When my kids were little, we often camped at the nearby state park and rode our bikes here for some sweet goodness. Yesterday, my daughter and mom and I stopped in on a little Mother's Day trip to Blaine, and enjoyed some ice cream cones on their beautiful front porch. My daughter also bought some chocolate-covered confections to take home - and honestly, I'm regretting I didn't do the same. As far as candy and ice cream goes, their prices are definitely "tourist" level, but you do get what you pay for in terms of freshness, quality, and supporting a true Pacific Northwest family-friendly icon.

They were very nice about accommodating and customizing for my friend who is vegan. I went with the "Trix" which was exactly how it sounded...and tasted! If you've ever had a bowl of trix and the milk starts to taste like the cereal as you're eating it, that's exactly how this tasted. It was great. Took me back to childhood. They were also kind enough to hook us up with some "pup cups" for our little guys which they definitely enjoyed. What I really like is how well the ice cream holds. It was pretty warm out and I was able to give my pup his pup cup and was able to eat my ice cream without it melting out. If I'm up here again, I'll be sure to stop in hopefully the Trix will remain a main offering.

Tip #1: You might want to skip the waffle cone with ice cream. The warm cone melted my ice cream, and it quickly turned into a mushy mess. It might help if they had some cones pre-made to cut down on wait time and prevent the ice cream from melting. Unfortunately, the visit was extremely disappointing. We spent approximately $40 on baked goods, including what we were told were stroopwafels. The cookies we received had no caramel filling and were extremely stale--so dry, brittle, and unpleasant that we could not eat them. There was also no freshness or expiration date on the package. The other products we purchased were disappointing enough that we ultimately threw everything away. The employee behind the counter was not knowledgeable about the products and could not make us a fresh stroopwafel. We also found very little of the Dutch selection or experience we had made the long drive expecting. I tried calling the bakery for two days, but I could not reach anyone because their telephone was apparently malfunctioning. By the time I finally reached the store, I had already discarded the inedible products. I was then told that they would not provide a refund because they have a strict 24-hour return policy. That policy seems especially unreasonable for stale, undated food--particularly when the store could not be reached by telephone during that period. I was not asking for anything excessive; I simply wanted the bakery to stand behind approximately $40 worth of food that was stale and inedible when it was sold to us. A sincere apology and reasonable effort to resolve the problem would have made a significant difference. Instead, the response felt dismissive and left us regretting both the purchase and the long drive. Based on the poor product quality, lack of freshness dating, limited product knowledge, inability to reach the business, and refusal to offer a reasonable resolution, I cannot recommend the Dutch Bakery in Lynden.
