! 5/5 stars across 3 generations and especially hard to impress my MIL but she was a fan of the new Singaporean special menu item - Hainan Chicken Rice! Stopped in at Le Shrimp Noodle Bar after a run and some shopping and it was the perfect cool evening for it. It was getting close to closing time but the host/server Jordan was prompt to get me seated and bring over a menu and some water. He also noticed I had my shopping bag on the ground so promptly brought over a basket for me to put my bag in which I was surprised to see at such a casual restaurant, but get that this level of service is common in Asian countries. I got their Prawn Noodles and a side of their wings and everything was so fresh and delicious. Was going to order the trio shrimp noodles but the server talked me into ordering the Singapore Laksa noodles instead. He said it's pretty good here so I thought I'd give it a try. The noodles were a bit too overdone for me. I like my noodles el dente instead. Also, the broth was a bit too salty. I love laksa and ate a lot of it, with either noodles or rice, when I was in Singapore and Kuala Lumpur so I can tell the difference. I'm a frequent visitor to Le Shrimp Noodle Bar in Costa Mesa since my office is right across the street and their lunch deals are hard to beat. We recently stopped by during shopping after seeing they were launching laksa and chicken rice, two true Singaporean specialties. The laksa isn't your typical version, and I mean that in the best way. Instead of an overwhelming coconut cream base, it leans more toward a deeply umami shrimp-forward broth, which I personally prefer. The chicken rice was excellent. A very good spot for noodles at Irvine Spectrum. It's located right next to one of the parking structures and there is also a lot right outside of it. However, it can still get very crowded depending on when you go. They have both indoor and outdoor patio seating available. They were kind enough to let us dine even though it was about 30min before they closed, which was very much appreciated. Both dishes that we ordered exceeded my expectations by far. I really appreciate that they have the option to select wide or thin noodles. We picked the wide noodles for both dishes. The crispy cod noodles had a generous portion of cod that was in fact very crispy. The broth is definitely as good as advertised with a very deep shrimp flavor. They give a generous portion of noodles and it was a very satisfying bowl of food. The dry noodles had a really delicious umami flavor as well. I ordered the Singapore laksa and was extremely disappointed. I expected much better from a restaurant with Singapore roots. The egg was served cold, which was not a great start. Cold as in it came straight from the refrigerator and put on top of the soup and served to you. More importantly, the broth was salty rather than flavorful. It had plenty of creaminess--perhaps too much--but lacked the depth and complexity that make laksa special. I could barely detect any shrimp flavor, and the belacan notes that are essential to a good laksa were completely missing. The result was a bowl that tasted like a generic creamy curry soup rather than authentic Singapore laksa. For a signature dish, this was a major letdown. I know what real Singapore laksa tastes like, and this wasn't it. Please don't dumb it down for the American palate. Authentic laksa is bold, layered, aromatic, and rich with seafood flavor. This version they served me missed the mark entirely. Some of us who grew up with Southeast Asian food are looking for the real thing without having to fly to Singapore. I hope the restaurant stays true to its roots and serves Singapore laksa the way it is meant to be. read more

6/11/25 - I ordered the A1 which is their Signature Trio Shrimp Noodle. I got it with the wide noodles. I upgraded to a combo for about $5 more which got me a side and a drink on top of the original meal. I got their braised beancurd and an iced oolong tea. The braised beancurd is around $4 on its own and the iced oolong tea is about $3. The beancurd was good but it didn't impress me enough to the point where I would get it again on my future visits. The drink wasn't a house special, but rather just a canned drink with a cup of ice to pour into. I also didn't realize that the drink was just tea as opposed to milk tea. Next time, I think I will just get the soup on its own without upgrading. It is a good deal if you're looking to get an appetizer and a non-water drink. The broth of the noodles had a strong shrimp flavor which was really good. The noodles tasted good as well. The customer service was great. The servers were really attentive and would check on me often. With the whole meal coming out to about $20, I understand that the price is realistic for a bowl of soup in today's time.
