    Hitchcock Burger & Truffle Fries

I just moved to the area and heard this place had the BEST burgers. Well, they were right! But not just that. The truffle fries were amazing and the grilled artichokes were delish! Also the owner, Taylor is down to earth and super chill. The bartender Rich always has a smile on his face and is super nice and makes everyone at the bar feel welcome. All of the wait staff/servers are super friendly. Just a great place for any occasion. Family dinner, girls dinner out, date night. This will be a frequent spot for me.

End to end an incredible experience. These wonderful humans care deeply about flavor and dining and it shows! If you have not discovered this Santa Cruz gem yet, then you're in for a lovely surprise. Go before morels are out of season!!! We went big to celebrate a belated birthday. Our first course - Mocktail for my friend, and the Midnight Oil for me. It was like the elegant older sister of a Manhattan. Spirit forward but also subdued. The seasonal salad: OMG the wasabi peas + the green olives + the goat cheese balls? F*N BRILLIANT! Maybe the best salad I've ever had at a restaurant. Top 3 of all time minimum. Morel fettuccine: Mmmmm! Homemade pasta that reminded me of spatzle with morel and truffle toma. Salsa verde plus fried basil and sage for garnish. Delicious!! The toma and morels together gave this faint smokiness that layered beautifully with the verde. For mains- my friend raved about the Yuzu Glazed Chicken, and I had the Celeriac Branzino which was perfection. The fish was cooked exactly right - crispy skin, flaky flesh. The dish as a whole was delightfully creamy, bright, crispy and grounded with a little hint of savory fresh dill. The lotus root chip garnish was a wonderful repetition of the crunchy texture. Loved it! Dessert - There's no way we were leaving without dessert, and the lemon blueberry cheesecake did not disappoint! Pecan crumble crust, hidden whole bloobs in the seemingly whipped cheesecake, topped with lemon curd and blueberry preserves. And the toasted meringue garnish? Yes, yes please. How this was as light as air but so richly decadent is pure magic Thank you to everyone at VIM

3% fee for credit cards…read more I highly recommend the distillery tour. Book it in advance. It's super informative and fun. Afterward, there is a tasting of each spirit; however, the pours are very small; about 1/4 ounce of each spirit. It's such a small taste that it's not much more than "smelling" the gin. Which is fine. They make a total of 21 spirits, including 7 whiskeys. Highlights: For their gin, they use Lambic potstills; they have no column stills with baskets. Since they only use potstills, they macerate all the botanicals; it's a "wet" gin. Gin 01 is the flagship, and loaded with lavender. They sell 10000 cases per year. It's available at Whole Foods state-wide, and at the Santa Cruz Costco. Costo sells Gin 01 for $28, a significant discount from the $34 price at the distillery. Gin 01 works best with floral and citrusy cocktails like a corpse reviver #2. Gin 02 is a lightly barrel aged gin. It's aged for 2 months, and each barrel gets used twice. The gin is infused with bay leaf, sage, and fennel: it's more savory. They use bay leaf foraged at Delaveaga park, and they get sage and fennel from a farm nearby. I detected a cedar flavor. It's better with heavier cocktails, like a Paper Plane. They do seasonal gins: One for each season. For gin and tonics served at the distillery, they make their own tonic: it has a lavender note. It also uses chinchona, bitter orange, grapefruit, and elderflower. They have blue agave spirits. They get agave from farms in Yolo county. The farms do the pit roasting for them. The blanco tequila uses champagne yeast. The reposado spirit is aged for 11 months. Their mezcal is more peppery, less smokey. For whiskey: - They have a Port barrel finished whiskey that is really tasty. - I thought the rye was very sweet. - For their peated whiskey, they use malted barley imported from Scotland. Their single malt uses a crystal malt. Overall, it was a very fun visit.

The poolside vibe was a much needed break and everything I was hoping for. Laying out to tan, getting cocktails delivered to your lounge chair, and taking a dip in the pool was so lovely. On my most recent trip, our reservation unexpectedly grew by a few people, and the staff went above and beyond to accommodate us. We really appreciated how hard they worked to make it happen! The cocktails are next level creative, delicious, and unlike anything you'll find at your average bar. My absolute favorite is the Bidi Bidi Bom Bom shot! And of course, we always order the caviar because... why not? The vibe here is everything. Whether it's girls' night, date night, or a celebration, there's always an amazing crowd. The DJ knows exactly how to read the room and keeps everyone singing along/ dancing with banger after banger. One night there was even a live saxophonist who absolutely stole the show, it made the whole experience feel so special! No big deal, as I wanted the bar anyway, but something others should keep in mind. The cocktail list is plentiful and intriguing. I tend to avoid tequila, so that eliminated a good chunk of the options. I went with Rose Colored Lenses, which was fantastic, and decently sized. Presentation was beautiful. My friend had All a Dream, also very good. The wine offerings are minimal, this is very much a cocktail or champagne type of place, with caviar being the primary food service. Speaking of service, the bartender was excellent, both in his mixology and demeanor. It took awhile to get the drinks, but I assume that was due to the complexity of the cocktails, paired with having just opened the doors a few min earlier. Two notes: 1. The barstools were a little too low, imo. I don't normally pay much attention to that detail, but these were uncomfortably low for me, even with my long torso, I was hyper aware of my posture. So maybe that's actually a good thing 2. Other patrons were rolling in shortly behind me, so there is probably an early crowd when they first open, then a late night group that appreciates the 2am closing time. Interior is beautiful, and you can use the steps up to the 2nd floor either from N Santa Cruz or the rear parking lot off W Main. More substantial food options are a mere few steps across the hall at Heritage.
