My wife and I moved from Atlanta, GA to Seattle just a week ago, and let me tell you, we were stoked about Chinese food in the West coast. And one of our first stops had to be 99 Ranch, which was reminiscent of home for us (both of us are originally from CA). After buying a mountain of groceries from 99 Ranch, we saw Mama's Dough and, given the fact I haven't had Xiao long bao in Atlanta for 4 years, I was dying to try it. Good news: Xiao long bao was so good! The soup was so hearty and it lived up to its hype. Bad news: The rest of our food....not so great. Considering that we're moving and buying tons of stuff, my wife and I decided to go on a budget meal and share Xiao long bao, pig ear, and beef scallion pancake. The pig ear was decent, but my goodness, they were clumped and stuck together so tightly. My wife spent more time trying to tear them apart than eating it. So that means that they were not fresh and probably just defrosted or came from a jar or something. No bueno. The beef scallion pancake (which is one of my favorite Taiwanese dishes): are they rationing?? It was literally one roll cut in half. It was tasty, don't get me wrong, but my wife and I stared at each other and literally mouthed : "Is that it?" Total bill came out to be over $30 and we were still so hungry. After I got done at Valley Medical and thought I grab a bite to eat. Mamas dough popped up. Found it inside of the Great Wall shopping. Tried the soupy dumpling, garlic chive and egg pancake. Pan fried dumpling. I like it here. It doesn't look much. Very unassuming place. Service was very personable. The owner was very sweet and this is not always the case in a lot of Chinese restaurant. The dough were thinner and I didn't feel so bloated after the meal. She says all the noodles are hand made and I think I prefer this place more than Ding Tai Fung. I've been to this restaurant several times. Each time we have gone the food is delicious. Mama's Dough is in the Great Wall Mall. In the Great Wall Mall there's 99 Ranch, AT&T, Cathay Bank, several other restaurants, an herbalist, a bakery, and a couple of bubble tea/dessert places. No matter what time of day we go to the Great Wall Mall we usually have to drive around to find a space that's somewhat close to the entrance. Mama's Dough has yummy dumplings & baos, handmade noodles, and vermicelli noodles. You can watch the ladies behind the window make the handmade noodles and dumplings. It's fun to watch the lady with a long roll of noodle dough while holding both ends, fling it above her head and slap it down on the counter and then repeat the process several times. read more

I honestly liked this place better than DTF. Most definitely for the prices, but I thought the flavors here were more savory. And I can't speak highly enough about their pork and chive dumplings. I have never had them prepared in such a manner, and I went a bit overboard eating them for dinner, so I didn't have that much available for lunch the next day. The soup was tasty and I like the eggs and seaweed in the soup. The wontons filling was little heavy handed on soy sauce. The pancakes were pretty awful. It was super greasy and burnt. Food was only OKAY, wish it was as good as all the reviews. We arrived super hungry not knowing what we wanted but ended up choosing Mama's to have brunch. We decided to give it a try based on the reviews, packed place and newspaper clippings claiming that their xiao long bao gives DTF a run for their money. I mean why not-- "cheaper", closer in distance to me, "better" than DTF draws you in. After waiting outside and people continuously putting their names on the waiting list we finally get in after about 35-45mins. By this time we are willing to eat anything and even more excited to eat. We order the highly recommended pork xiao long bao, spicy braised beef noodle soup, pork wontons in spicy sauce, garlic green beans and a side of rice. After waiting for what seemed to be awhile the server came by and took our order. Brought us waters and a free appetizer which was so nice because we were starving! It was a trio of 2 types of picked veggies and some sort of cold garlic noodle salad (bomb, super garlicy). After scarfing that down we waited for each plate to come out. Their service was below average and I'm hoping it's just because they were super busy. Each dish came out separately so it was hard to eat things together. The garlic green beans were super good--but it can't be too tough getting this dish wrong 5/5. Spicy braised beef noodle soup was okay 3/5 stars, wish the beef flavor was more prominent and not so watered down. Pork wontons in spicy sauce 2.5/5, these were so disappointing! The wonton skins were super soggy (almost seemed boiled too long), there was barely any chili oil/sauce in the bowl to cover the few wontons anyway. Just passed through Mama Dough and craving for their soup dumpling (Xiao lun bao) brought us back in for a second taste. The xiao lun bao is still of good quality, thin dough wrapping and filled with tasty filling and juicy within. However, the beef chow-mien we had was below par, the beef was so chewy and unedible. The noodle seasoning was there with a few skimpy cabbage and cut up scrambled egg. We ordered the sweet and sour fish too, which came in good portion, the fish was nicely deep fried and the flavor of the dish was pretty good though little bit heavy on the vinegar. If you want high food quality, service, and reasonable priced, then eat here. If you go to P.F. Chang's or like pretentious, then go to Din Tai Fung. It's that simple. DTF is so overrated. This place makes their own XLBs just like DTF. However, this place makes them larger, more soup, hot, and cheaper. DTF are more expensive, smaller, and bland. Out of all the restaurants in the mall, this was the only place that had customers for dinner on a Wednesday night. So I decided to try it. Came here on Sunday at 6:30pm as a party of 8 - they had one big round table that could accommodate us and it was a quick 10 minute wait! Here's what we ordered -Soup Dumplings: these were decent! Not the best I've had but better than many places. I wish they had a bit more soup in them but the dumpling skin was thin and held it all together, flavor was great! -Green Onion Pancakes: these had good flavor but they were really greasy. Medium thickness. I think it depends on how you like yours. I'm one to prefer less greasy, more flaky and crispy! This one was crisp around the edges but 75% of the pancake looked like it was drenched in oil. -Pan Fried Dumplings (Pork): these remind me of woh-teep (Cantonese for pan fried dumps)! It's served upside down so you can see the thin flour crust that keeps it together (see picture, you'll get what I mean). These were delicious! -Pan fried pork buns: same flour crust as the pan fried dumplings, good pork filling but the bread to filling ratio was a little off. -Boiled dumplings: also VERY good and the skin had a good chew to it! One of my favorite! -Green Beans: done well, had a good crispness to it and they serve it with a generous amount of garlic mmmhmm! :) -Beef Noodle Soup: great flavor and beef was so tender and they use homemade hand shaved noodles which is one of my favorite kinds! Xiao long bao ($10.99) : I was pleasantly surprised by the texture and flavor of their pork soup dumpling. THIN but SUPPLE dumpling skin, juicy and Rich soup inside, good ratio of meat, perfect size to chomp at once, just superb! But what stands out the most is the temperature in which they were served, hot but not scalding. Maybe we were lucky, but the dumpling doesn't come very hot. It makes such a HUGE difference in term of flavor and enjoyment to not have your taste buds being burnt by scalding hot liquid inside the dumplings. So yeah, 5 stars for Xiao long bao that's definitely on term (if not a tad better) with DTF. Spicy intestines noodle soup ($11.99): Not spicy by my standart, but has a slight kick indeed. Quite oily, so be prepared to wipe your mouth a lot haha. Comes with flat knife shaved noodle. The noodle may be too chewy for some people. I appreciated the chewiness and the bounce in every bite though. The intestines slices were tender and delicious, but broth was meh. It's mind boggling this place is not PACKED ALL THE TIME! The food was absolutely phenomenal and at a more affordable fare. We ordered the XLB, pan fried pork dumplings w/ lettuce, chive pork dumpling, braised beef pancake rolls, spicy eggplant, and the slice potato salad. We ordered both the shrimp and pork and ooooh they were sooooo good! They were perfect - tender, flavorful, full of soup, and utterly and truly amazing! I will never ever be able to eat enough of these. While my intention was all about the delicious soup dumplings I was also very impressed with the large variety of the menu. This is where Mama's Dough has Din Tai Fung beat as there are many more dishes available for those who may not be interested in a dumpling meal. Where I could eat dumplings morning, noon, and night I know people who may want a break and Mama's Dough has hot pots, stir fry, fried rice, and more. I know my friend was thrilled with the menu. When we were done eating the owner came out and asked us about our meal. We told her how amazing the food was and promised that we would tell as many people as possible. Came here based on a Yelp search of Dim Sum restaurants in our area. Funny thing is this is not a Dim Sum place but a heck of a good Chinese food/dumpling restaurant. I've always loved the ethnic feel of the Great Wall China mall and there are great restaurants within it. Mama's Dough mimics the Din Tai Fung theme however it is much less expensive and has it's own original flavors. We loved the pork dumplings along with veru original version of Won Ton Soup which had egg in it as well. Great food and the only thing keeping this from being 5 star is that the service was great but a little chaotic and some of the items came out very late. We used to love this place. Well. It has changed, and not for the better. They no longer serve the little tray of pickled sprouts and radish, one of my favorite features. If you prefer xiao long bao chains like DTF and dough zone, you might not like these as much because you can tell that the xiao long baos are homemade.
