A blissful New Years' Day dinner in San Juan set the tone for an amazing year.
Our trip to Puerto Rico in late 2018 was a highlight reel of incredible moments, most of them involving food (who could forget my 1st Medalla and the bacalaíto as big as my head??) The top spot from our tropical vacay receives a special 900th review, as requested by Nichole C.
We'd made a reservation at Marmalade well in advance and despite traffic causing a late arrival, the hostess was kind enough to seat us without issue. Our table was at a very comfortable two-seat sofa in the corner and came tastefully decorated with flower petals.
Once greeted, we ordered cocktails. I started with the "Jimi Hendrick's" ($14.5), a refreshing gin drink made with muddled mint, sliced jalapenos, and fresh cucumber juice. From there, I enjoyed the boozy and aromatic "DGAF" ($15.5), a bourbon cocktail infused with peppercorn, red ale microbrew, served with a slice of maple bacon and a puff of rum barrel smoke.
Then there's the "Global Warming" ($16), a fascinating drink that changes composition over time. An ice sphere of chili pepper puree melts into a margarita that's been infused with hibiscus & basil, so the longer it sits, the spicier it gets! A MUST-order.
Marmalade offers pre-fixe tasting menus beginning at $75/person for 4 courses. We settled on the 6 courser for $95/person, which ultimately gave us the most flexibility with choices. We each picked 3 starters, 1 soup, 1 entree, and 1 dessert.
| Kimchi Boricua: local bok choy and assorted veggies in a red chili vinaigrette, topped with starfruit and roasted macadamias. The sliced peppers added a nice blast of heat, while the rest were a colorful palette of lightly dressed organics. {4/5}
| Paella: bite sized pieces of crispy paella filled with smoked chicken, peas and peppers in a saffron espuma, served over chorizo-tomato sauce. Tasty and nicely plated, we only received 3 while most other tables got 4. What gives? {3.5/5}
| Ahi Tuna Tartar: Moroccan style tuna seasoned with harissa, layered between creamy lemon chickpea puree and cucumber yogurt, and served with homemade flat bread. I absolutely LOVED the presentation of this one, echoing a strawberry dessert bar and "cookies". {5/5}
| Popcorn Shrimp: garlic grilled shrimp on top of poblano guacamole and spiced popcorn. This was the strangest misfire of the meal....movie snacks and seafood generally don't crossover well. {2.5/5}
| Ceviche: red snapper cured with grapefruit, avocado, and smoked chili dressing with tostones. Though not terribly creative, the citrusy flavors matched well with the heaviness of fried plantain and fresh fish. {4.5/5}
| Pacific Yellowtail Poke: sashimi grade yellowtail served with ginger, lemongrass, soy sauce, compressed watermelon and aerated rice paper. This snazzy dish was a big winner. {5/5}
|| Tiny White Bean Soup: topped with scallions, black truffle oil and pancetta. This famous dish comes standard with every seating (thank god). Dripping with decadence and packed with explosions of umami flavor, it's currently in the running for Best Soup on Earth. {69/5}
||| Surf - N - Turf: pan seared pork belly & diver scallop in hoisin, with garlic rabe and peanut/green chili emulsion. The pork belly + scallop had a delicateness to them that was rounded out nicely by the sweet brown sauce. {4.5/5}
||| Lobster Risotto: this is Nichole C's all time favorite (and she's had her fair share of risotto). Nice big chunks of lobster in a creamy base, I can attest that it was indeed fantastic. {5/5}
|||| Baked Paradiso: olive oil macadamia nut cake layered with milk chocolate and passion fruit ice cream, encased in a toasted coconut meringue. The spinoff of an Alaskan classic sounds cool, but the flavors were all over the place and didn't win me over. {3.5/5}
|||| Salted Caramel Corn Crème Brûlée: organic popcorn custard topped with peanut brittle ice cream. We're always big fans of the CB and this playful version was no exception. {4/5}

When we received the check from our server, I was a tad disappointed that for a restaurant of this class, they didn't offer a 'lagniappe' or some little treat with the bill. Nothing crazy, just a small freebie would've been nice.
Executive Chef Peter Schintler made a bunch of appearances during our 2 hours here, but despite repeated requests made to our waiter, we never got to meet the guy :(

This is one of the best restaurants in the Caribbean, the culinary team fully deserving a Michelin star. Mere weeks after Hurricane Maria wiped out most of the island, they were back in business, serving that tremendous white bean soup #workethic
Meals like this don't come around often. If you ever find yourself on the enchanting island of Puerto Rico, I urge you to seek out Marmalade for dinner. I can promise you it'll be legendary. read more
