The applewood bacon brings real smoke and salt, not just garnish energy, and the Manchego adds a creamy depth that ties it together. It feels intentional. It tastes like a kitchen that knows what it's doing. The Nordic Pappardelle is the dish you end up talking about later. Black garlic, smoked butter, birch vinegar, foraged mushrooms, charred leeks.
