I'm guessing they're being careful about foodborne illness and cooking to higher temps. Using some of the 3 sauces was a a must. The leg, however, was to die for even without sauce. Juicy and fell right off the bone. The rice (chaufa) was cooked well and flavor was not overtly soy sauce thankfully. Green beans were crispy and fresh.
