So happy to see amazing food at the Telluride Blues and Brews festival this year! Weapons of choice…read morewere the Mexican Discada trio of street tacos filled with hearty veggies with a side of house made salsa! The rainbow wrap was filled with veggies and an awesome flavor war between the beet hummus and ginger tahini sauce. The Buddha Bowl was the favorite of all these delicious entrees. Great portion of veggies smothered in their Thai peanut sauce!!!! We ate their twice during the festival, if y'all have the chance to eat some grub from this spot do it! All the staff were BA's, hope to cross paths again one day!

Carrie's food is *amazing* and a great deal. I am a medium sized woman and each of the meals is 2-3…read moreservings. I learned about Mindful Roots when Carrie catered an event with jackfruit chili and all the fixings. It was *the best* chili I've ever had. Soooo many vegetables!! I decided to start ordering delivery from Carrie because I realized that my typical millennial diet (charcuterie) was not serving me and that I'd probably get scurvy. With grocery costs going up and fatigue at the end of the day, I just never found myself wanting to cook. The meals are soooo delicious and way better than what I could prepare on my own for three cost or with my skill set Overall, I totally 100% recommend checking out mindful roots because it's not only great food/quality, but we are supporting a local business! And we're helping by not consuming meat all the time do not miss out on the amazing oatmeals, they are superb!! Like dessert for breakfast (but healthy!)

My friends and I decided to eat lunch at Crested Butte before we decided to go for a hike & explore…read morethe area. We landed on Thai Chili 78. When we first entered, it was quite empty. There was literally no wait to go in. Later, some groups started coming in. In general, the owner was very friendly and seemed glad that we stopped by. It was sort of chilly outside, so I decided to opt for a MASSAMAN CURRY. It was delicious! Upon first sip, the curry tasted authentic like the other Thai spots around NY, so I was impressed. It was a solid dish. It had a decent amount of chicken, potatoes (which were chunky & had crinkled patterns on them - quite unique texture). Paired with the rice, I was quite full & very satisfied. The portions are excellent! The price is fair. I would recommend this Thai spot as a pretty authentic tasting spot!

If you're coming off the mountain after a heavy session and need to refuel without the usual lodge…read morenonsense, Thai Chili 78 is a solid play. I hit this spot on a Friday evening, and the space is actually legit--plenty of room to move around so you aren't cramped up while you're trying to wind down from the day. I started with the chicken Tom Kha, which was exactly what I needed to cut through the cold. For the main, the beef Pad See Ew held its own. The flavors were balanced and the beef was cooked right. I've had my fair share of Thai food across different cities, so while I wouldn't call this the absolute greatest of all time, it's definitely high-quality for a mountain town. It's good food, a relaxed atmosphere, and a much better move than whatever quick-service options are at the base. If you want a meal that actually matches the energy of a good day on the slopes, check them out. It's a smooth, reliable four stars.

Hiro, STAT! This is…read moremy go-to for local and fresh sushi! My fave is the Dynamite Roll (shrimp tempura, cream cheese topped with jalapeno, sriracha, masago, spicy mayo and eel sauce)...seriously...it's DYN-A-MITE!!!! Always get the edamame...reg or spicy (prefer the spicy but both are good!). Recently ordered the chicken fried rice and it was so delicious! The wine makes us happy because they provide a generous pour for your money unlike many other local restaurants. Bottom line, the food is fresh and incredible...service is always impeccable! But the real 5+ stars about Hiro is all about the owners and staff. They are professional and kind (with a lovely touch of humor) and ALWAYS make you feel like you're an extension of their family. Sometimes hero's don't always wear capes, because the real Hiro's here lie within the strong bond and passion this family has for their restaurant. You know how much I love to support local businesses and this is no exception...Howard and his wife Dewi offer a unique and quintessential restaurant that is much needed in our community. Highly recommend so be sure to Check them out!
