We decided this was the kind of menu that needed to be explored, so we ordered a broad selection and shared everything: the Masala Crusher, beef Philly cheesesteak, paneer pizza, vegan saag, baba ganoush, Philly masala cheese fries, garlic cheese naan, and honey naan. We ordered most things at about a 2 out of 4 spice level, and I would describe that as very mild. Nothing at that level was especially spicy to anyone in our group. The paneer pizza was my personal favorite. I absolutely loved it. The garlic cheese naan was also excellent. Several people at the table thought the saag was amazing, and the masala cheese fries were another big hit. The cheesesteak was probably the lowest on the list for me personally, but it was still good. That really describes the meal well: I had some definite winners and some dishes that were more "also-rans," while other people at the table had different favorites. We also had the baba ganoush, and I forgot to specifically ask for naan with it, so it came with pita. That was probably a little disappointing only because the naan here was so good. The Masala Mule was also very well received. I'm not really a drinker, but I had a sip and picked up a fairly strong grapefruit flavor. The people at our table who were actually drinking it enjoyed it quite a bit. Portions are generous. Very generous. The five of us ordered $103 worth of food before tax and tip, ate until everyone was satisfied, and still left with four boxes of leftovers. Our table was technically set for six, but it was fairly narrow, and once all of the dishes arrived there wasn't much extra room left. The younger members of our group were more comfortable with the vibe, although I wouldn't say everyone was completely into it. The metal chairs also were not especially comfortable. I think this is probably a much better fit for a 20- or 30-something late-night crowd than for someone looking for a relaxed dinner where conversation is part of the experience. That said, the food itself gave us plenty to like. Our group of five was overwhelmingly positive overall, averaging about 4.8 out of 5, so I'm giving Gaia five stars based on the group experience. Full disclosure, though: I was the outlier. Personally, I'd put it at about 4 out of 5. But the rest of the group was more enthusiastic across the board, and with five people trying this many different things and everyone finding something they really enjoyed, Gaia clearly did a lot right. Had I been in Denver a little longer, I probably would have stopped by at least one more time. Crazy part is, prior to this week, I had never even heard of Potbelly. They don't have any locations close to where I live in Southern California. The concept of toasted subs isn't new to me. We have Quizno's. But the subs I got from Potbelly just tasted better. Anyway, if you could please expand into Southern California, that would be great. I would definitely be a customer.

What makes them stand apart from say a Subway or Jersey Mike's or Jimmy John's is that they have one of those conveyor belt toasters that once you've selected your bread, meat, and cheese, they run your sandwich through it to heat it up and give the bread a little bit of a char and the cheese a bit of a melt before it arrives on the other side to get your toppings added. And that is a cool standout, I'll admit, but somehow the flavor left much to be desired? Although that might be more to blame on the fact that they were out of like half their toppings... I really wanted the oil put on mine (oil is why Jersey Mike's is my go-to sandwich shop) and they didn't have any, and they went light on the Italian spices (probably because they were about to run out of that as well). Pair that with only being able to choose white or wheat bread... Overall my sandwich came out pretty bland. And yes, there was a big furry convention (with 6,000+ attendees-- I would know, I was one of them lol) happening one street over at the Sheraton, so maybe running out of toppings does make sense. But at the same time, if you have a location next door to a convention center, maybe you should expect to need additional stock over the weekend? Whatever. I just wish I'd known AHEAD OF TIME what they were out of, because I might have changed my order to something else (or even gone to another establishment for lunch). Beverages were extremely pricey unless you bundled it into their meal deals. Cuz I'm sorry, acting like chips and a drink as a $5 bundle is a "deal" on top of a $10+ sandwich is bananas. I really don't see myself returning to a Potbelly's unless it's a similar situation to the one I was in where it's nearby to where I am and thus a convenient way to quickly have a meal and return to what I am doing. My small, lithe body was able to wriggle into one anyway (kinda like getting into a baby's highchair), so I just executed malicious noncompliance and ate there anyway, but there were several more patrons who were likewise disappointed (and not as small and lithe as me) who had to wander off to find somewhere else to consume their meals. Honestly the proprietors (whoever they are) should just remove the tables and chairs altogether since they're practically unusable. Like it makes the area "look" nice aesthetically, but it's a total lie? Also, my husband told me that during one of his stops at Potbelly (we weren't always together during the convention), a hobo came in and grabbed an armful of beverages to run away with?? And apparently an employee tried chasing after them to get the drinks back? Idk how that situation ended up resolving itself. Kinda sucks the staff have to deal with that kind of annoyance, but also sucks that there are homeless folks desperate enough to do something like that. It just feels crappy all around, you know? Maybe the city needs to open a kitchen/shelter nearby. I was appreciative that no one made a fuss when, after consuming my meal slowly outdoors, I came back in to get a refill on my beverage. (I didn't know if because I'd technically "left", I wouldn't be able to get a top-off half an hour later. Glad it was chill.) They were also fine with me using the soda fountain to add additional ice to my Hydroflask, which was great.
