Last night my family and I went as a large group to celebrate two family birthdays at Miguel's. My husband and I arrived first with our two babies, staff was super accommodating in helping us make sure we could get high chairs to the table and offered to keep their car seats tucked away so they weren't crowding the table. I have been a regular of Miguel's for many years. Maybe it is because I just can't seem to stray from my standard order of a chili relleno, hard shell taco, and either a small shareable works nacho or a tamale that I keep coming back for. However, my hubby and I had the pork fajitas a week or so ago and were most disappointed. Dry. Well, beyond dry, really. The presentation on a dinner plate and sides in a small dish was off putting and the tortillas were few and got cold quickly. I love the chili rellenos and both my husband and a good friend that I often have lunch with loves the halibut tacos. I like them as well. No more venturing to other parts of the menu for sure. Stay with the ala cart selections and classics, IMO. The Margarita mix is a tad sweet but is good if paired with a quality tequila, such as Herradura. 4 stars for what I love. As hopeful I was for Miguel's to be delicious, it was many things but delicious wasn't one unfortunately. I gave 2 stars solely on the fact that our waiter was awesome. And 1 star for the margaritas which were lacking flavor but not alcohol. The chips were stale. Salsa was deep red in color but no spice. The Bean and cheese burrito was huge in size but the beans were whole and completely lacking flavor. The cheese was unmelted. Pricing is fair. Parking is simple. I debated between a 3 and a 4 for a while on this one. While in Fairbanks we were craving some Mexican and came across decent reviews for Miguel's. The restaurant is located in a strip mall with ample parking. When we walked in we saw that chicken fajitas were the special for the day, so we already knew what we would be ordering. Upon walking in we were told we would have to wait a few minutes for tables to be cleared, which was totally understandable. While waiting another server asked if we had been helped. Once seated, we sat for a solid 5 minutes looking over the menu before anyone came to take our drink order. We both settled on the house margaritas $8 each. They were actually really good, and I'd recommend them if you're into margaritas. This is one of the few Mexican places I've ever been that doesn't offer complimentary chips and salsa. It is $2.50 I believe. We opted for the $5 queso dip as a starter. The dip was alright, you chose between adding a mild medium or hot salsa to be mixed in. This was something I've never had before. We decided to split the chicken fajitas. I was pretty disappointed by them. For one, the chicken and veggies just came out in a basket, not sizzling like a typical Mexican dish. So I travel to Fairbanks monthly. There is only a few places this far I like to eat at. Miguel's is one of them. The ladies that work there are very friendly & helpful. They have excellent customer service. The food is also very good. I've tried the Mexican food & the good oh Burger or chicken strips. Which are equally as good. They have good ranch also which I'm a ranch person so this is important to me. I wait on reviews till I've visited multiple times. If I was eating just my food I would be more inclined to come back and try again, however my husband's food was really under-seasoned. We both got enchiladas, I got pastor and he got carne asada. My pastor was decent, it had flavor but was on the dryer side. My husband had to ask for milk because the only seasoning on his enchilada was cayenne (not exaggerating by any means, 9+ years in the food industry between us). This establishment may not be as "authentic" as they come but I order the a la carte pork on corn tortillas with pico de gayo every time and it's amazing every time. I also order my margarita's traditional. Meaning the only thing going into them is high quality Tequila, Triple Sec and lime. They're happy to make it that way at your request. The salsa was chunky and fresh which doesn't seem to come from a jar as suggested in previous reviews, so maybe they've changed that. My family has really enjoyed their quesadillas every time as well. The service has been good and the only thing that gets to me is the smell of smoke coming from the bar area. I love Mexican. Ask any of my friends. I lived in New Mexico and California and Mexican was always at the top of my list. My parents told me Miguel's had opened and had said it was good, so we decided to go out there on my last night of my visit. I was looking forward to it, but unfortunately it did not live up to them at all. First, I love margaritas. When I get Mexican, I want a nice sweet and tart margarita to wash it down. The margarita was, well, unlike any margarita I've ever had. It was a clear green color. Clear. Green. And it just tasted not right. We got some chips, guacamole and salsa to start. The chips were actually pretty good. I make better guacamole. And the salsa, well, it looked like something you'd get in a jar and tasted like it as well. Sad. The chimichanga was nicely fried. The "mole" sauce was boring and flavorless. I love mole and this was not a mole sauce. I know it's a bad night when I have to cover the food with hot sauce to give it any flavor. The hot sauce selection was also uninspired: Tabasco, green Tabasco and chipotle Tabasco. Not authentic hot sauces that's for sure. So Miguel's was severely disappointing. Excellent service every time whether it's a slow weekday evening or a super busy weekend evening! The food has been fantastic every time I've eaten there. I prefer the halibut fajitas and get that a lot but I have nothing but good to say about the whole menu. The meat is clean, I've never had any grizzly bites, that's a huge problem for me in many restaurants! The owner Miguel is a humble and friendly guy who I know has donated awesome food for military functions on Eielson AFB, people tear it up!
