Through working with Off Menu catering services we were introduced to Chef Peter Foster. He put together a menu based on a set of menu items we liked. The menu he presented back was very different from what we had in mind, but when we went in for a tasting we were so impressed with the taste and quality of the food, the beautiful presentation (especially the use of wooden serving platters and servers) and the attention and care for the details. Everyone at the wedding raved about the food for both the cocktail hour (especially his trio of sliders) and the dinner (all of it!). My husband I live in London but decided to have a destination wedding in Hawaii which meant I had to do all the planning remotely from London. As a food enthusiast, I diligently went through all the local caterers and repeatedly came across Memoirs on numerous wedding blogs. In short, we definitely made the right choice with Memoirs. They were fantastic in responding to my endless queries and emails regarding their dishes, extremely flexible with our ever changing requests and in our final meeting, still offered to take on board feedback / changes so that we had the perfect dishes on our wedding day. We held our wedding at Lanikuhonua (phenomenal venue for those still searching) and we served 3 canapes during cocktail hour (scallops, pork belly baos and ahi tuna cone) followed by a salad appetiser, braised short rib or seared mong chong with an unconventional dessert of Bubbies Ice Cream Mochi and Memoris' freshly made masaladas. Our guests raved about the pork belly bao with bourbon hoisin glaze and the scallops were also generously portioned, flavoursome and fresh. The fish main was superbly cooked and the malasadas were freshly fried and served in small kraft boxes for our guests to enjoy during the dancing portion of our wedding. The braised short rib also received rave reviews. All the leftover food with accompaniments were also packed away in boxes for us to take back to the hotel. The preparation and service was seamless and the servers even placed lids on dishes where our guests had snuck off for a quick sunset photo. Office manager Thomas Lord was extremely responsive to our emails and our changes in plated / appetiser / dessert options to ensure we were fully informed and Rosanna was so organised and efficient in overseeing the coordination in advance and on the day. Chef Peter Foster was amazing and extremely receptive to all our feedback during the tasting, allowing us to make last minute changes to the dishes to tailor it to our preference, this reflects his plethora of experience and creativity in his cooking style. We wanted the seared mong chong rather than a steamed seabass due to the texture and when we asked for more sauce for the braised beef short rib they incorporated this immediately. We also wanted to add a twist to the freshly baked bread, so Chef Foster offered to bake some fresh bread infused with smoked bamboo, salt and thyme. My husband wrote a review a while back but Im still in awe of how amazing Memoirs were so I had to write a review! Choosing Memoirs as our caterer was truly one of the best choices we made for our wedding. Not just because their food is AMAZING but because they are so professional and we were amazed with their quality of service. We mostly communicated by emails but Thomas was super fast with responding and he would listen and work with us to meet our needs. We didn't have a professional wedding planner so we were still worried if everything will go smoothly..however, Memoirs were SO on top of things and Rosanna was one of the most dependable person we got to work with so everything went perfect. Because they were there, I didn't have to worry about anything on the day of and just got to enjoy the tasty food! Unfortunately it was pouring during our reception and they had to run in the rain but nobody complained and they kept professional throughout the event! ( I really hope nobody got sick!) Everybody LOVED the food and we got so many compliments. Kudos to Chef Peter Foster and Site Coordinator Gabriella Kawamoto on an outstanding job for my daughter's wedding at Kualoa Ranch (outdoors). Quality and Excellence from Planning to menu selection to Set Up and Service, was simply awesome! Our guests complimented the professional manner of service and as well as how cordial and hospitable they were to over 30 out of town guests from the mainland. The quality of the food can only be compared to that of a fine dining restaurant and in my opinion better than most. To top it off the event was deluged with rain and numerous adjustments had to be made. Thru it all the staff totally accommodated us making it a memorable fun/enjoyable event. We started off not knowing anything about how to plan a wedding or what's involved in hiring a caterer. We contacted about a dozen caterers within one day. Chef Peter called within hours of leaving a message to Memoirs. So we're thinking okay this guy is either really on it, or he's desperate. No one else called back for days. Within that time Chef Peter arranged a tasting where we got to choose items that we would like have at our wedding. It's safe to say that we were sold after the first few bites. The food is phenomenal and took away any doubt that we could have had. Chef Peter then created a menu with us that fell within our budget and still met our needs. We left Memoirs with confidence that the food was taken care of for our wedding. Okay wedding day..... Memoirs shows up just as planned and with no problems. Gabriella was our contact person. She and her staff's professionalism cannot be overstated. Everyone we talked to associated with Memoirs including Chef Peter was super easy going and friendly. We had so many guests tell us that the food and service was perfect and ask who our caterer was. Every person in their crew was willing to help in any way to make our wedding run smooth. Chef Peter, Rosanna, Thomas and team did a wonderful job at our wedding! The pupus were amazing and they suggested family style service which I would have never thought of but worked out beautifully for our 28 person wedding. Rosanna was so helpful with helping set up everything while I was running around taking pictures. When I arrived back everything was just like we discussed! She even completed a site visit for us since our wedding was a destination...SHE'S AWESOME!! And the food presentation was spot-on and tasted great! There are no words to explain how amazing Memoirs were. They were the superstars of our wedding! We had to organise everything from Australia so we had to fly to Hawaii to do all our taste testing (best ever) and we were in love. The professionalism of this company is top notch. We knew we wanted to get the best of the best when it came to catering as this was high on our list of priorities (we LOVE our food). They did not disappoint. From the appetisers, the custom made cocktails, the professionalism of the servers, the specialised menu for our allergy and gluten sensitive guests, the bride and groom getting both options for mains (and got a little grazing plate at our table after our photography session), the perfect timing of serving within our timeline, managing to impress 50 guests with the menu...AND they had to achieve all of this in a rented kitchen on a lawn as we got married at Lanikuhonua estate! I can't recommend Chef Foster and his team enough. If you are looking for exquisite and affordable food and service - look no further. We had Memoirs cater our wedding in January 2013 and Chef Foster was an absolute class act. Planning the wedding from afar we put our complete faith in him and he totally delivered ... and then some. Communications back and forth were prompt, professional and always friendly - he helped us come up with the perfect menu and service for our night. A week before the wedding we arrived in Hawaii and had a tasting where we could finally taste how fabulous the food was. Upon seeing how beautifully plated the dishes were, we changed our minds and went from a buffet for 35 people to a fully plated dinner! Chef Foster did not hesitate one bit in granting us our last minute request and didn't even charge us a penny more. Everyone at our wedding raved about the food. In addition, the staff that he brought with him were impeccable and our guests didn't want for anything. Chef Peter Foster of Memoirs was recommended to us as a caterer for my daughter's destination wedding in the Honolulu area. Our tasting was divine. Chef created a menu that matched my daughter's requests to the tee, and then took the foods and presentation to the next level. Only the freshest and best local ingredients are used. Chef Peter's food actually made us feel so happy after the tasting. We readily signed the contract for our event and anxiously awaited the big day. Our venue, Lanikuhonua, required all kitchen equipment to be brought on-site. Memoirs equipment, commercial kitchen and staff are all superior quality so they were well equipped to handle, and staff is well experienced so all was flawlessly executed. When the wedding day came, Chef and all his staff were wonderful, professional, fun and friendly. Our guests were very impressed with the delicious foods and service.
