It's perfect for grabbing a quick bite, whether you're heading out for the night or looking for a late-night snack. The prices are very reasonable, especially considering the location inside a major Vegas resort. After finally locating it, I almost wished I had kept it a secret. Be prepared to wait. We stood in line for about 25 minutes, which by all accounts seems to be the norm here. After ordering, we waited another 20 minutes for our pizza to bake. Seating is another challenge--inside the restaurant there is very limited bar stool seating. We had to search for available seating in the lobby area and compete with others for a place to sit while enjoying our pizza. We ordered a whole pie--half pepperoni and mushrooms, and half ricotta with pepperoni. The pepperoni and mushroom side was decent, but the ricotta side missed the mark. The ricotta was piled on so heavily that it completely overpowered the pizza. Combined with the pepperoni, it made each slice extremely greasy. There was hardly any tomato sauce, making it taste more like a white pizza than a traditional pie. We ended up leaving half of it uneaten. The one positive was the crust. It was thin, crispy, and had a nice texture with a good chew. With so many excellent pizza options in Las Vegas, this experience did not live up to the hype for us. The hidden location adds to the novelty, but between the long wait, limited seating, and pizza that fell short of expectations, we would not go out of our way to return.

Everything was really good. The charcuterie board was beautifully presented and a great start to dinner. As for the pizza, I've had both good and bad pizza in NY and I thought this was up there with the good, for sure. The crust was nice and thin but not too floppy, although the generous amount of toppings makes it hard not to flop slightly. Service was good. Our bartender wasn't much of a talker but we were okay with that. There were plenty of conversations going around, around us at the bar to keep the ambiance buzzing. If you're looking for good pizza and a beer, Grimaldi's is def worth stopping by.
