Some of these noodles come with already pre-set type of noodle like the Lanzhou but some of these suits you can choose the noodle that goes in like the beef noodle soup. You can choose a wide noodle or a dinner noodle or a regular type or extra wide. My friend ordered the oil spill one and that one was definitely a bit more flavorful than mine. Definitely trust your waitress she knows what is typically good. Another friend tried the spicy lamb sandwich, which was quite similar to Xian famous foods. Spicy in those flavor and a little kick. As for our greens, we ordered a side of cucumbers that were smashed in flavored a little bit, I think it could've used a little more salt or maybe take out a little bit more of the moisture before seasoning so that the cucumbers can take on more of the flavor.
