I am not from the Horn of Africa, but I have friends who have worked there. My metric for berbere is Jara's and I make my own berbere. I think of berbere as flavored by paprika, ginger, cinnamon, coriander - warm spices, region specific equivalents, and optionally cloves. At every Ethiopian restaurant I try dishes with it. So not being from the Horn of Africa, I have no idea on their use of salt. But my preference is no. This restaurant adds salt to their berbere. I cannot think of any Ethiopian restaurants I reviewed doing that. The most beautiful foods are flavored by ingredients. Salt is not always a necessary ingredient. They have a nice restaurant, seating area, service was fast, and the staff were perfect.
