Liquid Diet is another new, great addition to the arts district. The location is a bit hidden from the main road & isn't super large inside, only a few tables and some outdoor seating. The vibe imo gives "The Menu" like the thriller movie. It's very industrial and sort of eerie in a good way. The drinks are also very unique. The menu rotates & current options are writing on brown paper held up by clothespins. In my visit I tried the appletini which was definitely not your standard bright green option. So you need to know about this spot cause there is no sign, but all the locals know about it, well at least the cool ones! Set back off Commerce there is a unique wall mural over the door. Walk into a groovy little open format bar/ alchemist lab! Seriously there is a "Mad Scientist" at work here making all their own tinctures and potions! And it works! I had friends from out of town who wanted to do the touristy thing. After a recommendation from Hugh at the CHAD for good cocktails, we ended up at Liquid Diet. If you don't know what you're looking for, you may think it's Voodoo Brewing, but look for the door next to it. I got the Key Lime cocktail and friends got the Pico de Gallo Michelada, the Grapefruit Negroni, and the Yuzu shot. My friends did not care for the Michelada but I thought it was delicious, tastes just like pico. All the the drinks were great and the bartender was very nice and informative, answering all the questions we had about the drinks. Yes, per other reviews it's down an alley and easiest to find by looking for Voodoo Brewing and then find the business to the left of it. IMO the vibe is not dive bar so much as industrial minimalist art garage. Yes, please. Service was super pro and the drinks on offer for the night are each listed on a piece of cardboard over the bar. Very fresh flavor profiles, plenty of green flavors (I had the horseradish vodka shot with a chaser of clarified tomato and cucumber - or maybe green pepper?- still dreaming of it), and plenty of other options for sweet, sour, spicy, burny - whatever your inclination, they've got a science-y, balanced, and artistic take on it. It felt like a secret cocktail lab. My sister had the chocolate chip banana bread cocktail and it was delicious, complex and beautiful. You could stare into the abyss in their clear, clear ice! Easily one of the best drinks I have found in the Arts District- although the signs make things look super simplistic and a bit grungy, the drinks are sophisticated and very tasty. I've been here since last year every time I visit Las Vegas. Definitely a fun vibe visiting this place. Parking is a bit limited but I've been ubering/lyfting here so it's never been an issue for me getting here. The two times I've been here, I've been coming here 30 mins early but there isn't a wait time thankfully and it starts to get crowded probably 30 mins after open. I've came here on weekends and it's surprisingly not busy but could be cause this place seems to be more than locals now than tourists. After a long week, the wife and I and a couple of other friends checked out Liquid Diet on a Friday night for some much-needed cocktails and were blown away by their creative concoctions. Liquid Diet had been on our to-do list since its opening, but our motivation reached critical mass once it was named one of Esquire's Best Bars of 2024. While not another speakeasy (thank God), Liquid Diet was without signage, tucked away in an alley in the Arts District, and easy to miss if you weren't looking for it. Once inside, it looked like a mashup between a professional restaurant kitchen and a mad scientist's lab that reminded me more than a little of the since-closed, iconic, NYC bar, Booker and Dax in both aesthetic and cocktails. Mind you, my one visit to Booker and Dax was over 10 years ago at the end of long night of food and drink so forgive me if my recollection is faulty. The two bartenders who took care of our group at the bar were friendly and helpful in describing Liquid Diet's drink lineup and explaining some of the method to their madness. Between the four of us in our party, we ordered pretty much every alcoholic drink and shot on their menu sharing sips off each other's drink. As a result, I had a fairly comprehensive sampling of most of Liquid Diet's offerings. While I usually favor whiskey-based cocktails, Liquid Diet's creativity and skill were truly put on display with their drinks utilizing other base spirits. In a night full of home runs, the Pandan Key Lime Pie and Pico de Gallo Michelada were my favorites of the night. There's no shortage of good places in Las Vegas to go for a cocktail. However, the list of GREAT places for a well-made, inspired, drink is much, much shorter. Add Liquid Diet to that very short list. I can't wait to get back there. read more

This is a place that we frequent on most weekends. They make some amazing craft cocktails with kitchen prepared ingredients. They pay attention to detail. We always come at night and there is usually no food so I'm not sure if they have any during the day. The place feels like an underground lab or kitchen. I highly recommend this spot. Definitely order the tequila verdita shots which is a shot with a chaser made of pineapple cilantro juice. Cat H of Bar Ginza, my previous stop, upon hearing that I was intending to hit Liquid Diet next, kindly gave me directions. Something I actually needed as it turned out, as Google Maps allowed me to walk right past the open gate in the alley to cross into Silent Hill before I realized my mistake. Atmosphere: Cheerfully chaotic backyard bar. Menu was black marker on pieces of cardboard tacked above the bar, along with the skull of what looked like a giant buzzard. The skull's eye sockets were handy (literally) loops for the crossbar from which dangled another skull. Bunches of bananas swung beside pots and pans, while brass animals, mismatched glasses and tea cups, and succulents were scattered over the various counters. It was as if grandma's storage unit had exploded over her grandson's man cave. Horseradish Shot w/tomato water chaser ($10): Had that strong sinus-clearing taste but so clean I barely needed the chaser to soothe my tongue. Pungent and lingering; I swear I caught whiffs of the horseradish seeping from my pores long afterwards. Value: A bit steep but not bad for an unusual drink.
