Mom decided upon a coconut cake for her birthday. This was no ordinary coconut cake. Dubbed Grandma's Coconut Cake, the enticing dessert had been soaked for two days to saturate the cake with coconut flavor, then iced in a fluffy frosting and covered in flaked coconut. The Mandarin Orange Cake had the mandarin orange pieces my mom loves and the pineapple my dad cannot resist. The confection was an ambrosial tropical paradise. With all three cakes, we had no issues ordering or picking up the desserts. Vicki was always on time to deliver her box of sugary bliss.
