If San Juan had a Michelin guide, Marmalade would easily have a star. The innovation of their 5 course tasting menu and wine pairing is unreal. The absolute standout was the grilled tuna over black forbidden rice in a peanut miso broth. They paired it with a Grüner Veltliner Kittle that was chef's kiss. Between the incredible flavors, the amazing wine list, and our most knowledgeable server, the whole experience was next level.
Simply fantastic. A world class dining experience that recently turned 21 years old. Each of the dishes in the five course tasting menu is excellent but the tiny white bean soup remains my favorite. The wine pairings are well-chosen. Service is outstanding. Friendly, attentive, and extremely knowledgeable about the menu. I most highly recommended Marmalade!
Marmalade is unquestionably one of the best restaurants in Puerto Rico with more than 15 years established. For me consistency is the key. I've been coming to this place for a long time and both the service and the quality of food are impeccable. This stylish restaurant features an international menu with Caribbean influences offering creative plates. They also have a passion for vegetables cooking them in an innovative and delicious way. I would say that even those who don't eat vegetables could enjoy their dishes. I certainly appreciated it and Im not vegetarian or vegan. The restaurant offers a five-course experience in which you can pick and choose from different categories. The dishes could change depending on the season and the freshness of the products but the tiny white bean soup with truffle is a constant and a MUST! Besides, is Chef's Peter Schintler signature dish and is outstanding. All courses are refined and executed with great attention to detail. Some of my favorite dishes are the paella bites, lobster risotto, ahi tuna tartare and the malanga gnocchi. The wine list is exceptional. They have an extensive variety of bottles meticulously curated. They also offer a wine pairing which I recommend. If you are in the Old San Juan area looking for a unique gastronomic experience, Marmalade is the way to go!
Another great meal in PR! We came here for our friend's birthday and we all felt like we were gifted with the experience we had here. The only negative was an extremely loud and drunk bachelorette table next to us. I think she thought she was the main character for all of the tables in the restaurant, and we had all come to just listen to her screaming. But that is not the restaurant's fault so cannot let that impact the rating. Even with that, we had an amazing meal! The ceviche, paella app and the lobster risotto were all amazing although the star may have been the white bean soup because our friend hate beans but loved this soup! The birthday girl got the Chico L8 dessert, which she said was the best dessert she ever had. The waitress was also amazingly warm and funny! Love this place!!
Fluke Crudo: refreshing fluke with a kick of from the wasabi and the fresh sweetness from the watermelon. Beef Tartar: heavy on the truffle and lovely garlic toast. Tender pieces of meat and the Parmesan made the plate so beautiful! White Bean Soup: we could easily see why this is the star dish of the restaurant. Bacon and heavy cream with slightly cheesy white bean immersion blended to create a slightly grainy soup texture. It was creamy and you can take your time to sip and taste and each sip has a lot of flavor. Lobster Risotto: good amount of lobster and creamy rice and beautifully plated. The Maine lobster were in little pieces. Homemade Malanga and Black Garlic Gnocchi: lovely potato gnocchi with the beetroot chips to dip with a hint of horseradish. Pacific Sea Bass: extraordinarily unique and beautiful presentation. It looks like the fish is sitting on top of a bed of sea foam! The sea foam is slightly sweet. Underneath it has herbed rich, pineapple, and nuts. It's a taste that is quite unique and adventurous but it was really good! Beef Tenderloin: a classic garlic potato purée along the side of the dish with a tender beef in the middle. It was a bit salty for me, but it was delicious as well! Local Passion Fruit Trilogy: very strong passionfruit flavor crème jelly and pulp with a yogurt cake and Sicilian pistachio ice cream. So Beautiful! Salted Caramel Corn Crème Brulee: also beautiful but very American caramel! Even though it was not my favorite, my boyfriend loved this. Service is impeccable. The center floral piece looked so beautiful and perfect that I thought it was fake and it is changed weekly. I could stare at that center piece all day. The lighting and the different tables all have a uniqueness to them and were very thoughtfully placed and utilized. We sat in a bed of pillows in the corner! So beautiful. Even the bathroom is clean and decorated with different abstract art with a dark ambience.
This is one of the top restaurants I've ever been to in my life. I will never forget the meals, experience and hospitality of this dinner. Truly unforgettable from entrance to exist. Illiam, our server was incredibly attentive and her recommendations were stellar. Every course was better than the next. I cannot wait to go back! Not to mention the decor is stunning and homey all at the same time!
5+ stars! The restaurant is impeccable. The service is excellent. Food is amazing. A menu is handed to you and you pick four items (appetizer, small plate, dinner and dessert). It isn't as easy as you think. Menu items were plenty and every meal would satisfy your appetite. Restaurant was decorated with beautiful furniture, lighting and table positioning. I will definitely return when I visit Puerto Rico.
My friend Liz and I ended up at Marmalade last night kind of by accident--we knew it had great reviews, but didn't realize how exceptional it actually is. Rafael guided my entire meal and didn't miss--Ahi Tuna Tartar 'Moroccan Style', the Tiny White Bean Soup, the Pasture Raised Hormone-Free Beef Tenderloin, and Blueberries, Bourbon & Bacon- Everything outrageously good Cocktails by Marcella were phenomenal--of course, same name. Thank you for the experience!
I love this restaurant. Gourmet but not stuffy. Delicious food and flavors and filling portions. Top tier wine list in the tropics. Cosmopolitan design and ambiance. The flavors and interpretation of classic recipes was top tier. The beet salad and ceviche were as expected fresh, crisp and delicious. The tiny white bean soup with generous truffles was epic. The linguini with clam, crab and saffron was epic. My favorite course. The main course of Yellowfin tuna in mild curry veggie broth foam was too good. The sea bass was delicious. Wasn't crazy about the sweet coco rice the sea bass was served on top of. Crème Bruel was decadent. Washed it down with water and a lovely 2022 Mendoza blanc. Hats off to a top 10 meal of the lifetime. Rarely get to eat a proper six course meal like this. Staff was great. Vibe was chill. Seating is comfortable. People watching is fun. Gracias!
So Yelp keeps warning me that my "writing pattern looks suspiciously like a bot," which is funny, so I've been taking a break from "yelping," but jumping back in because, well... Marmalade. I finally made it here after years of hearing everyone rave about it, so when I had a late night stop in San Juan on my latest cruise, I made a res. I opted for a seat at the bar (shoutout to my server Layla, who is an actual person, and also not a bot) and took all her recommendations of what to order off their five-course tasting menu. To make it simple, I had one of the night's "additions" which was heirloom tomatoes and goat cheese as course one. Delicious. Everyone gets their "famous" tiny white bean soup as course number two and after having it, I know why. Course three was also an "addition" for the night - a beet-root rigatoni with duck confit. Bright red, al dente beet root pasta and a good amount of fork tender duck. Course four was something I was on the fence about, the lamb tagine, but after the first bite, I'm glad I ordered it. Dessert? The B2 3 - Blueberries, bourbon, bacon... need I say more? It was more calories than one should be allowed to consume in one sitting, but you only live once. Yes, it's $145 per person before drinks, tax, and tip, and yes, I walked out about $300 lighter, but also stuffed and happy that I *finally* got to try it. If you're in San Juan and want a dinner for a special treat, a celebration, or just to splurge (because, why not??), put Marmalade on your list. And Yelp, sweetheart... I promise I'm a real person. A very full, very real person.
We ended up having a free meal in PR on our last day, but I was having a hard time finding restaurants that were open on a Monday. Thankfully, there was still availability at Marmalde and I was able to make a reservation an hour before the reservation time. The inside of the restaurant is so pretty - the hostess said that they remodeled recently and it really shows! For the 5 courses, I chose the tuna tartare, lobster risotto, sea bass, and miso caramel creme brulee. The second course was the white bean soup for everyone. Wow! Everything was so good. I wasn't sure what to expect because I read a number of reviews that said this restaurant wasn't worth it. I have no idea why - every course was amazing and at such a reasonable price too. My favorite has to be the white bean soup. They said it's their signature dish, and it makes total sense! I wasn't sure if I was going to like it because I don't love beans or truffle, but this soup is special. My second favorite was the complimentary popcorn shrimp dish. I would never think to pair shrimp with popcorn (let alone chili popcorn), but this was so delicious! The shrimp was cooked perfectly, and the popcorn added a nice kick to it. The two dishes that I didn't love was the tuna tartare and the sea bass. I've never had a tuna tartare like this. It's topped with a cucumber yogurt and served with flatbread. It's not bad, but definitely not my favorite. I was so full by the end of this meal. They even gave us candles on each of our desserts to celebrate our anniversary! Everyone was so nice, and this was a great way to end our trip.

let me begin by saying i had the absolute pleasure of having NAOMI as my server, and she made my night very special. boy does she know her stuff! she gave me amazing recommendations and knew everything about every single wine that came in my wine pairing. she even threw in a few fun & interesting facts! as for the restaurant itself, there is no a la carte optikn, just a 5 course meal, but you are able to choose which dish you want for each course... with the exception of the navy bean soup which automatically comes as your 2nd course, but rightfully so! a creamy navy bean texture with pork flavors and truffle sprinkled on top makes a fantastic soup! another standout dish for me was my 3rd plate: rabbit with kale pasta and mushrooms. the flavor that bursts out from a bite of the mushroom complements the rabbit perfectly and the al dente texture of the kale pasta really rounds out the dish. i highly recommend the wine pairing, especially for this dish, as it comes with a gamay that really pairs well with the rabbit flavor. the highlight of the night was the chocolate cake i ordered for dessert. i am biased because i have a big sweet tooth, but it may have been the most amazing dessert ive ever had in my life. overall, a 5 star experience that i will be bringing everyone back to again and again. read more

We came here for a birthday and dont regret it at all. Everything was great about this restaurant from the atmosphere to the food. Its a fine dining restaurant so the restaurant is really upscale but they also made the restaurant a bit cozy at the same time. The service was amazing as well. Im sorry I forgot his name but he paid really good attention and constantly checked on us especially for my allergies. The food was some of the most delicious food ive ever tasted, especially the risotto (10/10). There was one dish that my girlfriend didnt like but they went immediately to get her something new. Im only giving a 4 star because the dessert i had did have something I was allergic to despite reassurance which cause swollen lips and throwing up outside. Im not sure if the dessert was pre-made but having the allergens directly on the menu may help. Otherwise I completely recommend trying here. read more
We chose this restaurant to celebrate our friend's birthday. We chose it because the food was highly rated and it was noted to have a romantic ambience. There is a main central area with tables and then pockets of enclaves along both sides. We were seated in one of those enclaves that had four tables for four and unfortunately a large round table in the center. I don't think it was because I'm getting old. I know I get easily annoyed by bad acoustics but this was another level of noise. There was a group of women celebrating a bride for her bachelorette. She made sure we all knew how special she was by screaming and screeching to get her friends' attention the entire night. A couple who were seated after us immediately moved. Yes we had a chance to do the same but we decided to stick it through because we thought they were almost done. Well they stayed until we were at our dessert course. So why 5 stars?? Because the service (and attention and acknowledgement) and the food were outstanding. Easily the best choice to celebrate our friend's birthday. Everything was delicious but what the chef does with white beans was especially incredible! Ending with the passion fruit trilogy was perfection! read more

Good vibes, good food. Tasting menu didn't disappoint- and I was able to try things I've never had before! The wine paring was eclectic- wine from Hungary! Care was taken on every aspect of each dish and Service was perfectly paced and very kind. read more

We just had a fantastic anniversary dinner at Marmalade. All of our food was amazing and our host, Layla, was wonderful. We were torn between some of the choices on the menu and she was incredibly knowledgeable and charming. The restaurant itself is intimate and never was loud, even when completely full. Food was well executed, we went for my birthday and it felt like they went the extra mile to take good care of us. Every dish was independently delicious-it was hard to choose what to order. A very special night in a fabulous setting. We would highly recommend to anyone traveling here! read more

Wife and I were visiting the island from Northern Virginia and had a reservation here for my Birthday at 8pm. First impressions of the ambiance were very nice. Eclectic, Romantic, and Great Vibes. We were greeted by the hostess and sat at a nice table for two. Our Server Gabriel came immediately introduced himself and explained the menu which is offered as a 5 course prefix menu. Everything on the menu looked so delicious. Gabriel was very knowledgeable and patient with us. He described lots of items with recommendations we were indecisive on ordering. I also went with the wine pairing for each course. He described each wine when it arrived and why it paired with each dish. Everything was exceptional from start to finish. The hospitality from Gabriel was so on point which made the food and experience that much better. Over all very impressive and worth a Michelin Star. read more
As the oldest tasting menu restaurant in San Juan, Marmelade is a local icon of fine dining. A combination of extremely attentive service and inventive dishes, this is an adventure into culinary capabilities of the island. The restaurant was founded by Chef Peter Schinter and passed down to Chef Peter Timmins who runs the establishment now. The tasting menu is not only adventurous, but delicious. Lobster Risotto is the absolute favorite, with chunks of lobster and a remarkable depth of flavor. Then, there are classic dishes like White Hominy Soup (which sadly came out oversalted), Seabass and restructured popcorn shrimp. Deserts are remarkable with Blueberries, Bourbon and Bacon being a standout. The team working here and the sommelier, Priscilla, are genuine and kind. The space matches the quality of this farm to table establishment, with a very elegant interior that is romantic and "island formal". One thing that could be a minor improvement area is further expanding on use of local ingredients and seafood. For example, having local fish instead of Halibut or Seabass would be a nice enhancement. We have enough global restaurants in the world and the trend towards local sourcing can be further expanded at Marmelade, although I understand that many ingredients are local already. read more

Second visit, and the kitchen is still batting a perfect average. Every single person at our table cleaned their plate with an occasional "wow." The service was spot-on: friendly, attentive, and impressively knowledgeable. Ask a question about the menu and you'll get an answer, not a guess. Bonus points for the house wine made specifically for the restaurant from Columbia Valley. We ordered it expecting "house wine," and instead got "why is this so good?" If you're in Old San Juan and don't eat here, that one's on you. Highly recommend. read more

By far my favorite restaurant. Came here 6 years ago w my husband and it was the only vegetarian tasting I'd ever been to. When planning this current trip we made sure to book Marmalade 30 days out. Still amazing. Tasting only: vegetarian and non vegetarian. Service was outstanding. Brought my almost 4 year old son and they went above and beyond for him with a small cup (like a shot glass) of their white bean soup and a buttered pasta with cheese that was so good I would've had that as an entree. Fun romantic lighting. Perfect for birthdays, friend get togethers, celebrations, date nights. Pricy but you get what you pay for. This place will always be included in a trip to PR Highly recommend the wine pairing for the extra $95/person My son is used to restaurants but I wouldn't call this place "kid friendly " read more

Marmatastic. If you're seeking the Michelin-type creative cuisine, five courses of exotic mixed flavors and presentations, this is that place in old San Juan You step into a different place, could be San Juan, Paris, Tokyo, New York or Miami. Beautiful setting and truly top end service (Bravo Santi). Choose five courses from a diverse menu. The second course, a white bean soup with fresh truffles is ... elevated. Get completely different dishes than your adjacent dining partner-- allowed us to taste ten dishes, following our waiters recc. It's an epic meal, with a price to match. Yes yes yes and yes. I mean it is expensive but it is so good. Each course the presentation was lovely and it tasted delicious. The chef came and spoke with us and it was such an intimate dining experience. I would definitely recommend but be ready to break the bank. read more

Wow, wow, wow! Marmalade was recommended to me by a friend, and the experience was a complete home run. I'll start with the atmosphere which is comfortable, artsy, had great background music, but was still quiet enough that our large table of five could have a good conversation. The service was amazing and worthy of a five star review. The entire staff was continuously attentive, and nothing was missed. What was most impressive though was the food, this restaurant offers a five course menu, in which each diner chooses four of the five courses. The four $$$$ signs may scare some off, however, it is well worth it. We stopped for dinner our first night in Puerto Rico. This dinner was amazing. It's a pre-set menu, but you choose from a list of options. I started with the popcorn shrimp. Unique but perfect. Shrimp over a bed of guac. Amazing taste. Then had the little bean soup, ceviche, and finished with the steak. Steak was cooked perfectly. Tender and delicious. Then our table ordered four different desserts. My favorite was a passion fruit dessert, but the crème brûlée was also very good. Our server Elian (I hope I spelled her name correctly) was great and explained everything well. Every person working here made this a great dinner experience. And they were not in a hurry to Ruby's out the door. We were there for 2+ hours. Great way to start a vacation. Amazing dining experience! Came here for my recent birthday and I can say that it made the Puerto Rico trip even more special! We had reservations for 8pm on Sunday. Beautiful and comfortable interior seating and atmosphere. If you were so lucky, you may also have Gabriel as your server as well! He was both charismatic and funny. Now a 14 course meal might sound intimidating, but rest assured it was worth every minute. I do however recommend you pace yourself, we were quite full before the entree. All the courses were delicious and beautifully presented. All the servers had great knowledge on the ingredients and preparation. I especially loved the beet dish, truffle white bean soup, and the beef tenderloin entrees. Truly a fun fine dining adventure. read more
The restaurant was very upscale and quiet. Not the vibe we were looking for but we stuck around. We shared the 5 course meal. We started out with popcorn shrimp. The shrimp were large were a great flavor with the cilantro and garlic. Then we had the lobster risotto. It had nice sized pieces of lobster meat inside. The white bean soup was excellent. It was creamy and had an amazing flavor. The seabass was very very small. The dessert was like a blueberry cinnamon roll. It was good. The bacon pairing gave it a unique taste. This was by far the best restaurant I went to (and of course had the price tag to match). Decided to splurge a little more my birthday dinner and the service was excellent throughout the night. My girlfriend is a pretty picky eater and our server was really helpful walking my girlfriend through the menu. Everything on the menu sounds really good so it was hard to choose 4 courses (the soup course is automatically chosen for you). Literally everything that came out was delicious. You can tell how much though went into crafting each dish. Throughout the night, we had different people dropping off food and each of them remembered to wish me a happy birthday. The drink menu is a very entertaining read. Every one of them had a theme. I got the Global Warming which starts off as a sweet margarita but it has spices in the ice so as the ice melts it gets spicier and spicier. Definitely recommend! read more
Super creative menu well executed in a lovely space with an Indie rock soundtrack in the background (Broken Bells, Tame Impala!). The diverse flavors in each dish were so well balanced-- they have great skill in that kitchen to create IRL what they envision on paper! Team service led by Eric was perfectly paced and non intrusive. The choose your own adventure approach to a pre fixe tasting menu meant we could try as many things as possible from the menu (yet there were still so many more we wanted to try!) Creative cocktails and great wines, though pricey, were delicious and paired well with all the dishes. If you want a great meal in San Juan, special occasion or not (though there seems to be a special occasion area of the restaurant where many tables were strewn with rose petals), I highly recommend this spot. Yea, it's a bit pricey for 5 courses but it was in no way disappointing or lacking at all. read more

We went here as two couples, we got to sit in a somewhat private area with curtains. Everything was very well explained from the menu. And everything we had was extremely tasty. I had the lamb tagine as my main and the passion fruit dessert. All my courses were super delicious. I would definitely recommend it to those who want a little more high end experience and really good food and service. read more

Where should i start!!! OMG ... this resturant is heaven sent! Chef kiss!!!! "Drops a tear " everything was well prepared!!, you sit back and let the chef cook! Literally "I got thru all the dishes!! Each one was heaven sent! The flavors point on!! I did the wine pairing also never knew u could find the right wine with each dish!! So point on! From the service to the well relaxs ambiance. Marmalade was the hightlight of my trip to PR im a big foodie!!! and when i say this is definitely top (1) resturant ive ever went to! I mean that deeply !!! Officially my favorite! I will travel back to PR jus to come here! Everyone was so welcoming and educated on all of the dishes and wine! In loveeee with everything about this place!! The chef was sent from heaven to bless us with his talent,! Thank you for giving food the real meaning of ART! keep up the good work!!
